This is a good soup for our area since we have many good sausage makers. The soup has a rich flavor and is even tastier the next day. If you are unable to find bow tie pasta, you can substitute another macaroni product.

1-1/2 pounds hot or sweet Italian sausage links
1 medium onion, chopped
1 medium green pepper, cut into strips
1 garlic clove, minced
1 can (28 ounces) diced tomatoes, undrained
6 cups water
2 to 2-1/2 cups uncooked bow tie pasta
1 tablespoon sugar
1 tablespoon Worcestershire sauce
2 teaspoons chicken bouillon granules
1 teaspoon salt
1 teaspoon dried basil
1 teaspoon dried thyme

Steps:

  • Remove casings from sausage; cut into 1-in. pieces. In a Dutch oven, brown sausage over medium heat. Remove sausage with a slotted spoon; drain, reserving 2 tablespoons drippings. Saute onion and green pepper in drippings until tender. Add garlic; cook 1 minute longer., Return sausage to the pan; stir in the remaining ingredients. Bring to a boil. Reduce heat. Simmer, uncovered, for 15-20 minutes or until pasta is tender, stirring occasionally.

¾ pound Italian sausage
½ cup diced onion
6 cups chicken broth
1 (15 ounce) can diced tomatoes with basil, garlic, and oregano
5 ounces farfalle pasta
½ teaspoon Italian seasoning
½ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste
½ cup ricotta cheese
½ cup shredded mozzarella cheese
¼ cup freshly grated Parmesan cheese
2 tablespoons chopped fresh basil

Steps:

  • Cook Italian sausage and onion in a skillet over medium-high heat until sausage is browned and crumbly and onion is soft and translucent, about 8 minutes.
  • Mix in chicken broth, diced tomatoes, pasta, Italian seasoning, salt, and pepper. Bring to a boil. Reduce heat and simmer until pasta is tender, stirring occasionally, about 10 minutes. Add ricotta cheese and cook until ricotta is fully incorporated, 2 to 3 minutes more.
  • Top each serving with 2 tablespoons mozzarella cheese, 1 tablespoon Parmesan cheese, and 1/2 tablespoon fresh basil.

1 1/2 lbs italian turkey sausage
1 medium green pepper, chopped
1/2 cup chopped onion
1 clove garlic, minced
6 -8 cups water
28 ounces diced tomatoes, undrained
1 tablespoon sugar
1 tablespoon Worcestershire sauce
2 teaspoons chicken bouillon granules
1 teaspoon salt
1 teaspoon dried basil
1 teaspoon dried thyme
2 1/2 cups uncooked bow tie pasta

Steps:

  • Remove sausage casings& cut (or tear) into 1/2" pieces.
  • In large kettle, cook sausage over medium heat for 5-7 minutes, or until no longer pink.
  • Remove sausage w/ a slotted spoon.
  • Drain, reserving 2 T.
  • drippings.
  • Saute pepper, onion& garlic 4-5 minutes (in the drippings) or until tender.
  • Add the water, tomatoes, sugar, Worcestershire, bouillon, salt, basil, thyme& sausage.
  • Bring to a boil, then add pasta.
  • Reduce the heat& simmer uncovered 18-22 minutes, or until pasta is tender.

HEARTY and FULL OF FLAVOR! Your choice of pasta is a great plus! Leftover cooked pasta may be used. My family loves sausage. The sausage blended with the vegetables and pasta makes a delicious soup. This soup freezes well.

1 lb sausage (lean breakfast type)
1 onion, chopped
1 celery rib, chopped
2 carrots, cut small
1 (15 ounce) tomato sauce
1 (15 ounce) tomatoes, diced
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic powder
1 tablespoon sugar
1 cup water
4 ounces uncooked pasta (choice)
1 1/2 cups water

Steps:

  • In a large dutch oven, saute onion and set aside. Brown sausage and drain.
  • Place sausage, onion, celery, carrots, tomato sauce, diced tomatoes, worcestershire sauce, garlic powder, sugar and 1 cup water in dutch oven. Simmer on low heat for 30 minutes.
  • Add pasta and 1 1/2 cups of water and cook until pasta is a la dente. (or you may add your leftover pasta and cook until just heated.) I have found that the sausage and tomatoes provide a large amount of salt. Therefore, you will need to do a taste test to see if you want any salt added.
  • Serve with crusty bread or crackers. Enjoy!

1 1/2 lbs sweet Italian sausage
1 medium onion, chopped
1 medium green pepper, cut into strips
1 garlic clove, minced
1 (28 ounce) can crushed tomatoes
2 1/2 cups bow tie pasta, uncooked
6 cups water
1 tablespoon Worcestershire sauce
2 chicken bouillon cubes (or 1 14 1/2 oz can chicken broth)
1 teaspoon basil
1 teaspoon thyme
1 teaspoon salt

Steps:

  • Remove casings from sausage. Cut sausage into 1/2-inch pieces. Brown. Drain off any fat.
  • Add green pepper, onion and garlic to sausage and saute until tender.
  • Add remaining ingredients.
  • Cook until pasta is done, about 15-20 minutes.

1 cup chopped onion
2 (28 ounce) cans stewed tomatoes, chopped
3 ½ cups beef broth
2 cups water
¼ pound salami, cut into strips
2 ½ cups rotini pasta

Steps:

  • In a heavy pot over medium heat cook crumbled sausage and onions and drain well.
  • Stir in tomatoes, broth, water, and salami, heat to a boil. Reduce heat, cover, and simmer 15 minutes.
  • Add rotini, and simmer 15 minutes more or until pasta is done.

