½ cup extra-virgin olive oil
¼ cup balsamic vinegar
1 tablespoon chopped fresh basil, or to taste
1 (14 ounce) can artichoke hearts, drained and chopped
2 tomatoes, chopped
1 (6 ounce) can sliced black olives, drained
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 to 10 minutes; drain.
  • Whisk olive oil, balsamic vinegar, and basil together in a small bowl for the dressing.
  • Combine cooked orzo, artichoke hearts, tomatoes, olives, and Parmesan cheese in a large bowl. Stir dressing into the orzo mixture until all ingredients are well coated. Can be served warm or chilled.

¾ lb orzo
olive oil
4 ears corn, husked
1 lb cherry tomatoes
kosher salt
4 cloves garlic, chopped
½ cup grated parmesan cheese
2 tbsp white wine vinegar
1 lemon, juiced
1 tsp honey
30 cracks fresh black pepper
½ cup olive oil
¼ cup vegetable oil
2 oz arugula
3 oz thinly sliced Prosciutto di Parma, each slice cut into thirds
¼ cup packed basil leaves, torn
1 tbsp minced chives

Steps:

  • Bring a large pot of salted water to a boil. Drop the orzo and cook according to the package's instructions. Drain, rinse with cold water to fully cool, and drain again.
  • Meanwhile, heat a large cast-iron skillet over medium-high heat. Add a drizzle of olive oil to coat the bottom. Place the corn into the hot skillet. Cook on all sides for about 10 minutes until slightly charred and tender, flipping continuously. Allow the corn to cool, then slice off the kernels.
  • In the same skillet, heat about 2 tablespoons of olive oil over medium-high heat. Add the cherry tomatoes and a good pinch of salt. Cook for about 5 minutes until burst. Lower the heat to medium-low and continue to cook until caramelized and softened, about 10 minutes longer. Let cool.
  • Add the garlic, parmesan, white wine vinegar, lemon juice, honey, and black pepper to a food processor. Pulse to combine. With the processor running, slowly drizzle in the olive and vegetable oils.
  • Combine the orzo, corn, tomatoes, arugula, Prosciutto di Parma, basil, and chives in a large mixing bowl. Drizzle in the parmesan vinaigrette and toss well. Serve at room temperature.

8 oz. orzo pasta
8 Campari tomatoes, sliced and pre-roasted or double the amount of cherry tomatoes, pre-roasted
7 artichoke hearts, preferably fresh and steamed or cooked til tender or frozen and defrosted squeezed of all liquid
1 cup of freshly grated parmigiano or romano cheese
3 garlic cloves, crushed
½ of a medium onion
handful of chopped parsley, basil or both
reserved pasta water
olive oil

Steps:

  • Pre-roast sliced tomatoes at 400 degrees on parchment drizzled with olive oil, salt, pepper and a little oregano until moisture is mostly gone and the sides look wrinkled.
  • Cook orzo al ' dente and before draining reserve a cup of the pasta water.
  • While pasta is boiling take a large saute pan with sides, drizzle the bottom with olive oil.
  • Saute the onion and garlic then add the artichoke hearts, breaking some apart so the leaves can mix well into the pasta.
  • Add half of the pasta water and cheese into the veggie mix, mixing well with a whisking motion to create a sauce.
  • Toss in the cooked orzo pasta and If you need more pasta water add it.
  • Pull pan off the heat and fold in the roasted tomatoes.
  • Toss on chopped herbs, parsley, basil or both.
  • Adjust to your liking adding a drizzle more of olive oil, cheese, salt and pepper or pasta water.
  • Recipe can easily be doubled!

2 (6 ounce) cans marinated artichoke hearts
1 tomato, seeded and chopped
1 cucumber, seeded and chopped
1 red onion, chopped
1 cup crumbled feta cheese
1 (2 ounce) can black olives, drained
¼ cup chopped fresh parsley
1 tablespoon lemon juice
½ teaspoon dried oregano
½ teaspoon lemon pepper

4 cups chicken broth
1 1/2 cups orzo
1 (15-ounce) can garbanzo beans, drained and rinsed
1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved
3/4 cup finely chopped red onion
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh mint leaves
About 3/4 cup Red Wine Vinaigrette, recipe follows
Salt and freshly ground black pepper
1/2 cup red wine vinegar
1/4 cup fresh lemon juice
2 teaspoons honey
2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 cup extra-virgin olive oil

Steps:

  • Pour the broth into a heavy large saucepan. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.
  • Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.
  • Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.
  • Yield: 1 3/4 cups

Steps:

  • Cook orzo in large saucepan of boiling salted water until aldente, drain.

Salt and fresh ground black pepper
1/4 cup extra-virgin olive oil
1 teaspoon Dijon mustard
1/2 teaspoon honey
1 teaspoon finely grated lemon zest
2 to 4 tablespoons fresh squeezed lemon juice, depending on taste
1 medium English cucumber, diced
1 large tomato, diced or 8 ounces halved cherry tomatoes
1/2 cup coarsely chopped fresh herbs; use any combination of fresh parsley, cilantro, basil, dill or mint
1/2 cup pitted olives, halved
1 cup canned or jarred and drained artichoke hearts, chopped, see notes

Steps:

  • Bring a large saucepan of salted water to a boil. Add orzo and cook until tender, 6 to 10 minutes (check box for actual cook time). Drain.
  • While the orzo cooks, in a large bowl, whisk the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper. Add the drained orzo to the dressing and mix well.

  • If you haven’t cooked the orzo yet, bring a pot of salted water to a boil and cook 1 ½ cups according to the package directions. This is usually to boil for 8 to 10 minutes.
  • Heat a large skillet over medium heat. Add the prosciutto and cook until crisp and golden, about 5 to 6 minutes. Remove the prosciutto and place it on a paper towel to cool. Prosciutto does not render as much fat as bacon, so you will most likely need olive oil here. If you use bacon instead, there may be enough fat in the skillet to cook the orzo. Ideally you want about 2 tablespoons.
  • In the same skillet over medium heat, add the olive oil. Add in the shallots and the garlic with a pinch of salt and stir. Cook for 5 minutes, until softened. Add in the orzo and toss well. Press the orzo into an even layer in the pan so it covers the entire bottom. Let it cook and crispy for a few minutes, then toss and repeat the process, pressing it into the bottom of the pan to cook. You want to do this a few times over, until the orzo is a bit crisp and golden in color.
  • Once the orzo is finished, add in the artichoke hearts. Stir in the lemon zest and juice. Taste and season with salt and pepper. Turn off heat.
