CHINESE SPAGHETTI BOLOGNESE
Did you just read that right? Chinese Spaghetti Bolognese? Yep, Chinese Spaghetti Bolognese, ground beef in a delicious and silky Chinese-style brown sauce. Fusion food at its absolute best.

Steps:
- Bring a pot of salted water to a boil for the spaghetti. Cook the spaghetti according to the package instructions, undercooking it by about a minute (it will finish cooking in the sauce). While the pasta is cooking, start the sauce.
- Heat a wok over high heat and add a tablespoon of oil. Add the ground beef and cook until slightly browned, breaking up any large chunks of beef. Add the onion, garlic, and Shaoxing wine, and turn the heat down to medium. Cook until the onion is transparent, and then add the chicken stock.
- Bring to a boil and lower the heat to a simmer. Stir in the oyster and soy sauces, sesame oil, and white pepper. Cover and simmer for 10 minutes. Remove the cover, add the peas, and stir for one minute.
- Stir up the cornstarch slurry (since the starch will separate from the water when left to sit), and drizzle the slurry into the sauce while stirring constantly. The sauce should thicken until it coats a spoon.
- Drain the pasta, and add it directly to the wok. Toss until the pasta is coated in sauce. Feel free to add some of the pasta cooking liquid if the sauce is too thick, and add more cornstarch slurry if the sauce is too thin. Serve!

An easy baked pasta dish. Great for potluck dinners. Freezes well.

- Cook and drain spaghetti. Stir in margarine, parmesan cheese and eggs, while spaghetti is hot. Form spaghetti mixture into a crust in a buttered 10 inch pie plate.
- Preheat oven to 350 degrees F (175 degrees C).
- In a skillet cook the beef, onion, green pepper and garlic. Drain off the fat and stir in the undrained tomatoes, tomato paste, sugar and oregano. Heat through.
- Spread cottage cheese over the spaghetti crust then pour in the beef and tomato mixture.
- Bake at 350 degrees F (175 degrees C) for 20 minutes. Sprinkle mozzarella cheese over the top of the pie then bake for 5 minutes longer, until cheese melts.

BEEFY CHEESY SPAGHETTI PIE

- 1. Preheat the oven to 425 degrees F. Heat 1 tablespoon oil in a medium nonstick skillet over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes. Add the beef and cook, breaking up the meat with a wooden spoon, until browned. Drain off any excess fat. Add the tomatoes and bring to a simmer. Stir in the heavy cream and season with 1 teaspoon salt and some pepper. Transfer to a bowl and reserve skillet.
- 2. Add the cooked spaghetti to the beef mixture and toss well. Beat the eggs and add to the pasta along with the mozzarella and Parmesan cheese. Toss well to combine.
- 3. Wipe out the skillet and heat the 1 tablespoon remaining oil over high heat. Add the spaghetti mixture and lightly press down. Cook until the bottom sets, about 5 minutes.
- 4. Transfer the skillet to the oven. Bake until set in the center and crispy around the edges, about 15 minutes. Let stand at least 5 minutes. Scatter with torn basil leaves and serve warm or at room temperature.

SPICED BEEF PIE

- Preheat the oven to 400 degrees F. Grease an 8-inch cake pan with cooking spray and set aside.
- Heat the oil in a large skillet over medium-high heat. Add the carrots, onions and a pinch of salt and cook, stirring, until the onions are soft and translucent, 5 to 7 minutes. Add the beef, sprinkle it with the cumin, cinnamon, Aleppo pepper, allspice, 1 teaspoon salt and a few turns of black pepper and cook, breaking up the beef with a spoon or spatula, until it is fully cooked and no longer pink, 8 to 10 minutes. Taste and adjust the seasoning as desired.
- Soak the matzo in warm water for a few minutes until it has softened. Line the bottom and sides of the prepared cake pan with the matzo pieces, breaking it up as needed and packing it down firmly. It will look a little rustic which is ok. Use a paper towel to blot away excess moisture once the matzo is in the pan, then pour in the beef mixture and pack it down firmly. Cover the top with soaked matzo, pressing the edges to seal, and then brush it with a healthy coating of egg wash. Bake until browned, about 30 minutes.
- Let cool in the pan on a rack for 10 minutes, then invert onto a plate. Top with parsley or micro greens and serve.

- Heat 2 tbsp oil in wok to 275°F.
- Stir-fry ginger and scallion 1 minute.
- Turn up heat to 425F, and add the meat.
- Stir-fry 3 minutes.
- Add sherry and soy sauce.
- Cook 1 minute, and remove from wok.
- Heat 2 tbsp oil in wok to 275°F.
- Add bean sauce, hoisin sauce, and sugar.
- Stir-fry 2 minutes.
- Add chili paste, water chestnuts, preserved vegetables, mushrooms, and bamboo.
- Stir-fry 2 minutes.
- Add pork and chicken stock.
- Cook 5 minutes at 250°F.
- Put noodles into boiling water, and cook uncovered 3-5 minutes.
- Drain, and rinse with cold water, then with hot water.
- Mix with sesame seed oil.
- Arrange noodles on platter, and pour meat mixture over them.
- Serve in individual bowls, adding 1 tsp soy sauce& 1 tsp sesame seed oil to each bowl.

- Heat 1 tbsp of the oil in a large flameproof casserole, then cook the onion and garlic over a medium heat for a few minutes until starting to soften. Remove with a slotted spoon and set aside. Turn up the heat and add the remaining oil to the casserole. Brown the meat all over, in batches, over a high heat for a few minutes, then remove from the pan and set aside.
- Finely crush the Szechuan peppercorns in a pestle and mortar, then add the flour. Cook the spiced flour in the casserole for a few seconds. Return the meat and onions to the dish and toss everything together.
- Add the remaining ingredients to the casserole, then cover with 400ml water. Bring to a simmer, then cook, covered, over a very low heat for 1½ hours until the meat is tender and the sauce is thickened and glossy. Remove from the heat and cool.
- Meanwhile, make the pastry. Mix the flour with a good pinch of salt in a bowl, then add the butter. Use your fingertips to rub the butter into the flour until the mixture resembles fine breadcrumbs. Slowly add ice-cold water, 1 tbsp at a time, stirring it in with a round-bladed knife, until the dough just sticks together. Turn it out onto a lightly floured surface and knead lightly into a ball. Wrap in cling film and chill in the fridge for at least 15 minutes.
