1 cup chocolate chips (dark or milk-dark my choice)
1 cup roasted hazelnuts
1 cup roasted walnut
1 cup roasted pepitas
1 cup roasted whole almond
1 cup roasted sunflower seeds
1 cup dried peaches, cut into small pieces
1 cup raisins
1 cup dried cranberries

Steps:

  • Note: all ingredient amounts are estimated. Please feel free to adjust the proportions to your preference. The ingredient's list is merely a basic guideline.
  • In a large bowl combine all ingredients and mix well.
  • Transfer to an airtight container.
  • Prep time does not include roasting the seeds/nuts.

7 ounces dried fruit, approximately 3 cups
5 ounces mixed nuts, approximately 1 cup
3 1/2 ounces granola, approximately 1 cup

Steps:

  • Combine the fruit, nuts and granola in a large bowl. To store trail mix, place in an airtight glass container. Keep container in a cool dry place for up to 1 month.
  • Cook's Note: Fruit dried at home should be pliable, but not sticky and you should not be able to squeeze moisture from it. If the mixture becomes soft overnight, your fruit is not dry enough.

1 (14 1/3 ounce) can chili with beef and beans (I use stagg silverado beef)
1 (7 1/4 ounce) box Kraft macaroni and cheese

Steps:

  • Prepare the Macoroni and Cheese as directed by the box, in a large saucepan.
  • Add the can of Campbell's Tomato Soup and Stagg Silverado beef chili to the sauce pan full of the prepared Macoroni and Cheese. Mix together until chili and tomato soup are warm.
  • Then eat and enjoy.

I was determined to make a tasty, guilt-free cookie and I am very pleased with how these turned out. They're not very sweet but have a subtle flavor of applesauce and cinnamon mixed in with chocolate chips, nuts, and dried cranberries.

½ cup applesauce
½ cup white sugar
½ cup brown sugar
1 ½ teaspoons vanilla extract
2 egg whites
1 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¾ teaspoon ground cinnamon
1 ¼ cups quick cooking oats
½ cup semisweet chocolate chips
½ cup chopped walnuts
⅓ cup dried cranberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
  • Beat applesauce, white sugar, brown sugar, and vanilla in a large bowl. In another bowl, use an electric mixer to beat egg whites until they are frothy and begin to firm up. Fold egg whites into applesauce mixture. Combine the flour, baking soda, salt, and cinnamon. Fold into the egg mixture. Stir in the oats, chocolate chips, walnuts, and cranberries. Drop by heaping teaspoons on prepared baking sheets.
  • Bake cookies in preheated oven until set and lightly browned, about 10 minutes. Remove immediately to wire racks to cool.
