Healthy Green Juice image

Great healthy drink for detoxing after the holidays or whenever you have overdone it. Worth it to buy the organic celery, even if you buy conventional for everything else. Adjust fruit and veggie amounts to suit your personal taste. More apple equals a sweeter drink. Store any extra in a glass jar in the fridge for up to a day. Shake before drinking.

4 stalks celery, leaves removed

6 leaves kale
½ lemon, peeled

If organic produce is not available in your area, make sure to wash the ingredients well before using, to remove any residual pesticides.

Half a pineapple (including core), peeled
1 medium fennel bulb, trimmed
1 large organic green apple with skin, cored
1 organic lemon with skin
1 organic lime with skin
1 2-inch piece organic ginger with skin
1 small bunch kale, to yield about 3 packed cups
1/3 cup packed cilantro

Steps:

  • Using an electric juicer, process all ingredients in a single container.
  • Mix well. Serve immediately or refrigerate until chilled.

  • Rinse and dry your produce. Then prep for the juicer. Our Hurom instructions recommend chopping vegetables into pieces small enough to fit easily down the chute. They also recommend peeling all citrus fruits as they can be difficult for the machine to process, which inhibits them from being fully juiced.
  • Turn your machine on and run all ingredients through the juicer, using your tamper as needed. We recommend starting with celery, then cucumber, then herbs, then greens, and finishing with ginger, apple, and lemon. The apples and lemons seem to make a final pass through the juicer and push out any stubborn remnants that may have gotten lodged or stuck.
  • Enjoy immediately or transfer to a jar, seal well, and refrigerate up to 24 to 48 hours. Nutrients are most potent when consumed as soon after juicing as possible. Not freezer friendly.
