8 ounces thin spaghetti
One 8-ounce bag julienne/fine-cut carrots (about 1 1/2 cups)
One 6-ounce bag baby sweet peppers, seeded and sliced thinly into rings (about 1 cup)
One 4-ounce bag bean sprouts (about 1 cup)
3 English cucumbers, halved, seeds removed and sliced
3 scallions, sliced
Up to 1 bunch fresh cilantro, chopped
1/2 head or more napa cabbage, sliced
1/2 head or more purple cabbage, sliced
1/2 bunch kale, leaves torn off the stalks and shredded
2 cups peanuts, chopped
1/2 cup olive oil
1/3 cup low-sodium soy sauce
1/4 cup oyster sauce
1/4 cup rice wine vinegar
1/4 cup brown sugar
3 tablespoons chopped fresh ginger
2 tablespoons sesame oil
2 to 3 cloves garlic, chopped

Steps:

  • For the salad: Bring a pot of water to a boil. Cook the spaghetti to al dente according to the package directions. Drain, rinse and let cool.
  • Mix together the cooked spaghetti, carrots, peppers, bean sprouts, cucumbers, scallions, cilantro, napa cabbage, purple cabbage and kale. Add the peanuts and toss together.
  • For the dressing: Whisk together the olive oil, soy sauce, oyster sauce, rice wine vinegar, brown sugar, ginger, sesame oil and garlic in a medium bowl.
  • Pour the dressing over the salad and mix together with tongs or your hands. If the salad seems a little dry, just mix up a little more of the wet ingredients of the dressing and throw it in. It's a very organic process.
  • Transfer to a large platter and serve.

2 serving egg noodles or Alkaline noodles
1/2 English cucumber ( ,peeled and shredded (You can use bean sprout too))
1/2 tbsp. sesame oil
3 tsp. sugar
2 tsp. vinegar
1/2 tbsp. sesame paste
a small pinch of salt
1 tbsp. light soy sauce
1 tbsp. Szechuan style chili oil + a slightly more for drizzling ( ,or as needed)
1 garlic cloves ( ,smashed and finely chopped)
chopped scallion for garnishing
smashed toasted peanuts for garnishing

Steps:

  • Set up a steamer with enough water and bring to a boiling.
  • Spread noodles on a steamer and then steam for 4-5 minutes. Then add a small pinch of salt in the water and then transfer the noodles in the water. Heat until the water boils again.
  • Transfer out and add 1/2 tablespoon f oil immediately (This will help to avoid the noodles being sticky with each other). Stir to mix well. Use chopsticks to stir the noodles up repeatedly to help the noodles cool down quickly. In hot days, you can even resort to an electric fan.
  • Cook the noodles according to the instruction on the package. I recommend you only cook the noodles about until 80% cooked.
  • When the noodles are completely cooled down, add shredded cucumber and all the other seasonings. Mix well and serve cold.
  • Drizzle some chili oil on top, garnish green onion and roasted peanuts.

3 cups broccoli slaw
1 cup thinly sliced red or yellow bell pepper
1/2 cup sliced green onions
1/2 cup chopped cilantro (optional)
1 tablespoon sesame seeds (optional)
1/4 cup reduced sodium soy sauce
2 tablespoons honey (or agave, brown sugar, or maple syrup)
1 tablespoon toasted sesame oil
1 tablespoon rice vinegar
1 teaspoon minced garlic
1 teaspoon grated ginger root
1/2 teaspoon crushed red pepper flakes (optional)

Steps:

  • To prepare the dressing, whisk together the soy sauce, honey, vinegar, sesame oil, garlic, ginger, and crushed red pepper flakes together in a large mixing bowl. Set aside
  • Bring a large pot of water to a rapid boil. Add a large pinch of salt and pasta to the water once boiling. Cook the noodles according to package directions. Once the noodles are cooked, drain well in a colander but do not rinse the noodles.
  • Add the pasta to the large bowl with the prepared dressing and toss to coat. Allow the noodles to cool slightly (10-15 minutes) before adding the vegetables.
  • Add the broccoli slaw, peppers, green onions, and cilantro, if using, to the noodles and toss to combine.
  • Cover and refrigerate for at least 1 hour or up to 8 hours before serving.
  • Before serving, add sesame seeds.

2 cups white or green cabbage (, shredded)
1 1/2 cups shredded carrot ((1 medium carrot))
1 1/2 cups bean sprouts
2 green onions (, finely sliced)
1/2 cup coriander/ cilantro leaves
2 tbsp light soy sauce
2 tbsp rice wine vinegar
1 1/2 tsp sugar
1 1/2 tbsp grapeseed oil ((or any other neutral oil))
1 garlic clove (, minced)
1 birds eye chilli (, finely minced )
Fried Asian Shallots (, to garnish (optional))
Red chilli (, finely sliced)

Steps:

  • Combine dressing ingredients in a jar and shake well to combine. Set aside for 5 minutes for the flavours to infuse.
  • Prepare vermicelli noodles per packet directions (usually soak in warm or boiling water 2 minutes). Drain well then set aside for 10 minutes to drain off exces water. Turn out onto tea towel if necessary to dry more (watery noodles = watery flavour).
  • Combine vermicelli noodles with remaining salad ingredients.
  • Just prior to serving, toss through dressing. Garnish with Fried Asian Shallots if you wish.

7 oz thin vermicelli rice noodles ( - (dried) about 200g; substitute with any thin noodle)
3 cups cucumber ( - julienned; about 2 cucumbers)
3 cups carrots ( - julienned; about 2 medium carrots)
2 ⅓ cups fresh herbs - basil, cilantro, mint, scallions (- packed tightly)
2 jalapeno peppers ( - (optional); cut into thin rounds)
lime wedges ( - (optional); for serving)
crushed peanuts ( - (optional); for garnish)
¼ cup fish sauce (use soy sauce for vegan option)
¼ cup sugar
⅓ cup water
2 Tablespoons lime juice ( - freshly squeezed (about half a lime))
2 teaspoons rice wine vinegar
1 clove garlic ( - minced)
1 small Thai chili pepper ( - (optional) finely diced )

Steps:

  • Rehydrate your noodles by soaking them in boiling water for about 3 minutes or until completely soft. Drain the noodles and set them aside in a colander to drain off excess water.This method works if using thin noodles. Otherwise, follow the directions on the package to cook the noodles. Meanwhile prep the vegetables and herbs.
  • Add all the ingredients for the dressing in a bowl and stir to combine. Taste and adjust according to your preferences. Makes about 1 cup of sauce.
  • Place the noodles in a large bowl and top with the cucumbers, carrots, basil, cilantro, and any other fresh herbs. Add the jalapenos at this time (if using). Add the dressing and toss to combine.

Steps:

  • Cook the soba noodles in a large pot of water according to package directions; drain then rinse with very cold water, drain again.
  • Cut the noodles into about 3 to 4-inches then place into a large bowl.
  • Add in grated carrots and green onions; set aside.

  • In a medium bowl combine, sesame oil, vinegar, soy sauce, hot chili oil, hoisin and extra-virgin olive oil. Mix thoroughly and then combine prepared vegetables and noodles.
  • Garnish with sesame seeds and peanuts.
