SPICY ASIAN CHICKEN AND NOODLE CASSEROLE

Steps:
- Heat oven to 350°. Spray 2-quart casserole with cooking spray.
- Cook peanut sauce, broth, peanut butter, frozen vegetables and stir-fry noodles in 3-quart saucepan over medium-high heat 5 to 7 minutes, stirring frequently, until hot. Stir in chicken. Spoon into casserole.
- Mix chow mein noodles and peanuts; sprinkle over chicken mixture. Bake uncovered about 30 minutes or until mixture is hot. Let stand 5 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Stir beef, mushroom soup, celery soup, water chestnuts, celery, water, Monterey Jack cheese, almonds, mushrooms, soy sauce, and black pepper together in the prepared baking dish. Cover dish with aluminum foil.
- Bake in preheated oven for 45 minutes. Remove aluminum foil and sprinkle chow mein noodles over the top of the casserole. Continue baking until the casserole browns around the edges, about 30 minutes more.

- 1. In a large skillet brown ground beef and onion and drain off access grease if necessary. Lean ground beef will not have grease.
- 2. In a large mixing bowl combine ground beef and all other ingredients except chow mein noodles.
- 3. Pour mixture into large casserole dish or oblong baking bakeware sprayed with non-stick cooking spray. Cover with foil.
- 4. Bake for 50 min at 350 degrees.
- 5. Remove from oven and top with chow mein noodles.
- 6. Return to oven for additional 10 minutes or until noodles are warm and slightly browned. Variations on this recipe would include using brown rice rather than white and instead of ground beef substitute chicken.

- 1. brown hamburger in skillet, drain and set aside
- 2. In large casserole dish, mix together the soups, onions, celery and soy sauce and mushrooms
- 3. Add meat to the soup mixture, mix well . Add the water and rice.

- Add remaining ingredients- Mix together.
