ROASTED SHRIMP AND ORZO
Steps:
- Preheat the oven to 400 degrees F.
- Fill a large pot with water, add 1 tablespoon of salt and a splash of oil, and bring the water to a boil. Add the orzo and simmer for 9 to 11 minutes, stirring occasionally, until it's cooked al dente. Drain and pour into a large bowl. Whisk together the lemon juice, 1/2 cup olive oil, 2 teaspoons salt and 1 teaspoon of pepper. Pour over the hot pasta and stir well.
- Meanwhile, place the shrimp on a sheet pan, drizzle with olive oil, and sprinkle with salt and pepper. Toss to combine and spread out in a single layer. Roast for 5 to 6 minutes, until the shrimp are cooked through. Don't overcook!
- Add the shrimp to the orzo and then add the scallions, dill, parsley, cucumber, onion, 2 teaspoons salt, and 1 teaspoon pepper. Toss well. Add the feta and stir carefully. Set aside at room temperature for 1 hour to allow the flavors to blend, or refrigerate overnight. If refrigerated, taste again for seasonings and bring back to room temperature before serving.

Steps:
- Heat 1 tablespoon of the oil in a 12-inch skillet over high heat until just smoking. Meanwhile, pat the shrimp dry with paper towels and season with salt, pepper, and sugar. Add half of the shrimp to the skillet in a single layer and cook, without stirring, until the bottoms of the shrimp turn spotty brown, about 30 seconds. Off the heat, flip the shrimp over, then transfer to a medium bowl and repeat with 1 more tablespoon oil and the remaining shrimp.
- Add the remaining 2 tablespoons oil, onion, and 1/2 teaspoon salt to the skillet and cook over medium heat until the onion is softened, 5 to 7 minutes. Stir in the garlic, oregano, and red pepper flakes and cook until fragrant, about 30 seconds. Stir in the tomatoes and 1/2 cup of their juice and cook until thickened slightly, about 2 minutes.
- Stir the reserved shrimp and accumulated juices and ouzo into the skillet. Ignite the ouzo and shake the skillet until the flames subside. Sprinkle with the feta and parsley before serving.
- To flambe on an electric stove, add the ouzo to the pan, wave a lit match over the pan until the ouzo ignites, and then shake the skillet.BE CAREFUL.
OUZO SHRIMP
Seasoned with a spicy tomato sauce, feta cheese, and ouzo, this shrimp dish can serve as a first course or an entrée. I have made this several times as a first course for a Greek-themed dinner and everyone loves it! Originally from a magazine back in the 80's that featured a gourmet Greek dinner menu and recipes.

TOP 10 BEST OUZO COCKTAIL RECIPES | HOW TO DRINK
From bespokeunit.com
- Ouzini. Invented by novelist Michael Paraskos, the Ouzini was created for a Cyrpus Tourism Organisation campaign and focuses just on local ingredients.
- Ouzotini. Throughout this guide, you’ll see a number of refreshing summery cocktails that use fruit juice. Indeed, ouzo tends to contrast nicely against tropic and citrus juice and the Ouzotini is a great example.
- Greek Coffee. Although it may sound surprising, coffee and anise pair very nicely together. You simply need to look at how sambuca is often served in Italy to understand that.
- Ouzo Lemonade. A wonderfully refreshing anise cocktail that is somewhat reminiscent of a classic mojito. You’ll need the following ingredients: 60 ml (2 Oz) Ouzo.
- Ouzo Tonic. Continuing with the wonderful lemon and ouzo pairing, this cocktail uses Italian limoncello to produce a boozier experience: 60 ml (2 Oz) Ouzo.
- Tropical Dream. What better way to escape a suburban nightmare than with a tropical dream? With its bright blue colour, it looks a bit like a science experiment.
- Blue Négligée. Another funky-looking cocktail, the combination of herbaceous notes makes it a bracing and refreshing drink. Given the use of Chartreuse, it’s a great choice for an après-ski.
- Ouzo Massalia. Playing off the Italian origins of ouzo’s name, Ouzo Massalia features two different types of vermouth to produce an excitingly different beverage.
- Ouzo & Cola. Ouzo and Coca-Cola are a surprisingly pleasant combination. The spirit imparts its herbal complexity, which is offset by the coke’s sweetness.
- Greek Tiger. A very simple mixture, the Greek Tiger is barely a cocktail. However, as you’ve probably noticed, citrus-based juice goes nicely with ouzo!
