6 cups chicken broth
1 package (16 ounces) orzo pasta
1/3 cup olive oil
1/4 cup red wine vinegar
2 tablespoons lemon juice
1 tablespoon honey
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups chopped plum tomatoes
1 cup chopped seeded peeled cucumber
1 cup fresh basil leaves, thinly sliced
4 green onions, chopped
1/2 cup fresh baby spinach, chopped
1-3/4 cups (7 ounces) crumbled feta cheese
1/2 cup pine nuts, toasted

Steps:

  • In a large saucepan, bring broth to a boil; add pasta. Return to a boil. Cook, uncovered, until pasta is tender, 10-12 minutes. Meanwhile, in a small bowl, whisk the oil, vinegar, lemon juice, honey, salt and pepper., In a large bowl, combine the tomatoes, cucumber, basil, onions and spinach. Drain pasta; add to tomato mixture. Drizzle with dressing; toss to coat. Chill until serving., Just before serving, stir in cheese and pine nuts.

3/4 cup uncooked orzo
1/4 teaspoon grated lemon zest
3 tablespoons freshly squeezed lemon juice
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon minced garlic
1 teaspoon honey
1/2 cup corn
1/2 cup red bell pepper (chopped)
1 small zucchini (chopped)
3 tablespoons olive oil
Salt and pepper
1/2 cup cubed mozzarella
1/3 cup ribboned basil

Steps:

  • Preheat the oven to 400 degrees F.
  • Cook orzo according to package directions. Drain and rinse with cold water; drain and place in a large bowl.
  • While orzo cooks, combine lemon zest, lemon juice, olive oil, oil, salt, garlic, and honey. Whisk until well combined.
  • Toss the corn, chopped red pepper, & chopped zucchini with olive oil and salt and pepper on a tray.
  • Cook for 20-25 minutes, flipping every 7-8 minutes in the preheated oven. (Cook until crisp tender)
  • Remove and allow to cool.
  • Toss completely cooled vegetables, completely cooled pasta, cubed mozzarella, and ribboned basil with the dressing and chill in the fridge until ready to enjoy.
  • Add salt and pepper to taste!
  • Enjoy!

4 cups chicken broth
1 1/2 cups orzo
1 (15-ounce) can garbanzo beans, drained and rinsed
1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved
3/4 cup finely chopped red onion
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh mint leaves
About 3/4 cup Red Wine Vinaigrette, recipe follows
Salt and freshly ground black pepper
1/2 cup red wine vinegar
1/4 cup fresh lemon juice
2 teaspoons honey
2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 cup extra-virgin olive oil

Steps:

  • Pour the broth into a heavy large saucepan. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.
  • Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.
  • Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.
  • Yield: 1 3/4 cups

1/4 cup diced red onion
1/4 cup chopped pitted black olives
1/4 cup chopped fresh parsley

1/4 cup red wine vinegar
1/4 teaspoon chopped fresh oregano
1 tablespoon chopped fresh basil
2 tablespoons grated Parmesan cheese
1/4 cup extra-virgin olive oil
1/2 cup cherry tomatoes, halved
Freshly cracked black pepper

Steps:

  • Prepare the orzo according to the package directions, taking care to salt the water generously. Drain and set aside to cool to room temperature.
  • In a large bowl, combine the orzo with the rest of the ingredients and 1/8 teaspoon salt. Use your clean hands or two large spoons to mix it carefully. Taste and adjust the seasoning if necessary.
  • Refrigerate the pasta salad for at least 15 to 20 minutes before serving.

1/3 cup red wine vinegar
1 lemons, juiced
1 teaspoon honey
1/2 teaspoons salt
1/8 teaspoon freshly ground black pepper
2/3 cup extra-virgin olive oil
8 ounces orzo pasta {try whole wheat for a healthier version}, cooked according to package
1/2 english cucumber, diced
1/2 cup crumbled feta cheese
1 - 15-ounce can garbanzo beans {chickpeas}, drained and rinsed
2 cups cherry tomatoes, halved
1/2 small red onion, chopped {about 2/3 cup}
1/2 cup fresh basil leaves, chopped
1/4 cup fresh mint leaves, chopped
1/4 cup fresh parsley, chopped

Steps:

