CHICKEN & GREEN MANGO THAI SALAD

Number Of Ingredients 24

1 handful of unsalted peanuts
2 x 300 g free-range chicken breasts
1-2 carrots
1 cucumber
1 green mango
1 bunch of fresh mint
1 small red onion
2 spring onions
1 handful of ripe plum or cherry tomatoes
optional:
1 handful of beansprouts
optional:
1 handful of deep-fried beancurd
optional:
a few sprigs of fresh coriander
optional:
1 fresh red chilli
DRESSING
2 tablespoons fish sauce
3 tablespoons rice wine vinegar
1 lime
2 tablespoons palm sugar
1 clove of garlic
1-2 fresh red or green Bird's Eye chillies

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Place the peanuts on a tray, then place in the oven to roast until golden.
  • For the dressing, mix the fish sauce, rice wine vinegar and 2 tablespoons of lime juice in a small bowl. Grate in the palm sugar, stirring, until completely dissolved (you might need to muddle some of the larger bits).
  • Peel and finely chop the garlic, deseed and finely chop the chilli, then add to the bowl. Taste to make sure the flavours are balanced: it should be zesty, sweet and fresh, with depth from the fish sauce.
  • Place the chicken in a deep pan, cover with water and bring to the boil. Reduce the heat and simmer for 10 to 15 minutes, or until cooked through.
  • Coarsely grate or cut the carrots into matchsticks, then halve, deseed and thinly slice the cucumber on an angle. Peel and finely grate or cut the mango into matchsticks, then pick and roughly chop the mint leaves.
  • Peel and cut the onion into fine wedges, trim and finely dice the spring onions, then halve the tomatoes.
  • Crush the roasted peanuts in a pestle and mortar.
  • Transfer the cooked chicken to a bowl of iced water to cool, then drain and shred the meat and place in a large bowl.
  • Add the chopped vegetables, beansprouts and beancurd (if using) to the bowl with the chicken and toss to combine.
  • Divide among serving plates and drizzle lightly with the dressing. Sprinkle over the peanuts, then tear over the coriander leaves and serve with finely sliced red chilli, if you like.

1 tbsp Oil
1.5 pounds Chicken breast (Cut into small 1 inch cubes)
Salt (To taste)
Pepper (To taste)
1/4 cup Onion (Finely chopped)
1 clove Garlic (Finely minced)
1.5 tsp Ginger powder
2/3 cup Chicken broth (Low sodium)
2 tbsp Honey
2 tbsp Soy sauce
1 tbsp Vinegar
1/4 tsp Red chili flakes (Optional)
1 small Green pepper (Thinly sliced)
1 cup Mango (Cut into small 1 inch pieces)
1 tbsp Cornstarch (Dissolved in 2 tbsp water)

Steps:

  • Heat butter and oil in a large nonstick pot or pan over medium high heat.
  • Add chicken and sprinkle salt and pepper. Saute until golden brown. It does not have to be fully cooked.
  • Add onion, garlic and saute for 1-2 minutes until fragrant.
  • Add broth, honey, soy sauce, vinegar, red chili flakes and mix everything together.
  • Add green peppers and half the mangoes and let it all simmer for 1-2 minutes.
  • Pour the dissolved cornstarch and continue cooking, uncovered, until sauce thickens to your desired consistency.
  • Mix in the remaining mangoes and garnish with thinly sliced green onions, if you like. Enjoy!

