Creamy Orecchiette Pasta with Italian Sausage and Broccolini image

Little ear pasta, also known as orecchiette, in a creamy sauce with Italian sausage and broccolini. Serve with a salad and garlic bread for a hearty Puglia-style supper. Serve with salad, bread, and your favorite Italian red wine.

12 ounces orecchiette pasta
1 tablespoon olive oil
1 pound ground Italian sausage
¼ cup diced green bell pepper
½ cup diced green onion
1 bunch broccolini, sliced into 1-inch pieces
2 cloves garlic, minced
½ cup butter
1 ½ cups half-and-half
6 ounces freshly grated Parmesan cheese
4 ounces cream cheese
1 teaspoon Italian seasoning
1 teaspoon salt
freshly ground black pepper to taste

Steps:

  • Bring a large pot of salted water to a boil. Add 1 tablespoon olive oil and orecchiette and cook, stirring occasionally, until tender yet firm to the bite, 8 to 10 minutes. Drain and set aside.
  • Meanwhile, heat a large (10-inch) skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard most of the fat. Transfer cooked sausage to a bowl and return skillet to medium-high heat.
  • Add bell pepper and green onion to the skillet. Saute until white of onion becomes translucent, about 5 minutes. Add broccolini and garlic; saute until broccolini is crisp-tender, about 3 minutes more. Set vegetables aside.
  • Melt butter in a larger skillet over medium heat. Add half-and-half and Parmesan cheese, stirring constantly until bubbly, about 5 minutes. Add cream cheese, Italian seasoning, salt, and pepper. Cook until sauce begins to thicken, about 5 minutes more.
  • Add cooked sausage and vegetables to the skillet. Stir in drained pasta. Serve immediately.

We've updated this classic pasta dish with a simple one-pot preparation and a welcome dose of lemon. Orecchiette is an underused short pasta that's named for its resemblance to the shape of a small ear. Cooking the pasta in chicken broth adds savory depth-you will taste the difference in every bite. Grape tomatoes are optional, but they do add a wonderful burst of color and fresh flavor to this dish. You can cook them with the sausage to soften them a little, if you like. For a milder meal, feel free to omit the red pepper flakes and use regular mild Italian turkey sausage.

This One Pot Orecchiette with Sausage and Broccolini (or broccoli, or broccoli rabe) is an easy weeknight recipe packed with Italian flavor!

1 lb. ground Italian sausage (sweet or hot, casings removed if in links)
1 onion (diced)
2 cloves garlic (minced)
1/4 teaspoon crushed red pepper (optional, for spice (omit if using hot sausage))
2.5 cups chicken broth (preferably low sodium, or vegetable broth, or water)
8 oz. orecchiette (or other preferred pasta shape/kind)
1/2 teaspoon kosher salt (more if needed)
1 lb. broccolini (cut into 1/2" pieces, (or broccoli, fresh or frozen, or broccoli rabe))
grated parmesan, chopped parsley, and fresh cracked black pepper (for serving (optional))

Steps:

  • Add the sausage (1 lb.) and onions to a large, deep skillet, pot, or Dutch Oven with a lid (make sure it's big enough to add the pasta in later!). Cook over medium high heat until the sausage has browned and the onions have softened, breaking up the sausage with a wooden spoon as it cooks, about 5 minutes.
  • Turn the heat down to medium and add the minced garlic (2 cloves) and crushed red pepper (1/4 teaspoon) if using. Sauté for 1-2 minutes, until garlic is fragrant. If you find that some of the sausage has stuck to the bottom of the pan, add 2-4 tablespoons of water, chicken broth, or white wine to the skillet, using a wooden spoon to help dislodge any stuck-on bits.
  • Add chicken broth (2.5 cups) and bring to a boil. Add the pasta, along with 1/2 teaspoon kosher salt (if using water, use 1 full teaspoon, and if using a chicken broth with lots of sodium, omit entirely).
  • Stir, turn heat down to low, cover, and simmer for 12 minutes (at this point, the pasta won't be entirely cooked yet). Add the broccoli, stir, cover, and simmer for another 3-5 minutes, until pasta is fully cooked and broccoli has softened and turned a bright green. (If it seems a little "soupy" but the pasta is fully cooked, I recommend letting it sit uncovered for 5-10 minutes to allow it to cool, thicken, and the steam to evaporate a bit.)
  • Serve with fresh grated parmesan cheese, chopped parsley, fresh cracked black pepper, and a little more crushed red pepper if desired.

