- In a large bowl, combined the shredded watermelon (use a fork, large-holed grater, or melon scraper to shred) with the crushed pineapple and juice, shredded coconut, and coconut milk.
- Mix in 2-3 cups water to desired consistency. Stir in sugar to taste.
- Serve chilled with crushed ice if desired.

''Otai' is a fruit drink which originated in Tonga and is usually made as a summertime refreshment. It is a blend of water, coconut milk, and any variety of pulped tropical fruit such as coconut, watermelon, mango, and pineapple but is almost always watermelon as it is plentiful in Tonga. A small amount of sugar may be added, although the recipe is considerably sweet on its own. I lived in Sydney many moons ago and the Polynesian families drank this by the gallons in the summer. Soooo refreshing and yummy! Serve over ice cubes.

- Stage 1 - Blend Non-Watermelon Ingredients In a blender, combine your mango, shredded coconut, coconut milk, honey and lime juice
- Blend together until they are all well combined and you have a nice orangey liquid formed. Don't worry if it's a bit too thick, since it will mix with water from the watermelon
- Place your watermelon in a large bowl. The larger the bowl, the better... just in case things might get a little messy
- With either a masher (like you would for mashed potatoes) or a fork, mash your watermelon down into smaller pieces. You'll want to keep some of the watermelon pieces intact, but otherwise mash the rest to free liquid
- To make your watermelon drink complete, combine your mango/coconut milk puree with your mashed watermelon in your large bowl. Mix around thoroughly until all ingredients are well merged together
- Transfer your 'otai to a cup or a pitcher, and enjoy!

Steps:
- Grate the pineapple into a large container.
- Finely chop the watermelon, or scrape the melon and the juice into the pineapple.
- Sprinkle with sugar.
- Add the fresh coconut flesh directly to the fruit or by making a rich coconut cream from the grated coconut and adding the cream to the fruit juices.
- Dilute with the water.
- Chill and serve.

- Peel the mango skin off of the mango with a potato peeler or a knife. Be careful though, try not to peel off too much of the mango meat with the skin. Then grab a large bowl and shred the meat off of the mango with a grater.
- The crushed pineapple can come from a can or you can make it homemade crushed. If you get it from a can, use a can opener or a knife to open the can. Then add the crushed pineapple into the same bowl as the shredded mango. Stir well together, then set aside.
- You can get the shredded coconut from the nearest Asian Market or your local grocery store. I prefer going to the Asian Market because they have a good quality and very cheap :). The shredded coconut is usually frozen so I recommend putting the frozen bags in a pot that is full of water so it can melt. Once melted, cut open the bag and pour the coconut into the same bowl as the pineapple and mango mixture.
- Open the can of coconut milk and slowly pour in little by little into the big bowl that has the mixture of fruits in it. Mix well and pour in most of the coconut milk or until the amount has come to your liking. Pour in the water as well and make sure you don't pour in too much liquids because the Otai is not supposed to be very liquidity. It is supposed to be not very thick as well but it is thick and yet liquidity.

- Place watermelon in a large bowl and mash or grate until mostly liquid but still some small chunks remain. Add in the rest of the ingredients except simple syrup and mash a little more, stir well. Taste and add simple syrup if a more sweet drink is desired then chill 30 min then serve over ice
- My way. The lazy way. Add all the ingredients except simple syrup to a blender ad pulse until blended but still chunky - you don’t want a thin puree. This drink has texture to it. Taste and add in some simple syrup and pulse for a few more seconds taste again and add more sweetener if desired. Chill for about 30 min then serve over ice.