1 bunch spring onions
a small nugget of root ginger
1 garlic clove
1 ripe mango
450g boneless skinless chicken breast
4 tbsp vegetable oil
350g bag fresh stir-fry vegetables
3 tbsp soy sauce
1 tbsp sweet chilli sauce
rice or noodles, to serve

Steps:

  • Trim the roots and tops off the spring onions and slice diagonally. Peel and grate the ginger and crush or finely chop the garlic. Cut the mango lengthways on either side of the stone, then peel off the skin and chop the flesh into cubes. Slice the chicken into thin strips.
  • Heat half the oil in a large frying pan or wok. Add the chicken and stir-fry for 4-5 minutes until lightly coloured. Remove from the pan with a slotted spoon and transfer to a plate. Heat the remaining oil in the pan and add the spring onions, ginger and garlic. Stir-fry for 30 seconds, then add the mango and vegetables and stir-fry for a further 1 minute.
  • Return the chicken to the pan and splash in the soy and chilli sauces. Stir until evenly mixed, then cover and cook for a further 2 minutes until the chicken is tender and the veggies are slightly softened.

This is an old "Canadian Living" Recipe that has become a family favourite. We all love it, and sometimes I increase the amount of curry paste, depending on who is coming for supper! I normally make it with a pot of rice and a salad. It's a nice "different" dish when you have company. Everyone seems to love it!

1 lb boneless skinless chicken breast (4 breasts)
1 red pepper
1 yellow pepper
1 green pepper
3 green onions
2 mangoes
2/3 cup chicken stock
3 tablespoons sugar
2 tablespoons soy sauce
2 tablespoons rice vinegar or 2 tablespoons cider vinegar
4 teaspoons curry paste
4 teaspoons cornstarch
4 teaspoons vegetable oil
1 tablespoon minced gingerroot
1/4 cup cashews (optional)

Steps:

  • Cut chicken into three 4 inch pieces.
  • Seed, core and cut peppers into 1-inch pieces.
  • Slice onions into 1 1/2-inch lengths.
  • Peel and pit mangoes and cut into 2/3-inch pieces.
  • Whisk together stock, sugar, soy sauce, vinegar, cornstarch and curry paste.
  • In wok or skillet heat half of the oil over high heat; stir fry chicken for 4 minutes or until no longer pink inside.
  • Transfer to plate.
  • Add remaining oil to wok; stir-fry peppers for 2 minutes.
  • Stir in ginger, cook for 30 seconds.
  • Add stock mixture and chicken, cook stirring for 2 minutes or until sauce is thickened and chicken is hot.
  • Stir in onions and mango.
  • Sprinkle with cashews (if using).

1 green bell pepper (cored, seeded and thinly sliced)

2 teaspoons minced ginger
2/3 cup chicken broth

Steps:

  • Heat the oil in a large pan over medium high heat.
  • Place the chicken in the pan in a single layer. Season with salt and pepper. You may need to cook the chicken in batches.
  • Cook the chicken for 4-6 minutes or until browned and cooked through. Repeat the process with any remaining chicken.
  • Add the peppers to the pan with the chicken and cook for 3-4 minutes or until softened.
  • Add the garlic and ginger to the pan and cook for 1 minute.
  • In a small bowl, whisk together the chicken broth, sugar, soy sauce, rice vinegar and cornstarch.
  • Pour the chicken broth mixture over the chicken and vegetables and bring to a simmer.
  • Cook for 1-2 minutes or until sauce has just thickened.

3 to 4 pounds chicken drumsticks,bone-in (about 8 pieces (or use other chicken cutlets with bone) )
1 Tablespoon lemon juice
2 cloves garlic (crushed)
1/4 cup light soy sauce
1 teaspoon sea salt
1 teaspoon freshly ground black pepper powder
1 teaspoon paprika powder
2 tablespoons vegetable oil
1/2 cup mango chutney (homemade or store-bought)
3 Tablespoons melted butter (unsalted)
1/2 piece red onion (chopped )
boiled rice and green salad for serving

Steps:

