2 cups orzo
1 15-ounce can garbanzo beans, drained
2 cups cherry tomatoes (halved)
3/4 cup finely chopped sweet onion (like Walla Walla)
3/4 cup chopped fresh basil leaves
1/4 cup chopped fresh mint leaves
1/2 cup red wine vinegar
2 tablespoons fresh lemon juice
1 teaspoon honey
1 teaspoon salt
1/2 cup extra virgin olive oil
Kosher salt and freshly ground pepper to taste

Steps:

  • Cook the orzo according to package directions. I strongly suggest adding a couple teaspoons of salt or so to the water for extra flavor.
  • Throw the orzo into a large bowl with the tomatoes, onion, drained garbanzo beans, basil, and mint.
  • In a small bowl, make the vinaigrette: Whisk together the vinegar, lemon juice, honey, salt, and olive oil.
  • Pour the vinaigrette over the orzo, veggies, and herbs, and toss gently until well incorporated.
  • Season to taste with kosher salt and fresh ground pepper.
  • Great when served at room temperature, but also refreshing served chilled.

1 1/2 cups orzo
1 (15-ounce) can garbanzo beans, drained and rinsed
1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved
3/4 cup finely chopped red onion
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh mint leaves
About 3/4 cup Red Wine Vinaigrette, recipe follows
Salt and freshly ground black pepper
1/2 cup red wine vinegar
1/4 cup fresh lemon juice
2 teaspoons honey
2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 cup extra-virgin olive oil

Steps:

  • Pour the broth into a heavy large saucepan. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.
  • Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.
  • Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.
  • Yield: 1 3/4 cups

1 pound whole wheat orzo (I buy DeLallo)
6 Tbsp. olive oil (divied)
1 medium sweet onion (chopped)
1 15 oz. cans Bush's Garbanzo Beans (drained and rinsed)
2 cups halved grape tomatoes
2 cups diced cucumbers (I love English cucumbers)
1/2 cup fresh lemon juice
2 tsp. kosher salt
4 oz. feta cheese
¼ cup thinly sliced basil

Steps:

  • Bring a pot of well-salted water to a boil. Cook pasta until al dente, according to package instructions. Drain and toss with a little bit of olive oil to prevent sticking. Set aside.
  • Heat 1 Tbsp. olive oil in a medium skillet over medium heat; add the onion and cook until tender, 6-8 minutes, stirring often. Remove from heat and allow to cool.
  • Place the cooled pasta in a large bowl. Add the drained beans, tomatoes, cucumbers, basil, and cooled onions.
  • In a small bow, mix the lemon juice and 4 Tbsp. olive oil; salt and pepper to taste. Pour over the salad mixture and gently mix together.
  • Sprinkle with feta cheese. Drizzle with remaining 1 Tbsp. olive oil; serve.

3 tablespoons olive oil for pan + more for finished dish, as desired
1 medium sweet Vidalia onion, diced small
1 medium zucchini, diced into half moons
one 15-ounce can garbanzo beans, drained and rinsed (I use low salt)
2+ teaspoons kosher salt, or to taste
1+ teaspoon freshly ground black pepper, or to taste
2 teaspoons Italian seasoning
1 teaspoon dried oregano
2 to 4 cloves garlic, pressed or finely minced
5 ounces fresh spinach (about 4 giant handfuls)
1/2 English cucumber, diced into small half moons
1 pound sliced cherry or grape tomatoes, or to taste
1/4 to 1/3 cup cup fresh basil loosely measured, chiffonade (in ribbons); or to taste
1 teaspoon lemon zest, or to taste
3 tablespoons lemon juice, or to taste
6 ounces crumbled feta cheese

Steps:

