Mai Tai translates from Tahitian to mean "Out of this World." A fitting description for this cocktail. The Mai Tai came to light in 1944 in Oakland's Trader Vic's. There Victor Bergron, one of the founders of the tiki bar, put together this great drink that deserves to feature the best rum you can get your hands on. Over the years the recipe has changed greatly, disguising the rum under layers of fruit. The first recipe is Bergron's original recipe, the second, one of the many newer versions. From About.com

1 ounce light rum
1/2 ounce lime juice
1/2 ounce orange Curacao
1/2 ounce orgeat syrup
1 ounce dark rum
maraschino cherry (to garnish)

Steps:

  • Pour all the ingredients except the dark rum into a shaker with ice cubes.
  • Shake well.
  • Strain into an old-fashioned glass half filled with ice.
  • Top with the dark rum.
  • Garnish with the cherry.

1 oz fresh-squeezed orange juice
1/2 oz orgeat syrup (almond syrup)
2 dashes orange bitters
sparkling apple cider
crushed ice.

Steps:

  • Combine all ingredients, except the sparkling cider, in a cocktails shaker with the crushed ice.
  • Shake until the cocktail shaker is nice and frosty.
  • Pour into a stemless wine glass or rocks glass, add a little more crushed ice, and top with sparkling apple cider.
  • Garnish with a dehydrated apple slice and orange wheel.

Ice, as needed
1/2 cup fresh pineapple juice
1/4 cup orange juice
2 ounces light rum
1 ounce dark rum
1 ounce triple sec
Juice of 1 lime
Dash grenadine
Maraschino cherries, for serving
Orange wheels, for serving

Steps:

  • Fill a cocktail shaker 1/2 way with ice cubes.
  • Add the pineapple juice, orange juice, light rum, dark rum, triple sec, lime juice, and grenadine and shake for 20 seconds.
  • Strain drinks into 2 ice-filled glasses and garnish with maraschino cherries and an orange wheel.

This recipe is for a classic Mai Tai, the ones that Trader Vic shook up all those years ago. The traditional garnish is a lime shell and a mint sprig arranged to look like a palm tree on an island.

2 oz aged rum
¾ oz freshly-squeezed lime juice
½ oz orange liqueur
¼ oz orgeat ((see note for homemade recipe))
¼ oz Demerara syrup ((see note for recipe))
1 spent lime half, to garnish
1 sprig mint, to garnish

Steps:

  • Add all of the ingredients, except the lime shell and mint sprig) to a cocktail shaker filled with crushed ice.
  • Shake well.
  • Pour all of the contents into a glass-- don't strain out the shaken ice.
  • Add more crushed ice to the glass if necessary.
  • To create the traditional garnish that looks like a palm tree on an island, carefully poke a hole in the top of one of the spent lime shells. Place the shell cut-side down on top of the drink. Stick the lime sprig in the hole. Remove the bottom leaves of the mint to make it look more like a palm tree.

¼ cup white sugar
1 lime, halved, or more to taste
¼ pineapple, cut into wedges
ice
1 fluid ounce gold rum
½ fluid ounce silver rum
½ fluid ounce triple sec
½ fluid ounce orgeat almond syrup

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Place sugar in a shallow bowl. Dip lime halves in sugar to coat.
  • Grill lime and pineapple wedges, turning occasionally, until lightly browned, 5 to 10 minutes. Remove from grill and let cool.
  • Fill a cocktail shaker and Old Fashioned glass with ice.
  • Squeeze 1/2 fluid ounce lime juice and 1 fluid ounce pineapple juice into the shaker. Add gold rum, silver rum, triple sec, and orgeat syrup. Cover and shake until the outside of shaker has frosted. Strain into the glass and garnish with a grilled pineapple wedge.
