- Defrost hashbrowns, combine next seven ingredients in a bowl. Add the hashbrowns and half the onions, mixing. Fill a 3 quart casserole dish with hashbrown mixture. Cover and bake at 350℉ (180℃) for 35 minutes, uncover and top the casserole with the remaining onions and allow to finish baking 5 minutes.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
- Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

Don't worry if you can't find the ingredients in your friendly local supermarket - just substitute kumquats, bamboo shoots, wawa with fresh pomegranate juice mixed in it, and ground polar bear. (These international substitutions are provided as the result of a suggestion by a Recipezaar chef.)

Steps:
- Pour the O'Brien frozen hash brown potatoes into large bowl.
- Melt the butter in a microwave oven.
- Combine the soup, French onion dip and melted butter.
- Pour the mixture over the hash brown potatoes; mix well.
- Add the cheese and fold together.
- Pour into a casserole dish and bake in a preheated oven at 350°F for about one hour or until the ingredients bubble throughout and the top is slightly brown.
- Sprinkle crumbled potato chips or corn flakes over the top and bake for approximately 5 minutes more.
CREAMY SKILLET HASH BROWNS CASSEROLE
Not your traditional has browns. These might take a little extra effort, but they're well worth it. Creamy, cheesy, yummy. Perfect for brunch. (Prep time includes par boiling of potatoes.)

- Place potatoes in a large saucepan and cover with cold water. Place on stove over medium-high heat. When water is boiling rapidly, turn off heat, cover pot, and let potatoes sit for 5 minutes. Carefully drain water and cool potatoes. You can refrigerate them, which will take a little while, or run them under cold water for 5-10 minutes (my preferred method).
- Shred potatoes, set aside.
- Heat large skillet over medium heat. Add chopped bacon. Cook for 2-3 minutes. Add onions. Cook until bacon is cooked and onions are browned, stirring occasionally, 5-6 minutes.
- Add butter or margarine to skillet and let melt.
- Add shredded potatoes and stir until onions and bacon are evenly distributed among the potatoes. Flatten with the back of the spatula and let sit until bottom is browned, 4-5 minutes.
- Flip potatoes over. This does not need to be down perfectly. Cook another 4-5 minutes until potatoes are browned on both sides.
- Add sour cream, cheese, and pepper. Stir until mixed. Flatten potatoes with spatula and cook a few minutes, until browned. Flip. Cook another few minutes. Serve warm.
- Add additional cheese if desired.

- Heat oil in large skillet.
- Add hash browns, onion, and bell peppers.
- Cook until potatoes begin to brown.
- Spray 9" x 13" baking dish with Pam.

NO ONION HASH BROWNS CASSEROLE
I never liked hash brown casserole until I tried this recipe at my neighbors house. This comes out great every time and I can eat on it for a week by itself! I'm sure you could add in things like bacon, sausage, etc as well, but I never have. This makes a large casserole. I hope you enjoy this as much as I if you try it!

- Preheat oven to 350°F.
- Grease a large casserole dish (I usually just spray with Pam).
- Combine hash browns, 1/2 of the butter, soup, sour cream, and cheese. (I usually do this right in the cassarole dish). Note: I only use 1/2 the amount of butter the recipe calls for & use margarine with no ill effects.
- In a separate bowl combine Corn Flakes and remaining 1/2 of butter.
- Spread on top of casserole.
- Bake at 350°F covered for 45 minutes and then uncovered for 15 minutes.
- Let sit for 5 minutes after removing from oven.
- Enjoy!
- Note 2: I usually use reduced fat sour cream and soup in this with no ill effects. (Just to make it a little more "hip" friendly" -- lol).
- Note 3: When reheating doing so in the oven maintains the crisp topping & makes it taste almost-freshly made :).