  • Cook the orzo according to the package. Let cool completely or run under cold water until cooled.
  • In large mixing bowl combine the cucumber, feta cheese, garbanzo beans, tomatoes, red onion and gently stir to combine.
  • In a mason jar or salad dressing container whisk together the red wine vinegar, lemon juice, honey, salt, pepper and extra virgin oil.
  • Add the orzo pasta to the vegetables and mix well. Pour half of the dressing over the salad and toss. Sprinkle the basil, mint and parsley over the salad and gently toss. If serving immediately add more dressing if you feel like the salad needs it. Otherwise refrigerate the remaining half of the dressing and the salad. When ready to serve add the remaining dressing and toss.

2 peppers , different colours if you like, deseeded and sliced
1 red onion , cut into thin wedges
1 tbsp olive oil
6 cherry tomatoes , halved
25g orzo pasta
25g feta cheese , crumbled
2 tbsp roughly chopped basil

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the peppers and onion in a roasting tin and drizzle with half the oil. Roast for 20 mins, adding the tomatoes for the final 5 mins. Leave to cool.
  • Cook the orzo following pack instructions, then run under cold water to cool before draining thoroughly. Toss with the vegetables, the remaining oil, the feta and basil. Will keep in the fridge for a few days.

1/4 c. Extra Virgin Olive Oil
1 whole Lemon, Juiced
1 clove Garlic, Minced
Salt And Pepper, to taste
12 oz. weight Orzo Pasta, Cooked, Drained, And Cooled
1 c. Red Grape Or Cherry Tomatoes
1 c. Yellow Grape Or Cherry Tomatoes
1 c. Kalamata Olives, Halved
1 c. Crumbled Feta Cheese
1 c. Chickpeas, Drained.
1/2 whole Red Onion, Diced
3 tbsp. Minced Fresh Parsley

Steps:

  • In a jar or bowl, mix together the olive oil, lemon juice, garlic, salt, and pepper until totally combined.Place the orzo and all the other ingredients in a large mixing bowl and pour the dressing over the top. Stir to combine, taste and adjust seasonings, and refrigerate at least an hour before serving. Top with more feta and parsley and serve as a main dish salad or with grilled chicken, fish, or burgers!

5 ounces Kalamata pitted olives (, drained and halved)

Steps:

  • Bring a pot of water to a boil, season with salt, and cook the orzo for 10 minutes. Drain, rinse, and set aside to cool.
  • Transfer the cooled orzo to a large mixing bowl. Add the spinach, chopped vegetables, and olives, then crumble half of the feta cheese over the pasta.
  • In a small bowl, whisk the canola oil, olive oil, lemon juice, oregano and salt and pepper until mixed. Pour the vinaigrette over the pasta mixture and gently fold until the pasta and veggies are coated. Taste for seasoning and top with the remaining feta cheese.
  • Refrigerate for 1 hour or overnight before serving. The pasta is best within 2-3 days, but will last in the refrigerator up to 1 week.

1 recipe Greek Salad Dressing
1 tablespoon red wine vinegar
1 tablespoon fresh lemon juice

2 Persian cucumbers (halved vertically, and sliced ¼-inch thick)
2 cups halved cherry tomatoes
1 cup cooked chickpeas (drained, and rinsed)

½ cup pitted Kalamata olives

Steps:

  • Prepare the Greek Salad Dressing and add in the red wine vinegar, lemon juice, oregano, and sea salt.
  • In a large bowl, toss together the cooked orzo, cucumbers, tomatoes, chickpeas, feta, red onion, and olives. Drizzle the dressing over the salad, add half the herbs, season with freshly ground black pepper, and toss to coat. Garnish with the remaining herbs and serve.

