Steps:
- Cook the rice noodles following pack instructions. Heat the oil in a non-stick pan and fry the turkey over a high heat for 2 mins. Add the beans, onion and garlic, and cook for a further 5 mins.
- Stir in the lime juice, chilli powder, fresh chilli and fish sauce, then cook for 3 mins more. Stir in the noodles and herbs, then toss everything together before serving.

This turkey stir-fry recipe is such an easy and tasty way to use up leftover turkey. It's VERY simple to make, and the sauce is super flavorful!

- Whisk the sauce ingredients in a small bowl. Set aside.
- In a large, deep skillet, heat the avocado oil over medium-high heat for about 2 minutes. Add the frozen vegetables, garlic, and ginger. Cook, stirring often, until the veggies are defrosted and tender, about 5 minutes.
- Reduce the heat to medium. Give the sauce another stir, then add the turkey meat and the sauce to the skillet. Cook, stirring, until everything is well-coated and the sauce thickens, about 2 minutes.
- Transfer the turkey stir-fry to a serving platter. Drizzle with the sesame oil and scatter the scallions on top. Serve immediately.

- In a large skillet or wok, stir-fry turkey in oil over medium-high heat until no longer pink, about 5-6 minutes. Remove turkey and keep warm. Stir-fry the onion, carrot, green pepper and mushrooms until crisp-tender, about 5 minutes. , In a small bowl, combine the chicken broth, cornstarch, soy sauce and ginger. - Whisk soy sauce, sugar, and cornstarch together in a bowl until smooth; stir turkey into cornstarch mixture and set aside for 15 minutes to marinate.

GROUND TURKEY STIR FRY
This Ground Turkey Stir Fry is packed with good-for-you ingredients including lean ground turkey, an array of veggies, and a quick stir-fry sauce. This high-protein, low-carb recipe is so tasty and even better with the (optional) creamy Sriracha-mayo sauce!

- PREP THE VEGGIES: Cut the cabbage in half, remove the core, and then thinly slice to get 6 cups. Alternatively, use a package of cole slaw mix and save the slicing! Using a box grater, grate the zucchini on the large holes to get 3/4 cup. Thinly slice 3-4 green onions to get a heaping 1/2 cup (37g). Peel the ginger and then finely shred using the small side of your grater or a microplane grater. Mince the garlic.
- COOK GROUND TURKEY: Heat a large skillet over medium-high heat. Once hot, add the vegetable oil, ground turkey, garlic, ginger, and a pinch of fine sea salt and pepper. (I add 1/4 teaspoon of each.) Cook until the ground turkey is cooked through, about 5-7 minutes breaking it up as you cook. If there is an excessive amount of liquid, drain that off here.
- SAUCE: While the ground turkey is cooking, prepare the sauce by stirring together the soy sauce, sesame oil, sriracha, and brown sugar. Set aside.
- COOK VEGGIES: Add the cabbage and carrots to the skillet with the ground turkey and continue to stir and cook until the cabbage is wilted, about 2-4 minutes. Add in the zucchini, green onions, and the sauce. Stir for another 1-2 minutes and then remove from heat. Garnish dish with additional sliced green onions as desired. Taste and add a pinch more of salt if needed.
- SRIRACHA MAYO (OPTIONAL): If desired, serve with sriracha mayo. To make sriracha mayo: whisk together the mayo, sriracha, lime juice, and a tiny pinch of salt and pepper until smooth. See Note 1.

- Cut the baby corn and mange tout in half diagonally. Peel and grate the ginger. Heat the oil in a wok or large, heavy-based frying pan and add the ginger and turkey strips.
- Stir-fry over a fairly high heat for 5-6 minutes, until the turkey is lightly browned.
- Add the baby corn, then stir-fry for 1-2 minutes. Add the sugar snap peas and stir-fry for 1 minute. Add the mange tout and stir-fry for a further 1 minute.
- Mix together the soy sauce, lime juice, coconut milk and peanut butter, then add to the pan and cook, stirring, for 1-2 minutes.

- SAUCE: Combine all ingredients in small bowl.
- STIR_FRY: Combine 2 tbsp sauce and the turkey in a bowl. Let marinate for 30 minutes at room temperature.
- Heat oil in large skillet over medium-high heat. Add onion; stir-fry for 2 minutes.
- Add sweet potato, broccoli and pepper. Stir-fry for 2 minutes.
- Add ½ cup water; cover and cook 6-8 minutes until sweet potato is tender.
- Add remaining sauce and heat while stirring gently to combine.
