ORANGES WITH OLIVES, PARSLEY, AND PAPRIKA

Oranges with Olives, Parsley, and Paprika image

Nicoise olives add a delicate saltiness that plays well with the natural sweetness of oranges.

Provided by Martha Stewart

Categories     Quick & Easy Recipes

Number Of Ingredients 6

4 navel oranges
1/4 cup Nicoise olives, pitted and halved
1/2 teaspoon paprika
2 tablespoons freshly squeezed lemon juice
1 tablespoon extra-virgin olive oil
1 1/2 tablespoons finely chopped fresh flat-leaf parsley, plus more leaves for garnish

Steps:

  • Peel oranges: Using a sharp knife, slice off both ends. Carefully slice downward following the curve of the fruit to remove rind and pith. Slice each orange crosswise into about six rounds, arranging them in overlapping rows on a serving plate. Sprinkle with olives.
  • In a small bowl, combine paprika and lemon juice; whisk in oil. Add chopped parsley, and stir to combine. Drizzle dressing over oranges and olives; garnish with parsley leaves, then serve.

ORANGES WITH OLIVES AND PARSLEY

Oranges with Olives and Parsley image

Oranges are the standout in this supremely easy salad, providing hefty amounts of vitamin C and fiber. Olives (and olive oil) add healthful monounsaturated fat.

Yield serves 4

Number Of Ingredients 6

4 navel oranges
1/4 cup Niçoise olives, pitted and halved
1/2 teaspoon paprika
2 tablespoons fresh lemon juice
1 tablespoon extra-virgin olive oil
2 tablespoons finely chopped fresh flat-leaf parsley, plus whole leaves for garnish

Steps:

  • Using a sharp knife, slice off both ends of each orange. Carefully slice downward following the curve of the fruit to remove rind and bitter white pith. Slice each orange crosswise into about six rounds, then arrange them in overlapping rows on a serving platter. Sprinkle evenly with olives.
  • In a small bowl, combine paprika and lemon juice; whisk in oil until emulsified. Add chopped parsley, and whisk to combine. Drizzle dressing over oranges and olives; garnish with parsley leaves, and serve.

ITALIAN ORANGE SLICES

Italian Orange Slices image

This is another healthy, low-calorie, and delicious recipe that has been handed down through the generations in my family. I remember this recipe being served as an appetizer or dessert at nearly every family meal. It was also occasionally made as a breakfast main course.

Provided by Obsidian468

Categories     Dessert

Time 5m

Yield 2 serving(s)

Number Of Ingredients 3

2 navel oranges, ripe, it's best to use fresh picked or 2 organic oranges, though regular store-bought ones work as well
1 teaspoon extra virgin olive oil
1/2 teaspoon black pepper, freshly ground

Steps:

  • Slice orange in half, top to bottom. Then slice each half into 1/4 inch thick slices, leaving rind on. Discard any slices that have more rind than fruit.
  • Arrange slices around the perimeter of a serving dish, slightly overlapping. Alternatively, you can arrange slices on individual serving dishes (luncheon sized), using one orange per dish.
  • Lightly drizzle orange slices with olive oil, and then lightly sprinkle with the ground black pepper.
  • Serve immediately.
  • Note: do not allow the olive oil to soak into oranges. The olive oil is meant to be a subtle flavor in the dish, and not the main flavor. Do not put the olive oil on the dish more than one minute before serving. Most of the oil should be left behind on the dish after eating.

ORANGE AND OLIVE SALAD

Orange and Olive Salad image

Temple oranges are shiny, spongy to the touch and deeply rutted with pores, like a cartoonist's idea of an orange. The temple orange, which arrives at stores in the winter, is worth seeking out. Start with the peel, which is thin and tight to the pulp yet zippers off as cleanly as that of the tangerine. The segments have little pith, and though their skin is delicate, they separate neatly, sparing your shirt. Pop a sector, fat and pulpy, into your mouth, and the thing just bursts. Temples are far juicier than most oranges, with a tarter, more complex taste. This is a recipe, adapted from "Jane Grigson's Fruit Book" (Atheneum, 1982), that showcases their sweetness, set off by bitter greens, salty olives and black pepper.

Time 20m

Yield 6 servings

Number Of Ingredients 6

6 temple oranges
4 tablespoons extra virgin olive oil
1 tablespoon wine vinegar
Salt and pepper
2 medium heads chicory or curly endive
3/4 cup kalamata or oil-cured olives, chopped

Steps:

  • Grate the zest of 2 oranges. Mix it with the oil, vinegar and a bit of salt.
  • Peel the remaining oranges, slice into thin disks (perpendicular to the segment seams) and spread out in a single layer on a large dish. Pour the dressing over them. Grind pepper until it covers them like a thin layer of sand. Leave for 2 hours or longer in a cool place.
  • Separate the chicory or endive leaves, rinse and dry them. Tear them up, place in large salad bowl. Lift the oranges from the dressing and place atop the greens, breaking up the disks into quarters. Sprinkle the olives on top, then a bit of the dressing. Toss lightly, add more dressing to taste and serve immediately.