1 pound orecchiette
5 tablespoons extra virgin olive oil, divided
1 pound sweet or spicy Italian sausage, removed from casings
3 garlic cloves, minced
1 cup chicken broth
1 pound broccoli florets
½ teaspoon salt
¼ teaspoon red pepper flakes
3 tablespoons unsalted butter
½ cup freshly grated pecorino Romano

Steps:

  • Bring a large pot of salted water to a boil. Add the orecchiette and cook according to package instructions.
  • Meanwhile, in a large skillet, heat 1 tablespoon of the olive oil over medium high heat. Crumble the sausage into the skillet and cook, breaking apart with a spoon, until lightly browned, 5-6 minutes. Reduce the heat to medium and add the garlic; cook for 1 minute more.
  • Add the remaining 4 tablespoons of olive oil, chicken broth, broccoli, salt and red pepper flakes. Cook, stirring frequently and scraping the bottom of the pan to release the flavorful brown bits, until the broccoli is tender-crisp, 3-4 minutes. Stir in the butter until melted and simmer for a few minutes to reduce and concentrate the sauce.
  • Drain the pasta well and place back in the pasta pot. Add the sausage and broccoli mixture, along with half of the cheese, and toss to blend. Taste and adjust seasoning. Transfer to a serving platter or individual bowls and pass the remaining grated cheese at the table.
  • Freezer-Friendly Instructions: This dish can be frozen for up to 3 months and reheated on the stovetop. If the dish has dried out a bit in the freezer, add a little water or broth while reheating. Just take care only to reheat it and not continue to cook it.

1 lb hot Italian sausage, casings removed
1 (10 ounce) package white mushrooms or 1 (10 ounce) package brown button mushrooms, sliced
1/2 cup dry white wine
1/4 teaspoon black pepper
2 cups loosely packed basil leaves, torn up
1/2 cup parmesan cheese, grated

Steps:

  • Bring a large pot of lightly salted water to a boil; cook pasta as package directs.
  • Drain, reserving 1/4 cup cooking water.
  • Meanwhile, cook sausage in a 12-inch skillet over medium-high heat for 5 minutes, or until no longer pink.
  • If necessary, break large pieces apart with a wooden spoon.
  • Add mushrooms and cook an additional 5 minutes.
  • Pour in wine, reserved pasta water and black pepper.
  • Stir in basil.
  • Remove from heat; toss with pasta and cheese.
  • Note: For perfect pasta every time, for 1 pound of dried pasta, bring at least 6 quarts of salted water to a boil.
  • Add all of the pasta.
  • With wooden spoon, stir once or twice to prevent sticking.
  • Check at suggested time; if cooked properly, there will be no white inside.

1 pound of sweet Italian sausage
1 bunch of broccoli rabe
1/4 cup extra-virgin olive oil
3 large garlic cloves, sliced thin
salt & pepper to taste
1 pound orecchiette pasta
grated parmagiano-reggiano cheese for serving

Steps:

  • Remove the sausage from the casing and crumble into small pieces.
  • Wash the broccoli rabe under cold water and pat dry with paper towels. Cut off and discard about one inch off bottom of stems. Cut remaining broccoli rabe with leaves into about 2 inch pieces.
  • Bring a large pot of liberally salted water to a boil.
  • In a large saute pan or skillet, heat the olive oil over medium-high heat. Add the crumbled sausage and cook stirring and breaking up the sausage until cooked through and lightly browned.
  • Using a slotted spoon remove the cooked sausage from the pan and set aside, leaving as much oil behind as possible to saute the garlic and broccoli rabe in, if needed add an extra tablespoon of olive oil.
  • Drop the broccoli rabe into to the pot of boiling water.
  • At the same time add the garlic to the saute pan and cook until lightly browned, about 1-2 minutes.
  • Immediately remove the broccoli rabe from the pot using a mesh strainer or tongs (do not strain the whole pot, because you will be cooking the pasta in the same boiling water), shake excess water out and add to the pan with the garlic. Season with Salt and pepper. Cook stirring until broccoli rabe is tender, 3-5 minutes.
  • Add the sausage back into the pan and toss to combine. Remove pan from the heat.
  • Meanwhile add the orecchiette to the pot of boiling water that the broccoli rabe was cooked in. Cook until pasta is al dente, and strain.
  • Place the pan with the broccoli rabe and sausage back over medium-high heat, and add the oricchiete. Toss together until well combined.
  • Dish out the pasta to warm plates and serve with cheese on the side for sprinkling.

