CHOW MEIN NOODLE CASSEROLE
This is a very tasty dish that even my kids love! It can easily be cut in half. It uses soy sauce and chow mein noodles to give it an Asian flair.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium high heat, saute the ground beef for 5 minutes. Add the onion and celery and saute for 5 more minutes.
- In a separate medium bowl, combine the almonds, rice, soup, water and soy sauce. Mix together well and add to the beef mixture. Place this into a lightly greased 9x13 inch baking dish. Top with chow mein noodles.
- Bake at 350 degrees F (175 degrees C) for 20 minutes.

CHINESE CRISPY NOODLES WITH SAUCY CHICKEN AND VEGETABLES (CRISPY CHOW MEIN!)
Recipe video above. Crispy noodles topped with a saucy chicken and vegetable stir fry, my favourite dish at my local Chinese!! Restaurants typically make this by deep frying the noodles. For my home version, I crisp up the noodles in a pan - much healthier, less mess, just as fast and definitely just as tasty!

Steps:
- Mix the Sauce ingredients EXCEPT cornflour and chicken broth/stock.
- Remove 1 tbsp Sauce and mix through chicke. Leave to marinate 10 minutes+.
- Mix cornflour into Sauce until lump free.
- Turn oven onto low (to keep noodles warm while you cook the topping).
- Divide noodles into 2 then shape into 20cm/8" rounds. Keep them tangled - this holds them together while cooking.
- Heat 1 tbsp oil in skillet over medium high heat. Place 1 noodle cake into pan then drizzle over 2 tbsp water.
- Wait until the water evaporates (steam cooks the noodles), then pat down lightly and let the noodles cook for a further 1 to 2 minute until the bottom of the noodles are golden brown (lift up with a spatula to check).
- Slide noodles onto a plate, then flip upside down back into the pan. Cook for a further 1 1/2 - 2 minutes until golden brown, then transfer to tray and place in oven to keep warm.
- Repeat with remaining noodle cake.
- Add an extra 1 tbsp oil if needed, increase heat to HIGH. Add garlic and onion, cook for 30 seconds.
- Add chicken and cook until it changes from pink to white (still raw inside)
- Add the carrot and bok choy stems, cook 30 seconds.
- Add cabbage and leaf of buk choy, cook for 1 minute until they start to wilt.
- Add chicken broth, water, then Sauce and stir. Let it simmer for 1 - 2 minutes until the Sauce thickens to a syrup consistency (see video).
- Place a noodle cake on the plate, then spoon over the stir fry onto the middle of the noodles (leave edges crispy) being sure to use up all the sauce so it soaks the noodles. Serve immediately!

- Whisk water, 1 teaspoon rice wine vinegar, 1 teaspoon soy sauce, cornstarch, sesame oil, and black pepper together in a bowl until marinade is smooth. Add chicken and marinate, about 15 minutes.
- Stir chicken broth, 1 tablespoon soy sauce, oyster sauce, 1 teaspoon rice wine vinegar, and sugar together in a bowl until seasoning mixture is well combined.
- Heat 3 tablespoons canola oil in a large skillet over medium heat; cook and stir noodles until golden brown and crisp, about 1 minute. Transfer noodles to a platter.
- Pour the remaining 1 tablespoon into skillet with the oil; cook and stir chicken over high heat until no longer pink in the center, about 5 minutes. BAKED TUNA CHOW MEIN CASSEROLE
You can make this tasty dish in the microwave or oven. It's made with tuna, celery, onions, bell pepper, soy sauce, chow mein noodles, and cream of mushroom soup

- Place the butter in a 1 1/2 quart microwave-safe casserole dish. Place in the microwave and cook on high for 30 seconds. Add the celery, onion, and bell pepper. Stir well. Heat on high, uncovered, for 3 minutes, stirring halfway through the cooking time. If the veggies are still too crisp, cook for another 1-2 minutes. Add the tuna, cream of mushroom soup, chow mein noodles, black pepper, and soy sauce. Stir well then top with the remaining chow mein noodles. Cook in the microwave, uncovered, for 10 minutes on high heat or until the casserole is bubbly in the middle. Serve hot. Alternately, the casserole can be baked at 350 degrees F for 25 minutes or until heated through.
BAKED CHICKEN CHOW MEIN
This casserole is easy to assemble, and a great use for leftover chicken. It is even good when my mom forgets to put the chicken in! This recipe calls for Minute Rice as the liquids included in the recipe and cooking time will not work with traditional rice. Prep time does not include time to cook chicken.

- Preheat oven to 375°F. Lightly coat the interior of a three-quarter sheet pan* (15 inch x 21 inch) with cooking oil spray. If you only own half sheet pans, you can use two of them instead.
- In an extra large bowl, add noodles and gently pry them apart so that the strands are no longer stuck together. Add bell pepper, snap peas, carrot, corn. Drizzle with canola oil, sesame oil, soy sauces, oyster sauce and sriracha. Toss until everything is evenly coated in sauces and oils. You can taste noodles and add more sauce if needed.
- Place sheet pan into oven and cook for 10-15 minutes or until vegetables are just about cooked. Remove sheet pan briefly from oven and stir noodles so that the noodles that were on the bottom are now on top. Cook for about 5 more minutes or until everything is evenly cooked. Remove from oven. Some of the noodles near the surface will be slightly crispy. I liked having some crispy noodles mixed in but if you want them all to be soft, you can quickly stir them back into the bottom and they should soften up again. Serve noodles while warm.