  • In a large bowl, place the chicken drumsticks (or chicken pieces preferred, bone-in). Add the rest of the marinade ingredients: lemon juice, crushed garlic, Tamari (or light soy sauce), sea salt, ground black pepper powder, paprika powder, red onions. Let the chicken pieces soak in the marinade for at least an hour.
  • Preheat oven to 350 F. Prepare a large, shallow baking pan. Spray the insides of the pan and line with parchment paper. Arrange the chicken pieces in a single layer. Roast chicken pieces for about 35 minutes.
  • Separately, in a small bowl, mix the mango chutney with cooking oil, melted butter. Halfway through the chicken's baking time, brush the mango chutney mix over the chicken pieces till all are covered with the mixture.
  • Continue cooking the chicken with the chutney sauce for about 20 to 25 minutes more, till meat is cooked thoroughly. The chicken pieces will turn golden brown and will be crusty on the exterior. Pierce thickest part of the chicken with a fork. If juices that flow are clear, chicken is done.
  • Serve with rice and salad greens.
  • Cook's comments: if there is no time to make the mango chutney from scratch like I did here, you can use store-bought mango chutney. If using store-bought or commercial ones, taste the mango chutney first before cooking. Some ready made ones are spicy and so you have to adjust seasonings if the spice level is too much for you.

2 chicken breasts
1 mango
1 lime
1 fresh jalapeno pepper
2 fresh garlic cloves
1 tablespoon crystallized ginger
4 tablespoons fresh cilantro
2 tablespoons malt vinegar
1 teaspoon white wine vinegar
2 tablespoons olive oil
1 teaspoon sea salt
ground black pepper

Steps:

  • Trim and butterfly chicken breasts. Salt and pepper to taste.
  • At this point you can either grill the chicken breasts or cook in a medium skillet over medium-high with a small amount of olive oil. The chicken will need to cooked long enough that juices run clear. You'll prepare the mango mixture while the chicken cooks.
  • Squeeze juice from lime into small dish and combine with vinegars.
  • Finely chop cilantro and add to lime juice/vinegar mixture. Add the crystallized ginger and salt and set aside.
  • Peel and dice mango into a bowl. Set aside.
  • Remove the seeds from the jalapeno, and finally chop 1/2. Add to the mango. You can chop and use the remainder for a spicier dish.
  • In a small skillet, heat a small amount of olive oil over medium heat.
  • While the oil heats, mince garlic and then saute in oil for 1-2 minutes.
  • Add the mango/jalapeno mixture to the garlic/oil and heat for 3 minutes over medium.
  • Add the lime/vinegar/ginger to the skillet. Reduce heat to medium-low and continue to cook for 3 more minutes, stirring constantly. The mixture should thicken from the sugar in the mango. If the chicken is still not ready, keep the mixture warm over low heat.
  • Spoon the mango mixture over the cooked chicken breast and serve.

1 cup jasmine rice
1 tbsp sesame oil
2 tbsp lime juice, fresh
4 cloves garlic, minced
½ cup onions, minced
1 red pepper, cut into strips
2 mangoes, peeled, diced
½ cup cilantro, fresh, minced
2 tbsp low-sodium soy sauce
1 red hot chile pepper, minced
½ cup Thai sweet chilli sauce
2 tbsp ginger, fresh, minced
½ cup water
4 cups mixed salad greens
¼ cup cashews, dry roasted

Steps:

  • Cook jasmine rice in unsalted water according to package instructions.
  • Sauté chicken in a non-stick skillet with the sesame oil, half (2 cloves) of the minced garlic and half (1 Tbsp / 5 mL) of the fresh lime juice. When chicken is browned, push to the side of the pan.
  • Stir in onion and sweet red pepper. Sauté 3-5 minutes in skillet until onion is translucent. Add one diced mango and minced cilantro.
  • Purée other mango with remaining lime juice and minced garlic, soy sauce, red chili, Thai sweet chili sauce, ginger, and water.
  • Add puréed sauce ingredients to stir-fry and stir until well mixed. Bring to a boil. Serve immediately.
  • Arrange mixed greens around the edge of each of four plates. Serve mango chicken with a scoop of cooked jasmine rice. Garnish each plate with some of the roasted whole cashews.
