THE BEST JUICY SKILLET PORK CHOPS

The Best Juicy Skillet Pork Chops image

Pork chops are a quick, healthy and simple dinner. Our method ensures juicy, tender, and flavorful pork chops with little fuss. Check the notes section for our tips on which pork chops are best.

Provided by Adam and Joanne Gallagher

Categories     Dinner

Time 45m

Yield Makes 4 servings

Number Of Ingredients 14

4 pork chops, about 1-inch thick and 6 to 7 ounces each, see notes
Salt, to taste
1 tablespoon all-purpose flour
1 teaspoon chili powder, see our homemade chili powder recipe
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground black pepper
1 tablespoon neutral oil like avocado oil or vegetable oil
1 cup low-sodium chicken stock, see our homemade chicken stock recipe
1 tablespoon apple cider vinegar
2 teaspoons honey or brown sugar
1 tablespoon butter
2 tablespoons chopped fresh parsley, optional

Steps:

  • Take the pork chops out of the refrigerator and season on both sides with salt - we use just less than 1/4 teaspoon of fine salt per pork chop. Set the chops aside to rest for 30 minutes.
  • Meanwhile, make the spice rub. In a small bowl, mix the flour, chili powder, garlic powder, onion powder, smoked paprika, and 1/2 teaspoon of black pepper.
  • After 30 minutes, use a paper towel to pat the pork chops dry, then rub both sides of the chops with the spice rub.
  • Heat the oil in a skillet (with a lid) over medium-high heat. When the oil is hot and looks shimmery, add the pork. Cook until golden, 2 to 3 minutes.
  • Flip the pork so that the seared side is facing up. If there is a fattier side of the pork, use kitchen tongs to hold the chops, fat-side-down until it sizzles and browns slightly; about 30 seconds.
  • Reduce the heat to low, then cover the skillet with a lid. Cook 6 to 12 minutes or until an instant-read thermometer reads 145° F when inserted into the thickest part of the chop. Cook time depends on the thickness of the chops, so check for doneness at 5 minutes, then go from there, checking every 2 minutes after that. If you do not have a thermometer, you will know they are done, if, when cutting into the chops, the juices run clear.
  • Transfer pork chops to a plate, then cover loosely with aluminum foil. Let the pork rest for 5 minutes.
  • While the pork rests, make the pan sauce. Increase the heat to medium-high, then add the chicken stock, vinegar, and honey. Use a wooden spoon to scrape the bottom of the pan so that any stuck bits of pork come up.
  • Bring the sauce to a simmer and cook until reduced by half. Taste, then adjust the seasoning with additional salt, vinegar, or honey.
  • Slide the skillet off of the heat and when the sauce is no longer simmering, swirl in the butter.
  • Slide the pork chops back into the pan and spoon some of the sauce on top. Alternatively, slice the chops, then place them back into the pan. Scatter fresh parsley over the pork, and then serve.

YOUR NEW FAVORITE PORK CHOPS

Your New Favorite Pork Chops image

Though it may seem like a counterintuitive practice, extra flipping is the secret to the golden brown crust on these chops.

Provided by Alison Roman

Categories     Fry     Kid-Friendly     Quick & Easy     Dinner     Pork Chop     Bon Appétit     Anniversary     Small Plates

Yield 4 Servings

Number Of Ingredients 7

1 tablespoon vegetable oil
2- 1 1/2"-thick bone-in pork rib chops (8-10 ounces each)
Kosher salt, freshly ground pepper
freshly ground pepper
8 sprigs sage
2 garlic cloves, peeled, smashed
1 tablespoon unsalted butter

Steps:

  • Heat oil in a large skillet over mediumhigh. Season pork chops all over (including the fat cap) with salt and pepper. Cook pork chops until bottom side is golden brown, about 1 minute. Turn and cook on other side about 1 minute before turning again. Repeat this process, turning about every minute, until chops are deep golden brown and an instant-read thermometer inserted into the thickest part registers 135°, 8-10 minutes (cooking time will depend on thickness of chops).
  • Remove pan from heat and add sage, garlic, and butter, smashing garlic into butter. Tilt skillet and spoon foaming butter and drippings over pork chops, making sure to baste the fat cap as well as the rib. Transfer pork chops to a cutting board and let rest at least 5 minutes (pork will come to 145° as it sits).
  • Cut away bone and slice pork about 1/4" thick. Serve with any juices from the cutting board spooned over top.

  • Grilled Pork Chops with Plums, Halloumi, and Lemon. Once you've mastered the basic method, it may feel like you don't need grilled pork chop recipes. But that's where the accompaniments come in.
  • Chipotle-Grilled Pork Shoulder Steaks with Corn Salsa. Cut into steaks, pork shoulder is a well-marbled, quick-cooking cut that's terrific for grilling—especially when seasoned with a Mexican-inspired rub.
  • Country-Style Ribs With Quick-Pickled Watermelon. In this grilled pork recipe from chef Paul Kahan, you'll marinate juicy country-style ribs in brown sugar, soy sauce, rice vinegar, garlic, ginger, and toasted sesame oil over night, then grill until nicely charred, then dunk them in a boiled portion of the marinade to get them extra saucy before the final bit of cooking.
  • Jalapeño-Marinated Grilled Pork Chops. Along with adding some extra smoky-char flavor to the dish, grilling the jalapeños mellows their spiciness. If you want to up the heat, just leave them raw.
  • Pork Tenderloin with Peach-Mustard Sauce. The key with tenderloin is making sure it’s not overcooked, which is when it gets dry. The riper the peaches, the more delicious and nuanced the sauce will be.
  • Pork Chops with Radishes and Charred Scallions. A crisp radish-parsley salad and caramelized grilled scallions are the perfect bold accompaniments to this summery pork dish.
  • Beer Bratwurst. If you're looking for a fun summer project, consider making your own brats. The process requires a meat grinder and takes a bit of time—but oh, the payoff is great.
  • Grilled Pork Ribs with Gochujang Barbecue Sauce. These grilled pork ribs are all about the sauce: a stir-together Korean chile paste situation that has everything you want (heat, sweetness, tang, and deeply savory flavor).
  • Grilled Pork Shoulder Steaks With Herb Salad. The key to this juicy pork recipe is to flip the pork steaks often, so the fat renders evenly without overcooking the meat.
  • Sticky-Sweet Grilled Pork Shoulder with Hoisin and Molasses. Inspired by Cantonese char siu, this boneless pork shoulder is gloriously shellacked with a molasses glaze for the perfect balance of sweet and savory.