1 lb broccoli crowns, (bottom stalk trimmed and reserved for another use, remaining cut into florets)
Salt and freshly ground black pepper
12 oz. orecchiette pasta
4 Tbsp extra-virgin olive oil, (divided, plus more if desired)
1 1/2 Tbsp minced garlic ((4 cloves))
1 lb Italian sausage* ((can use mild or hot))
2/3 cup (1.6 oz) finely shredded Parmesan, (plus more for serving )
1 1/2 cups reserved pasta water, (divided)
Red pepper flakes, (for serving)

Steps:

  • Add 4 quarts of water to a large pot, bring to a boil over medium-high heat then season with salt (I use 2 Tbsp).
  • Add broccoli to boiling water and cook until tender, about 4 - 5 minutes. Using a spider, remove broccoli and transfer to a colander, while leaving water in pot.
  • Run broccoli under cold water to stop cooking. Drain well. Chop broccoli into smaller pieces.
  • Add pasta to water in pot and boil about 1 minutes shy of al dente, according to time listed on package. Reserve 1 1/2 cups pasta water.
  • While pasta is boiling, heat 1 Tbsp olive oil into a 12-inch non-stick skillet over medium-high heat.
  • Crumble sausage in small chunks into skillet and cook, breaking up and tossing occasionally, until cooked through, about 7 minutes. Add garlic during last 2 minutes of cooking the sausage.
  • Pour in 1 cup of the pasta water into the sausage. Let it simmer for about a minute and reduce slightly. Add all dente pasta and cook while tossing, until tender, about 2 minutes.
  • Drizzle in remaining 3 Tbsp olive oil, season with red pepper flakes to taste and toss.
  • Sprinkle in parmesan, and toss to melt into sauce.
  • Toss in broccoli. Season with salt as needed and pepper to taste.
  • Loosen with more pasta water as needed. Drizzle servings with more olive oil if desired, serve with garnished with more parmesan.

  • Heat oil and stir in garlic in a large saute pan over medium heat. Add the sausages and saute until meat is cooked and loses its raw look. Salt and pepper to taste, and saute one minute. Add the rabe water. Raise heat and cook until sauce is hot. Meanwhile, cook orecchiette in rapidly boiling salted water until al dente. Drain orecchiette. Return drained orecchiette to the pot. Spoon remaining sauce over the top. Sprinkle with Pecorino Romano cheese.

1 pound pork sausage, casings removed
2 cloves garlic, minced
8 ounces broccolini, chopped into 1/2-inch pieces

Steps:

  • Bring a pot of water to a boil; add a generous amount of salt. Add the orecchiette and cook to al dente (take 3 minutes off of the time on the box; it'll finish cooking later). Reserve 1/2 cup of the pasta water, then drain.
  • Heat a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until brown, about 7 minutes. Use a slotted spoon to transfer the sausage to a plate, keeping the fat in the skillet. Add the garlic and cook for 30 seconds. Add the broccolini and cook until crisp-tender, about 7 minutes. Reduce the heat to medium low. Add the pasta and sausage to the skillet along with the Parmesan, lemon zest and juice, a couple of pinches of crushed red pepper and a bunch of turns of black pepper. Stir in a few tablespoons of the pasta water and continue to cook, stirring, until glossy, adding more pasta water if needed. Taste and adjust the seasoning as desired. Sprinkle with more Parmesan before serving.
