GREEK HOT DOG SAUCE
Not tomato based and so close to what our local famous Hot Dog joints offer (here in Toledo it's Nettie's and Rudy's)! Passed along from my Uncle Bob who knew the owner of a local Hot Dog joint in the early 50's. Let me know what YOU think because I think it's GREAT! Freezes well and since a little goes a long way, I suggest freezing in smaller containers so you have it on hand when needed. Also makes a great gift for the chili dog lovers you know! Update 6/2013. Though I've stayed true to this recipe, I tried adding ground cloves and found it added another level of flavor that we enjoy even more than the local "Dog Joints" make. Simple change so if you make this regularly, give it a try!

Steps:
- Put all the ingredients in a saucepan and add all spices. Before heating, stir into a paste.
- Bring to a boil, then reduce heat and simmer for one hour or until liquid is reduced to your liking.
- If you use very lean meat to avoid cholesterol, add a tablespoon or two vegetable oil (I don't suggest olive oil). It's the oil that brings the flavor to the tongue!

This is my sister Dawn's recipe for good, old-fashioned, northwest-Pennsylvanian Greek sauce for topping your burgers and dogs.

Steps:
- Place the beef in a large skillet over medium heat. Cook until beef is completely brown; drain. Stir the onions, tomato sauce, water, salt, pepper, oregano, basil, garlic powder, cumin, red pepper flakes, and yellow mustard into the beef. Bring to a boil; lower heat to medium-low and simmer 45 minutes, stirring occasionally.

This Greek hot dog sauce is the perfect way to add some zing to your next cookout. It has a slightly spicy, tangy flavor that will have people wanting seconds.

- Place the ground beef and onions in a large saucepan over medium-high heat. Cook, stirring frequently, until the beef is cooked. Drain off any excess grease. Add the remaining ingredients to the saucepan. Mix well and bring to a simmer over medium-high heat. Reduce the heat to low and let simmer for 1-2 hours. The flavors will intensify the longer it cooks. Remove from the heat and serve warm over hot dogs in buns. Store leftovers in a covered container in the refrigerator for up to 3 days. Reheat before serving.

GREEK STYLE HOT DOG SAUCE
This one is a little different. It is supposed to be a copycat recipe of the Texas Lunch's hot dog sauce from Central Pennsylvania. It is not even close to their sauce -- but still, very tasty. Do not let the long simmer time scare you off -- it is worth it.

PORT HURON-STYLE CONEY SAUCE
This is a style of coney sauce that is found in the Greek restaurants and Coney Islands around the Detroit, Michigan area. It is very unique and different from New York coney sauce. Serve over steamed hot dogs in steamed buns with mustard and chopped raw onion if you wish.

- PREPARATION:.
- To get the right consistency, cover the meat with water and soak, in the fridge, for 2 hours.
- Then take a fork and break up any remaining chunks.
- Drain the water and go on to browning.
- You will have some water while browning but it will slowly steam off.
- Brown beef, onion and shortening.
- Add remaining ingredients.
- Simmer for 2 hours.
- You may have to add some water.