1 tablespoon Worcestershire sauce

parmesan cheese or romano cheese (or all) (optional)

Steps:

CHUNKY MEDITERRANEAN PASTA SOUP

This delicious hearty warming soup is made with chorizo sausage, pasta, tomatoes and herbs and is quick and easy to make. If you are using fresh tomatoes, you will need to peel them. To do this score a cross with a sharp knife on the base of the tomato and drop them, carefully, into boiling water for 10-15 seconds, until the skin peels off easily.

2 tablespoons olive oil
9 ounces chorizo sausage, thinly sliced
1 large onion, chopped
4 large garlic cloves, grated
2 (14 ounce) cans chopped tomatoes or 2 lbs fresh tomatoes, peeled and chopped
3 3/4 cups chicken broth
2 tablespoons chopped herbs, eg. rosemary, thyme and parsley
1 pinch sugar
9 ounces pasta, such as orzo or 9 ounces fusilli
5 1/2 ounces spinach or 5 1/2 ounces baby spinach leaves
salt and pepper
finely grated parmesan cheese
3 tablespoons pesto sauce

Steps:

  • Heat the olive oil in a large pan, add the chorizo, and cook for 2 minutes.
  • Add the chopped onion and garlic and season with salt and pepper. Cook gently over a low heat for 7-8 minutes, until soft.
  • Add the tomatoes, broth and herbs, check the seasoning again and if necessary season with salt, pepper and a good pinch of sugar.
  • Simmer with the lid on for a further 10 minutes or until soft.
  • Add the uncooked pasta and continue to simmer for another 6-10 minutes stirring regularly or until the pasta is cooked.
  • When you are ready to serve, add the spinach and boil for 1 minute or until the spinach is wilted. Taste and if necessary add seasoning.
  • To serve: ladle the hot chunky soup into 6 warm bowls and sprinkle with some finely grated Parmesan and a drizzle of pesto.

1 pound Italian sausage
2 medium onions, peeled and cut into chunks
2 small fennel bulbs, fennel fronds removed, cored, and thinly sliced
2 cloves garlic, minced
1/4 teaspoon fennel seed
4 cups low sodium chicken broth
1 (14-ounce) can Italian plum tomatoes and their juice
1 cup uncooked small pasta such as tubetinni
1 (14-ounce) can canellinni beans, drained and rinsed
1/2 cup loosely packed, roughly chopped Italian parsley leaves
Coarse ground salt and cracked pepper
Pasta Morph, recipe follows
1 pound pasta, cooked to al dente, reserve 1 cup cooking water
Reserved sausage, onion, and fennel mixture
Salt and coarsely ground black pepper
1/2 cup unseasoned bread crumbs
1/4 cup finely grated Parmesan

Steps:

  • Remove the sausage from the casing. Place in a large soup pot or Dutch oven. Turn heat to medium, cook, stirring constantly until browned, about 5 to 7 minutes. Drain on paper towels to remove excess fat. Add onions, fennel, garlic and fennel seeds, toss to combine. Cover and cook, stirring every few minutes until fennel and onions begin to soften, about 12 to 15 minutes. At this point remove 1/2 of the mixture and reserve it for the Pasta Morph.
  • Add chicken broth and tomatoes to the remaining sausage/fennel mixture. Break tomatoes apart with spoon. Bring to a boil, add pasta. Bring back to boil again, reduce to a strong simmer. Cook 8 minutes or until pasta is almost done. Add cannelinni beans and parsley. Cook until flavors have come together and pasta is cooked through. Taste and adjust seasoning with salt and pepper.
  • Toss the pasta and reserved sausage mixture in a large bowl. Add heated pasta water, a little at a time, until a sauce consistency is achieved. Season with salt and pepper, to taste. Top with bread crumbs and cheese.

A very simple Mexican soup dish with spices that can be adjusted to "heat it up" or tone it down. I've had this recipe and love it, I don't know who it is by but it was published in a local newspaper.

2 (14 1/2 ounce) cans chicken broth
1 (14 1/2 ounce) can chicken broth with roasted garlic (if you can not find this, mince 2 cloves garlic and use an add'l can of chicken broth)
2 cups water
1 (10 ounce) can diced tomatoes and green chilies, undrained (I use the hot Rotel myself)
2 tablespoons fresh cilantro, minced (reduce to 1 tbl if dried is used)
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 lb smoked sausage (or spicy)
6 ounces vermicelli, broken into about 1 inch pieces
1 (14 1/2 ounce) can corn (Mexican corn if you can find it)
1 (14 1/2 ounce) can black beans, rinsed and drained
1 tablespoon lime juice
1 sliced avocado (to garnish)
grated cheddar cheese or monterey jack cheese (to garnish)

Steps:

  • (remember spices can be adjusted to taste).
  • In soup pot, combine all ingredients up to the sausage bringing to a boil, cover and reduce heat to simmer for 10 minutes.
  • Slice sausage in 1/2 lengthwise then thinly slice into pieces.
  • Add the sausage, pasta, corn& black beans to the broth mixture, cover& simmer another 10 to 15 minutes (or until vermicelli is cooked).
  • Stir in lime juice.
  • Ladle into bowls and garnish each with thinly sliced avacado (or you can chunk if you prefer) and grated cheese.
  • Note: I like to serve this with hot Mexican corn bread and a small dinner salad.