1 red pepper, diced
1 ripe mango, cubed
1 small cucumber, chopped (1½ cups)
½ small red onion, diced (1/3 cup)
1 small garlic clove, minced

½ chopped fresh herbs (mint, basil, and/or cilantro)
½ cup uncooked orzo
Extra-virgin olive oil, for drizzling
1 packed cup arugula
¼ cup toasted pine nuts
2 tablespoons tahini
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 tablespoon sherry or white wine vinegar
½ teaspoon cumin
½ teaspoon sweet paprika
2 tablespoons water
½ teaspoon sea salt, more to taste

Steps:

  • In a large bowl, combine the red pepper, mango, cucumber, red onion, garlic, chickpeas, herbs, salt, and several grinds of fresh black pepper.
  • Cook the orzo according to the package directions or until al dente. Drain, gently rinse, toss with a little olive oil oil and set aside to cool to room temp before adding to the salad.
  • Make the dressing. In a small bowl, stir together the tahini, olive oil, lemon juice, vinegar, cumin, sweet paprika, salt and pepper. Add a few tablespoons of water until it's a drizzle-able consistency.
  • Add the orzo, dressing, and arugula to the salad and toss to coat. Season to taste and top with toasted pine nuts.

LEMON ORZO PASTA SALAD WITH CUCUMBERS AND OLIVES

We love this light orzo pasta salad - it doubles as a side, can be the main event or works well topped with grilled chicken or Adam's favorite, shrimp! Use your favorite tender herbs in this - we love using of one or a combination of mint, dill, basil, parsley or cilantro.

1 1/2 cups (8 ounces) dried orzo pasta
Salt and fresh ground black pepper
1/4 cup extra-virgin olive oil

1 teaspoon finely grated lemon zest
2 to 4 tablespoons fresh squeezed lemon juice, depending on taste
1 medium English cucumber, diced
1 large tomato, diced or 8 ounces halved cherry tomatoes
1/2 cup coarsely chopped fresh herbs; use any combination of fresh parsley, cilantro, basil, dill or mint
1/2 cup pitted olives, halved
1 cup canned or jarred and drained artichoke hearts, chopped, see notes

Steps:

  • Bring a large saucepan of salted water to a boil. Add orzo and cook until tender, 6 to 10 minutes (check box for actual cook time). Drain.
  • While the orzo cooks, in a large bowl, whisk the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper. Add the drained orzo to the dressing and mix well.
  • Stir in the cucumber, tomato, herbs, olives and artichokes. Taste for seasoning and adjust with salt and/or pepper as needed. Enjoy warm or cover then refrigerate until cool, about 1 hour.

1 teaspoon rose harissa
red wine vinegar
olive oil
1 kg ripe cherry tomatoes, on the vine
1 bunch of spring onions
1 bunch of garlic
1 bunch of soft herbs (30g), such as basil, dill, mint
500 g frozen broad beans, (or fresh, if it's the season)
500 g dried orzo pasta
extra virgin olive oil

Steps:

  • ON THE DAY Preheat the oven to 150°C/300°F/gas 2. In a large roasting tray, mix the harissa with 1 tablespoon each of red wine vinegar and olive oil and a pinch of sea salt and black pepper. Add the tomatoes on the vines, trim and add the whole spring onions, then break up the garlic, squash the unpeeled cloves and add to the tray. Gently toss together, roast for 1 hour, then remove.
  • Squeeze the soft garlic flesh out of the skins on to a board, finely chop with the spring onions and most of the herb leaves, then scrape into a large pan. Pour the tomatoes and all the juices from the tray through a coarse sieve into the pan, pushing it all through with the back of a spoon. Keep aside.
  • TO SERVE Heat up the sauce while you cook the broad beans in a large pan of boiling salted water for 2 minutes. Remove with a slotted spoon, pinching the skin off any larger beans, if you like, while you cook the orzo in the large pan of boiling salted water according to the packet instructions. Drain, pour into the sauce with the beans and turn the heat off, letting the orzo suck up all that flavour. Transfer to a large serving bowl, pick over the remaining herbs and finish with a drizzle of extra virgin olive oil. Serve hot or at room temperature.

  • The night before making the salad, cut the tofu into small cubes. In a small bowl, combine all of the ingredients for the marinade. Fill the tofu and the marinade into a ziploc bag and store it overnight in the fridge.
  • Cook the orzo according to the instructions on the package. After cooking, drain it with a colander and run it under cold water. It will quickly cool it down and it will prevent it from clumping together.
  • Roughly dice the cucumber. Cut the cherry tomatoes into halves and the red onion into thin slices.
  • Make the dressing: in a small bowl whisk together the olive oil, the white wine vinegar, the dried oregano, basil, thyme, the lemon juice, the salt, and pepper.
