- Preheat oven to 425º F.Place diced zucchini into a large bowl. Drizzle with 1/2 TBSP of olive oil and sprinkle with some salt and pepper. Toss to coat, then spread the zucchini over a baking sheet. Bake until tender—about 8-10 minutes. Once the zucchini is done, remove it from the oven and set aside.
- Cook the orzo as per the directions on the package (no longer than al dente). When it's ready, drain the orzo and run it under cool water, tossing it lightly with your fingers to get that starchiness out. Give the orzo a good shake in the strainer to remove excess water, and transfer the orzo to a large serving bowl; set aside.
- Zest your lemons before juicing them, and transfer the zest to a blender. Add the lemon juice followed by all of the other ingredients for the dressing to the blender. Blend until all of the ingredients are thoroughly mixed and pureed into a dressing. Give it a taste test and season further if needed.

- Prepare the chimichurri by washing the parsley and cilantro leaves well, then shaking off as much water as possible. Pull the leaves from the stems and add them to a food processor, along with the olive oil, vinegar, garlic, oregano, cumin, red pepper, and salt. Pulse the mixture until smooth. (Or finely mince the parsley, cilantro, and garlic with a knife and stir together with the remaining ingredients.)
- Slice the zucchini into 1/4 inch thick rounds. The zucchini can be added to the salad raw, grilled, or roasted in the oven first. I used a countertop grill to grill the slices, then cut them into quarter rounds after grilling. If roasting in the oven, toss with a little oil, a pinch of salt and pepper, then roast at 400 degrees for about 20 minutes. Let the zucchini cool slightly.
- While the zucchini and pasta are cooling, slice the grape tomatoes in half. Once the zucchini and orzo are no longer steaming hot, combine them in a bowl with the tomatoes. Pour about half of the chimichurri over top, and then toss until everything is coated. Add more chimichurri to your liking (I used about 3/4 of the batch). Taste and add salt or pepper to the salad if needed.

- Salting watery vegetables, draws some of the water out, to avoid your dishes from becoming too diluted, or soggy. I always salt eggplant before I cook it. This process is known as disgorging vegetables. 15 to 20 minutes of salt can make a world of difference in your dishes!
- Meanwhile, cook the orzo according to package directions in a large pot of heavily salted boiling water. Drain and rinse with cold water to stop it from cooking. Drain well, then transfer to a large bowl.
- In a large, deep pan over medium heat, heat 1 tablespoon of the oil. Add the corn; cook until tender, about 3 to 5 minutes, stirring occasionally. Add the rest of the oil, zucchini jalapeno and onion to the pan saute until tender and warmed through, about 2 to 3 minutes.
