BROCCOLI AND ORZO CASSEROLE
We used one of our favorite creamy cheeses, Havarti, in this comforting casserole. The mild Danish cheese is widely available in different flavors - try dill or caraway for extra punch.

Steps:
- Preheat the oven to 375 degrees F. Butter a 2-quart casserole dish.
- Bring a large pot of generously salted water to a boil. Add the orzo, stir and cook for 5 minutes. Add the broccoli florets and cook until bright green, about 1 minute. Strain and set aside.
- Heat a large pot or Dutch oven over medium heat. Add the butter and flour, whisk together and cook for about 1 minute. Add the onions and garlic and cook, stirring, until the onions have softened, about 5 minutes. Whisk in the milk, bring the sauce to a low boil, reduce to a simmer and simmer gently for about 5 minutes. Turn off the heat and add 1 cup of the Havarti, sour cream, 2 tablespoons of the Parmesan, 1 teaspoon salt and pepper to taste. Gently fold in the broccoli and orzo.
- Transfer the mixture to the buttered casserole dish. Sprinkle with the remaining 1/2 cup Havarti and 1 tablespoon Parmesan. Toss the bread crumbs with the remaining 1 tablespoon melted butter in a small bowl. Season with salt and spread evenly over the casserole. Bake until brown and bubbly, about 30 minutes.
ORZO AND BROCCOLI SALAD
Italian dressing, feta and almonds give this orzo salad great flavor, but the festive color comes from broccoli and cherry tomatoes. Now it's perfect.

LIGHT AND REFRESHING SESAME ORZO SALAD
This is something that I came up with to take to a cookout today. Grilled salmon and steak were served, and this went very well with it and was well-liked. This has a very delicate and subtle flavor (it was described by one person as "light and refreshing," which is where the name comes from). I wanted something with an Asian feel but I didn't want to make an Oriental coleslaw - I love those, but I just wasn't in the mood for anything that sweet or vinegar-y. The bulk of the flavor comes from the sesame oil and toasted sesame seeds, so I don't think those two ingredients should be substituted. This salad can be served at any temperature, but I do strongly recommend refrigerating overnight since it takes time for the flavor to fully develop. I liked the light taste and "dryness" of the dressing, but feel free to make up more dressing if your tastes are different than mine. This would also be good with rice in place of the orzo. This filled up a 2.5 quart serving bowl. Cook time is refrigerator time.

- Cook orzo in salted water according to package directions, just until al dente. Do not overcook. Drain in a colander, toss and rinse with cold water until cool.
- Place broccoli florets in a food processor, and pulse until uniformly broken down into small, rice-size pieces. If any larger pieces remain, dump everything into a bowl, and put the large pieces back in the food processor. Pulse again.
- Pre-heat the now empty pasta pot over medium heat. Add broccoli rice to pot, and cook, stirring occasionally, until bright green, 3 to 4 minutes. The broccoli will become fragrant and smell slightly nutty or sesame-like. Season with sea salt. Remove from heat and let cool.
- To make the dressing, in a blender combine 1/2 cup olive brine, 1/3 cup lemon juice, garlic, and pumpkin seeds (or cashews). Blend on high until smooth.
