- In a large saucepan, bring broth to a boil; add pasta. Return to a boil. Cook, uncovered, until pasta is tender, 10-12 minutes. Meanwhile, in a small bowl, whisk the oil, vinegar, lemon juice, honey, salt and pepper., In a large bowl, combine the tomatoes, cucumber, basil, onions and spinach. Drain pasta; add to tomato mixture. Drizzle with dressing; toss to coat. Chill until serving., Just before serving, stir in cheese and pine nuts.

ORZO PASTA SALAD
This orzo pasta salad is filled with fresh veggies and has a fresh lemon taste. Perfect for your next potluck!

- Preheat the oven to 400 degrees F.
- Cook orzo according to package directions. Drain and rinse with cold water; drain and place in a large bowl.
- While orzo cooks, combine lemon zest, lemon juice, olive oil, oil, salt, garlic, and honey. Whisk until well combined.
- Toss the corn, chopped red pepper, & chopped zucchini with olive oil and salt and pepper on a tray.
- Cook for 20-25 minutes, flipping every 7-8 minutes in the preheated oven. (Cook until crisp tender)
- Remove and allow to cool.
- Toss completely cooled vegetables, completely cooled pasta, cubed mozzarella, and ribboned basil with the dressing and chill in the fridge until ready to enjoy.
- Add salt and pepper to taste!
- Enjoy!

ORZO SALAD

- Pour the broth into a heavy large saucepan. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.
- Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.
- Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.
- Yield: 1 3/4 cups

- Prepare the orzo according to the package directions, taking care to salt the water generously. Drain and set aside to cool to room temperature.
- In a large bowl, combine the orzo with the rest of the ingredients and 1/8 teaspoon salt. Use your clean hands or two large spoons to mix it carefully. Taste and adjust the seasoning if necessary.

- Cook the orzo according to the package. Let cool completely or run under cold water until cooled.
- In large mixing bowl combine the cucumber, feta cheese, garbanzo beans, tomatoes, red onion and gently stir to combine.
- In a mason jar or salad dressing container whisk together the red wine vinegar, lemon juice, honey, salt, pepper and extra virgin oil.
- Add the orzo pasta to the vegetables and mix well. Pour half of the dressing over the salad and toss. Sprinkle the basil, mint and parsley over the salad and gently toss. If serving immediately add more dressing if you feel like the salad needs it. Otherwise refrigerate the remaining half of the dressing and the salad. When ready to serve add the remaining dressing and toss.

- Bring a pot of water to a boil, season with salt, and cook the orzo for 10 minutes. Drain, rinse, and set aside to cool.
- Transfer the cooled orzo to a large mixing bowl. Add the spinach, chopped vegetables, and olives, then crumble half of the feta cheese over the pasta.

- Bring a large pot of salted water to a boil. Prepare the pasta according to the package directions, or until slightly past al dente. Drain the orzo and toss it with a little olive oil, so that it doesn't stick together. Spread onto a baking sheet to cool.
- Prepare the Greek Salad Dressing and add in the red wine vinegar, lemon juice, oregano, and sea salt.

- In a large bowl, combine the red pepper, mango, cucumber, red onion, garlic, chickpeas, herbs, salt, and several grinds of fresh black pepper.

- ON THE DAY Preheat the oven to 150°C/300°F/gas 2. In a large roasting tray, mix the harissa with 1 tablespoon each of red wine vinegar and olive oil and a pinch of sea salt and black pepper. Add the tomatoes on the vines, trim and add the whole spring onions, then break up the garlic, squash the unpeeled cloves and add to the tray. Gently toss together, roast for 1 hour, then remove.
- Squeeze the soft garlic flesh out of the skins on to a board, finely chop with the spring onions and most of the herb leaves, then scrape into a large pan. Pour the tomatoes and all the juices from the tray through a coarse sieve into the pan, pushing it all through with the back of a spoon. Keep aside.
- TO SERVE Heat up the sauce while you cook the broad beans in a large pan of boiling salted water for 2 minutes. Remove with a slotted spoon, pinching the skin off any larger beans, if you like, while you cook the orzo in the large pan of boiling salted water according to the packet instructions. Drain, pour into the sauce with the beans and turn the heat off, letting the orzo suck up all that flavour. Transfer to a large serving bowl, pick over the remaining herbs and finish with a drizzle of extra virgin olive oil. Serve hot or at room temperature.

- The night before making the salad, cut the tofu into small cubes. In a small bowl, combine all of the ingredients for the marinade. Fill the tofu and the marinade into a ziploc bag and store it overnight in the fridge.
