SOY COFFEE CREAMER
If you prefer soy milk, here's a delicious way to flavor your morning coffee.

Steps:
- In a blender, blend together the soy milk and xanthan gum until well combined.
- Blend in the extracts and honey.
- Pour into a glass storage container and store in the fridge.
- POSSIBLE EXTRACTS: raspberry extract, almond extract, orange extract, rum extract or extra vanilla extract.
- Note: I'm partial to strong flavors. So you may want to start with a smaller amount of extracts and add to taste.

DAIRY-FREE COFFEE CREAMER (PALEO)
If you prefer a sweeter creamer, than simply add extra date syrup. Prefer it a bit more creamy? Substitute some of the milk with coconut cream. The creamer keeps for about 10 days in the refrigerator.?

Steps:
- Whisk together coconut milk and date syrup in a medium saucepan over medium heat. Cut vanilla bean in half, and scrape out seeds. Add seeds and vanilla bean to milk mixture. Turn off heat, cover the pot and steep for 30 minutes. After mixture has steeped, strain through a fine mesh sieve, pour into a glass bottle and store in the refrigerator. (If you don't have a vanilla bean on hand, simply replace it with 1 tablespoon of vanilla extract)
- For the date syrup: Place dates in a blender or food processor. Turn blender or processor on and slowly add in hot water. Leave the machine on for about 1 minute, until smooth. Pour into a glass jar and store in the refrigerator.

- It’s important to soak the almonds (or cashews) to soften them, reduce phytic acid, and make a creamier, easier-to-digest nut milk. We prefer soaking overnight, covered in cool water with a pinch of salt (optional) — or covered in very hot water with a pinch of salt for 1 hour if you’re in a hurry.
- Once soaked, drain and rinse almonds and transfer to a high-speed blender along with 2 cups filtered water (for creamer, I like a ratio of 1 part nuts : 2 parts water), 1 pitted medjool date (more for sweeter nut milk), and vanilla extract.
- Blend on high for ~1 minute or until creamy and smooth. Then place a nut milk bag (or drape a clean towel or t-shirt) over a large mixing bowl and pour through the nut milk bag. Gather the edges securely and squeeze firmly until all of the liquid has been extracted and the pulp is left behind. You can either compost the pulp, make it into almond meal, or find some more creative uses for it here.
- Store almond creamer covered in the refrigerator up to 4-5 days, or in the freezer up to 1 month. Perfect for use in hot or iced coffee, matcha, or tea.
