The caramel coating is very gooey, so refrigerate the apples for about 15 minutes, or until the caramel has firmed up. (You will need 6 wooden craft sticks for this recipe.)

6 apples
1 (14 ounce) package individually wrapped caramels, unwrapped
2 tablespoons milk

Steps:

  • Remove the stem from each apple and press a craft stick into the top. Butter a baking sheet.
  • Place caramels and milk in a microwave safe bowl, and microwave 2 minutes, stirring once. Allow to cool briefly.
  • Roll each apple quickly in caramel sauce until well coated. Place on prepared sheet to set.

Number Of Ingredients 7

2 cups sugar
6 tablespoons unsalted butter
1/4 teaspoon kosher salt
1/2 cup heavy cream, at room temperature
1 teaspoon pure vanilla extract
Cooking spray
4 apples (the caramel will stick best to organic/unsprayed apples)

Steps:

  • Combine the sugar, butter and salt in a medium saucepan and cook over medium heat, stirring occasionally, until dark amber, about 20 minutes.
  • Remove the pan from the heat and carefully pour in the cream and vanilla (it will bubble up). Set the saucepan over low heat and continue cooking, whisking, until smooth and the bubbling subsides, 2 to 4 more minutes. Remove from the heat and pour into a large glass measuring cup or bowl so the caramel is about 2 inches deep. Set aside, stirring occasionally, until cooled slightly and thick enough to coat a spoon, 12 to 15 minutes.
  • Line a rimmed baking sheet with parchment paper and coat with cooking spray. Insert a wooden stick into the center of each apple, about one-third of the way down. Holding an apple by the stick, dip it into the caramel and roll around to cover. Gently twirl the apple over the measuring cup, letting the excess caramel drip off, then turn it upside down and hold about 30 seconds to help set the caramel; place on the prepared baking sheet. Repeat with the remaining apples. Let set 15 minutes.

15 to 20 large Granny Smith apples
Assorted chopped candies or nuts, for coating
1 (1-pound) box dark brown sugar
2 sticks unsalted butter
1 (14-ounce) can sweetened condensed milk
2/3 cup dark corn syrup
1/3 cup maple syrup
1 1/2 teaspoons pure vanilla extract
1 teaspoon molasses
1/4 teaspoon salt

Steps:

  • Skewer the stem-end of the apples with popsicle sticks. Line 2 large rimmed baking sheets with wax paper. Place desired coatings in large shallow bowls.
  • In a heavy-bottomed saucepan, combine the sugar, butter, milk, corn syrup, maple syrup, vanilla, molasses and salt. Bring to a boil over medium heat. Boil until it registers 236 degrees F on a candy thermometer, about 10 minutes. Immediately pour the caramel into a heatproof bowl; let cool to 200 degrees F.
  • Dip the apples in the desired coatings. Transfer to the prepared baking sheets to set and let cool completely.

2 cans or pecans sweet and salty glazed and roasted almond pieces
5 stems removed Granny Smith apples
1 (14 oz) package unwrapped individually wrapped caramels
2 tablespoons milk
1 cup semi sweet chocolate chips
1/2 cup white chocolate chips
5 wood craft sticks

Steps:

  • Line a baking tray with wax paper and set aside. Pour nuts into a medium mixing bowl and set aside. Place a craft stick into the top of each apple.
  • In a microwave safe bowl, heat caramels and milk for 4 minutes. Stir and heat again for 1 minute. Allow to cool slightly. Roll each apple in the caramel sauce until well coated. Dip end of each apple in nuts and place on wax lined tray. Allow to cool completely.
  • While apples are cooling. Place semi sweet chocolate chips in a zip lock bag and microwave until melted. Place white chocolate chips in a zip lock bag and microwave until melted. Snip the ends off each bag and drizzle apples with each chocolate. Refrigerate until set.

2 cups packed brown sugar
1 cup light corn syrup
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
8 wooden sticks
8 medium tart apples
Unsalted peanuts, chopped

Steps:

  • In a heavy 3-qt. saucepan, combine butter, brown sugar, corn syrup and milk; bring to a boil over medium-high heat. Cook and stir until mixture reaches 248° (firm-ball stage) on a candy thermometer, about 30-40 minutes. Remove from the heat; stir in vanilla. Insert wooden sticks into apples. Dip each apple into hot caramel mixture; turn to coat. Set on waxed paper to cool. If desired, roll the bottom of the dipped apples into chopped peanuts.
