2 tbsp vegetable oil
3/4 cup fresh orange juice, strained to remove pulp

Looking for a hearty dinner ready in less than 30 minutes? Glazed with jewel-toned cranberry sauce and orange marmalade kicked up with ginger and red pepper flakes, these pork chops taste as good as they look. Serve with your favorite side dishes for a weeknight meal that's anything but ordinary.

Provided by Chris Salicrup

Categories     Dinner

Time 25m

Yield 4 servings

Number Of Ingredients 10

1 cup cranberry sauce
¼ cup orange marmalade
2 teaspoons extra virgin olive oil
1 teaspoon fresh ginger, grated
½ teaspoon red pepper flakes
2 teaspoons kosher salt, divided
1 teaspoon black pepper, divided
4 bones in pork chops
2 tablespoons canola oil
1 tablespoon fresh parsley, chopped, for garnish

Steps:

  • Preheat the oven to 350°F (180°C).
  • In a medium bowl, mix together the cranberry sauce, orange marmalade, olive oil, ginger, red pepper flakes, 1 teaspoon of salt, and ½ teaspoon of pepper. Set aside.
  • Season the pork chops on both sides with the remaining teaspoon of salt and ½ teaspoon of pepper.
  • Heat the canola oil in a large cast-iron skillet over medium-high heat. When the oil is shimmering, sear the pork chops in batches until golden brown on both sides, about 2 minutes per side. Sear the fat side of the pork chops until lightly browned and some of the fat has rendered, about 1 minute more.
  • Turn off the heat then arrange all of the pork chops in the pan. Spoon the cranberry mixture over the chops, spreading in an even layer.
  • Transfer the pan to the oven and bake for 5-7 minutes, or until the internal temperature reaches 140°F (60°C). Let rest for 5 minutes.
  • Transfer the pork chops to plates and garnish with the parsley. Serve with your favorite sides.
  • Enjoy!

ORANGE PORK CHOPS

Orange Pork Chops image

I'm constantly on the lookout for ways to "spice up" a standard dish. When I fixed these pork chops for the first time, my husband-who has a hearty appetite for down-home cooking-commented, "You can make this anytime!" We have a 5-month-old son, and he's already showing signs he'll take after his dad in the eating department. Our daughters, 6 and 8 , help me with the cooking. So it's a good thing that I have a large recipe collection!

  • Heat a heavy duty stainless steel or carbon steel skillet over medium high heat until hot. Add oil and swirl the pan to coat. Pat dry pork chops again with paper towel. (*Footnote 2) Add pork chops to pan, in two batches if needed. Cook each side for 2 to 3 minutes, until golden brown. If you’re cooking thin-cut chops, they are done now, so you can transfer them to a big plate. Cover the plate with aluminum foil with a slit on top to let the steam out, so the pork will remain crispy. If you’re cooking thick-cut chops, transfer the pan into the oven and bake for 10 to 20 minutes, until the internal temperature reaches 135 F to 145 F (57 C to 63 C) for medium (the USDA minimum temperature is 145 F / 63C), or 145 to 155 F (63C to 38 C) for medium well.

  • You have the option to sear your pork chops before placing them in your slow cooker. I rarely do. If you want to do it this is what I suggest. In a large skillet, over medium high heat, place 1 or 2 tablespoons of oil and heat until oil shimmers or a drop of water flicked in it dances. Brown pork chops on both sides. Use more oil if necessary to brown all of your pork chops. Set aside.
  • Prepare your slow cooker with cooking spray. Place onion slices and garlic across the bottom of your slow cooker. Place your pork chops on top of onions and garlic in slow cooker. If they don't all fit, place all that will fit.
  • In medium sized bowl, whisk together brown sugar and soy sauce. Next add mandarin oranges and their juice. Gently stir to until blended.
