CRAB-SPINACH EGG CASSEROLE

I've developed a strong interest in cooking over the years. As a matter of fact, I came up with this casserole as a special breakfast for our daughter when she was home for a visit. -Steve Heaton, Deltona, Florida

8 large eggs
2 cups half-and-half cream
2 cans (6 ounces each) crabmeat, drained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup dry bread crumbs
1 cup shredded Swiss cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground nutmeg
2 celery ribs, chopped
1/2 cup chopped onion
1/2 cup chopped sweet red pepper
3 medium fresh mushrooms, chopped
2 tablespoons butter

Steps:

  • In a large bowl, beat eggs and cream. Stir in the crab, spinach, bread crumbs, cheese, salt, pepper and nutmeg; set aside. In a skillet, saute the celery, onion, red pepper and mushrooms in butter until tender. Add to the spinach mixture., Transfer to a greased shallow 2-1/2-qt. baking dish. Bake, uncovered, at 375° for 30-35 minutes or until a thermometer reads 160°. Let stand for 10 minutes before serving.

1 lb cooked crabmeat (preferably Dungeness lumb crabmeat, picked over for shells and cartilage)
2 tablespoons minced onions
1 3/4 cups grated swiss cheese (or raw-milk cheddar cheese)
1/4 cup freshly grated parmesan cheese
1 tablespoon unbleached all-purpose flour
1 1/2-2 teaspoons Old Bay Seasoning
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup mayonnaise
6 large eggs
1 1/2 cups milk
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce (the white wine variety, if available)
sour cream
minced fresh chives (or whole chives with blossoms, in season)
capers

Steps:

  • Preheat oven to 375°; butter a 9-inch deep dish pie plate.
  • Layer the crab, onion, and cheeses in the dish.
  • In a bowl, mix together the flour, Old Bay seasoning, baking powder, salt, and pepper.
  • Whisk in the mayonnaise and eggs, combining just until uniformly yellow.
  • Add in the milk, mustard, and Worcestershire sauce; stir to combine.
  • Pour over crab mixture; bake 45-50 minutes or until puffed and golden brown.
  • Cool 10 minutes, then slice into wedges or squares; serve warm.
  • Garnish, if desired, with sour cream, chives, and capers.

1 tablespoon vegetable oil
½ cup chopped onions
½ cup chopped celery
1 pound imitation crabmeat
1 (10.5 ounce) can condensed cream of celery soup
½ cup water
2 tablespoons chopped fresh parsley
¼ teaspoon seafood seasoning
¼ teaspoon salt
⅛ teaspoon garlic powder
⅛ teaspoon ground black pepper
1 cup shredded Cheddar cheese
1 cup dry bread crumbs
¼ cup salted butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat oil in a large saucepan over medium heat; stir in onions and celery. Cook and stir until vegetables have softened and are beginning to turn translucent, about 5 minutes.
  • Add crab, condensed soup, water, parsley, seafood seasoning, salt, garlic powder, and pepper; mix to combine. Heat until almost bubbling, about 5 minutes.
  • Remove from the heat and blend in Cheddar cheese until melted. Transfer to a 9-inch square casserole dish.

One 6 1/2-ounce can crabmeat, drained
1 cup mayonnaise
1 cup soft breadcrumbs
3/4 cup half-and-half
6 hard-boiled eggs, finely chopped
1/2 cup chopped onion
1/4 cup sliced stuffed green olives
2 tablespoons chopped fresh parsley
3/4 teaspoon salt
Pinch of pepper
1/2 cup buttered soft breadcrumbs
Olive slices, for garnish

Steps:

  • In a large bowl, break up the crabmeat in chunks. Add the mayonnaise, soft breadcrumbs, half-and-half, eggs, onion, olives, parsley, salt, and pepper, and fold together. Divide the mixture among greased individual bakers or spoon it into a 1-quart casserole dish. Top with the buttered crumbs and bake at 350 degrees for 20 to 25 minutes. Garnish with olive slices.

1 pound crab meat, preferably lump, picked over to remove any remaining shell
1 cup saltine crumbs
1 large stalk celery, finely diced
1 egg, hard-boiled and finely diced
1 egg
1 cup mayonnaise
2 tablespoons prepared mustard
1 tablespoon Worcestershire sauce
Lemon wedges for garnish

Steps:

  • Preheat oven to 375 degrees.
  • Mix all ingredients together, making sure the saltines are blended in well. If the mixture is stiff, add a little more mayonnaise. Pack into a decorative baking dish.
  • Bake for 30 to 35 minutes, until top is golden brown. Serve with lemon wedges on the side.
