ORANGE PORK CHOPS

I'm constantly on the lookout for ways to "spice up" a standard dish. When I fixed these pork chops for the first time, my husband-who has a hearty appetite for down-home cooking-commented, "You can make this anytime!" We have a 5-month-old son, and he's already showing signs he'll take after his dad in the eating department. Our daughters, 6 and 8 , help me with the cooking. So it's a good thing that I have a large recipe collection!

Number Of Ingredients 12

6 pork loin chops (1/2 inch thick)
1 tablespoon vegetable oil
3/4 cup water
1/2 teaspoon paprika
1/2 teaspoon pepper
1-1/4 teaspoons salt, divided
1 medium orange
1/2 cup sugar
1 tablespoon cornstarch
1/2 teaspoon ground cinnamon
12 whole cloves
1 cup fresh orange juice

Steps:

  • In a large skillet, brown chops in oil on both sides. Add water, paprika, pepper and 1 teaspoon salt; bring to a boil. Reduce heat to low; cover and simmer about 35 minutes, turning once. Meanwhile, grate peel from the stem end of the orange, then cut six slices from the other end. Set aside. In a saucepan over medium-high, combine 1 tablespoon peel, sugar, cornstarch, cinnamon, cloves and remaining salt. Stir in juice. Cook and stir until thickened. Add orange slices, cover and remove from the heat. To serve, top chops with sauce and orange slices.

4 (5 ounce) boneless center-cut pork chops, 1/2-inch thick
¼ teaspoon salt
¼ teaspoon cracked black pepper
2 tablespoons I Can't Believe It's Not Butter!® Spread, divided
1 large orange
1 tablespoon chopped fresh sage leaves

Steps:

  • Season chops with salt and cracked black pepper. Melt 1 tablespoon I Can't Believe It's Not Butter!® Spread in large nonstick skillet over medium-high heat and cook chops, turning once, until done, about 8 minutes. Meanwhile, grate 1 teaspoon peel and squeeze 1/4 cup juice from orange. Remove chops to serving platter and keep warm.
  • Melt remaining 1 tablespoon Spread in same skillet over medium-high heat. Add orange juice and bring to a boil, scraping brown bits from bottom of pan. Boil 1 minute or until mixture reduces slightly. Remove from heat and stir in sage and orange peel. Drizzle over chops.

2 boneless pork loin chops (1/2 inch thick)
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon vegetable oil
1/2 cup packed brown sugar
1/2 cup thawed orange juice concentrate
Hot cooked rice

Steps:

  • Sprinkle pork chops with salt and pepper. In a skillet over medium-high heat, brown chops in oil on both sides. Combine brown sugar and orange juice concentrate; pour over the chops. Bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until the meat juices run clear. Serve pork and sauce over rice.

4 -6 pork chops, bone in (about 1/2-inch thick)
2 teaspoons vegetable oil, to taste
1 (11 ounce) can mandarin oranges, drained
1/2 teaspoon ground cloves
fresh ground pepper, to taste
salt, to taste

Steps:

  • In a large skillet, heat oil on medium heat and brown pork chops briefly on both sides (maye 1-2 minutes per side); Do not overcook at this point or they will get tough!
  • Pour oranges on top and sprinkle with cloves and some black pepper & salt to taste.
  • Cover and simmer over low heat until pork chops are cooked through (about 15 min for 4, 25-30 min for 6 ,approx).
  • Cooking time will vary depending upon the size and meatiness of your chops- check early for doneness.
  • Variation: You may substitute a different spice & fruit combo such as canned peach slices with allspice, apricots with nutmeg, pineapple with cloves.
  • You may also substitute skinless boneless chicken breasts for the pork, but the cooking time may be less as chicken dries out quickly.

1 (6 ounce) can frozen orange juice concentrate, thawed
1 ½ cups rum
1 habanero pepper, seeded
4 thick cut boneless pork chops, butterflied
2 tablespoons olive oil

Steps:

  • In a blender or food processor, combine the orange juice, rum and habanero chile pepper and puree until smooth; set aside.
  • In a large skillet over medium high heat, saute the pork chops in the oil for 5 minutes per side, or until well browned.
  • Pour in the orange juice mixture, reduce heat to low, cover and simmer for 30 minutes. Flip chops over and simmer for 30 more minutes.

Finally found the right combination of spices for pork and without fat or carbos! This was great when served with a baked potato, green beans with a little dill and lemon.

4 -6 pork chops
1/2 teaspoon paprika
1 teaspoon rosemary
1 teaspoon thyme
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
1 onion (sliced)
1 tablespoon soy sauce
1 teaspoon Worcestershire sauce

Steps:

  • Add all spices and grind to powder (there will be large pieces in it, that is okay).
  • Lightly dust one side of pork chop.
  • Heat oil in skillet and brown both sides of pork.
  • Lay onion in large baking pan with foil (large enough to create pocket).
  • Cover onion with soy sauce and Worcestershire sauce.
  • Lay browned pork chops on onion and dust with remaining spices.
  • Fold foil to create pouch.
  • Bake at 425°F for 30-35 minutes.
  • Open and serve with onion and sauce!

But I understand if you don't have time, no big deal, just skip this step. Or, if your chops are really thin, don't bother. Grab a big pot. Take the salt and brown sugar, dissolve in 2 cups of hot water. Add cold water and ice cubes to make total of gallon total of brine. Place pork chops in the cooled brine, refrigerate between 1 hour-2 hours. Rinse and pat dry. Season with Tandoori spice and ground pepper (no salt! its salty enough from brine) Note: If you want the chops to be brined for a longer period of time, just use less salt/sugar. Sometimes I put the meat in brine in the morning, go to work and come home to cook. I'll just use half the amount of salt/sugar.
  • In a pan large enough to hold all chops without touching each other, heat over high. Add 1 tablespoon of canola oil. When hot and shimmering, add pork chops to pan. Fry 2 minutes without moving, touching or peeking.
  • Pour out all but 1 tablespoon of the pan drippings (most of it is fat). Place back on stovetop on medium heat. Add onions and cook until golden, soft and totally fragrant, about 3 minutes. Add mushrooms, cook another 2 minutes.