  • To a large pot, add the orzo and cook according to package directions. Drain and return to pot or very large bowl; set aside.
  • While orzo is cooking, to a large skillet add 3 tablespoons olive oil, onions, and cook for about 3 minutes; stir intermittently.
  • Add the zucchini, garbanzo beans, season with 1 teaspoon salt, 1 teaspoon pepper pepper, Italian seasoning, oregano, and cook for about 3 more minutes, or until zucchini is slightly softened; stir frequently to ensure even cooking.
  • Add the garlic, stir to combine, and cook for about 1 minute, or until fragrant.
  • Transfer the onion and zucchini mixture to the large pot with the drained orzo.
  • Add the spinach (looks like a lot but it will wilt) and stir to incorporate. Stir for about 2 minutes, or until it begins to wilt from the carryover heat.
  • Add the cucumbers, tomatoes, basil, lemon zest, lemon juice, and stir well to incorporate.
  • Add the feta and stir to combine. Tip - If you want the feta to remain more intact, don't add it until the orzo has cooled down a bit, or it will melt, which is totally fine, you just won't see the white crumbles.
  • Taste, and as desired, add additional salt and pepper. I added an additional approximately 2 additional teaspoons salt and 1 teaspoon pepper because it's a very large quantity of food.
  • If desired, drizzle in additional olive oil. I added another approximately 2 tablespoons for flavor and so that the orzo doesn't stick as it cools.
  • Serve immediately. Recipe can be served warm, at room temp, or chilled.

4 c chicken stock
1 1/2 c orzo pasta
1 can(s) garbanzo beans, 15oz.)
1 1/2 c grape, cherry or teardrop tomatoes (halved)
3/4 c finely chopped red onion
1/2 c chopped fresh basil
1/4 c chopped fresh parsley or mint
3/4 c vinaigrette (recipe follows)
salt and pepper to taste
crumbled feta cheese (optional)
toasted pine or walnuts roughly chopped (optional)
VINAIGRETTE DRESSING:
1/2 c rice wine vinegar
1/4 c fresh lemon juice
2 tsp honey
2 tsp salt
1 c extra virgin olive oil

Steps:

  • 1. In a medium saucepan bring the chicken stock to a boil. Stir in orzo and cook until tender but still firm to the bite, stirring frequently (about 7 min). Drain the orzo and toss in a large bowl until it cools slightly. (I usually add a tiny bit of olive oil so it doesn't clump together) Set aside to cool completely.
  • 2. Toss the orzo with the beans, tomatoes, red onion, basil, parsley and enough vinaigrette to coat.
  • 3. Season the salad to taste with salt and pepper. Serve at room temp. Add some crumbled feta cheese and toasted nuts (if using) before serving.

1 recipe Greek Salad Dressing
1 tablespoon red wine vinegar
1 tablespoon fresh lemon juice
½ teaspoon oregano
¼ teaspoon sea salt
2 Persian cucumbers (halved vertically, and sliced ¼-inch thick)
2 cups halved cherry tomatoes
1 cup cooked chickpeas (drained, and rinsed)
4 ounces feta cheese (cut into ¼-inch cubes)
⅓ cup thinly sliced red onion
½ cup pitted Kalamata olives
1 cup fresh basil and/or mint leaves
Freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Prepare the pasta according to the package directions, or until slightly past al dente. Drain the orzo and toss it with a little olive oil, so that it doesn't stick together. Spread onto a baking sheet to cool.
  • Prepare the Greek Salad Dressing and add in the red wine vinegar, lemon juice, oregano, and sea salt.
  • In a large bowl, toss together the cooked orzo, cucumbers, tomatoes, chickpeas, feta, red onion, and olives. Drizzle the dressing over the salad, add half the herbs, season with freshly ground black pepper, and toss to coat. Garnish with the remaining herbs and serve.

3 lemons (juiced, more or less to taste)
1/4 cup olive oil (extra-virgin)

15 oz beans (cannellini, rinsed and drained)
1/2 cup basil leaves (packed, fresh, chopped (or as much as you like!))

Steps:

  • Add water to a large saucepan and bring to a boil on the stove top.
  • Once boiling, lightly salt the water and add orzo and stir.
  • Let pasta cook for 8-10 minutes, stirring occasionally so that the pasta doesn't stick.
  • When pasta is to your preferred doneness, drain the water and add pasta to a bowl to cool.
  • You'll want to stir the pasta as it cools to ensure it doesn't stick together.
  • If it begins to stick, drizzle pasta with a little bit of olive oil and it should be fine.
  • In a separate bowl, add lemon juice, olive oil, apple cider vinegar, garlic, salt, and pepper and whisk to combine.
  • Pour over cooled orzo and stir to combine.
  • Add almonds, cannellini beans, and basil and stir to combine evenly.
  • Refrigerate the pasta salad for at least 30 minutes before serving.
  • As the pasta will absorb some of the liquid as it is refrigerated, you may want to drizzle a little extra olive oil and lemon juice over top and stir in before serving.
