I have been baking with Bob's Red Mill® organic whole wheat pastry flour for some time. I could never get my banana bread recipe right, until now. This is wonderful, easy, and best of all, I make it in my bread machine!

3 over-ripe bananas, mashed
2 eggs
3 tablespoons canola oil
1 teaspoon ground cinnamon
2 cups whole wheat pastry flour
1 cup chopped walnuts
½ cup dark chocolate chunks
¾ cup white sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon vanilla extract

Steps:

  • Combine bananas, eggs, canola oil, and cinnamon in a bread machine; add flour, walnuts, chocolate, sugar, baking powder, baking soda, and vanilla extract.
  • Follow manufacturer's instructions for 'quick bread' setting.

  • Weigh your flours; or measure them by gently spooning into a cup, then sweeping off any excess. Mix the flours, baking soda, baking powder, salt, cinnamon, and chopped walnuts into the banana mixture. Scrape the bottom and sides of the bowl and mix again to thoroughly combine the ingredients.
  • Scoop the batter into the prepared pan. Mix together the sugar and cinnamon, and sprinkle over the batter.
