HOMEMADE ORANGE ALMOND BUTTER



Homemade Orange Almond Butter image

Orange almond butter is a healthy, nutritious alternative to peanut butter. It is vegan and also paleo diet friendly.

Number Of Ingredients 6

1 cup Roasted Almonds
¾ tsp Orange Zest
1 ½ - 2 tsp Fresh Orange Juice or juice from 2 segments
¼ tsp Salt (optional)
1 tsp Honey (optional)
2 tsp Vegetable or Coconut Oil (optional)

Steps:

  • Use store bought unsalted roasted almonds or roast almonds at home.
  • To roast almonds, preheat oven to 350 F.
  • Spread almonds on a baking tray and roast for 10 minutes shaking the almonds half way into baking. Almonds should be crunchy else roast a little longer. Cool until almonds are warm.
  • Take all the ingredients in a food processor or blender and blend until it is creamy. It will take a decent 10 minutes and blend in intervals of 30 second, scraping down the almonds.
  • Transfer to a clean container and store in the refrigerator.

Zest of 1 large navel orange, finely chopped
1/4 cup sugar
1/2 cup unsalted butter, at room temperature
1/4 cup freshly squeezed orange juice
1 1/2 tablespoons CuraHao or other orange liqueur

Steps:

  • In a mortar and pestle or food processor, pound or process the orange zest and the sugar. Add the butter and mix together until creamy and fluffy, dribble in the orange juice and CuraHao a bit at a time, still processing, until it is all absorbed. Pack into a ramekin and smooth off the top, and serve with warm breakfast breads. If desired, spread the butter on a long sheet of plastic wrap and roll up into a cylinder. Chill or freeze and cut off 1/2 inch disks of the flavored butter as needed.

  • Preheat the oven to 350F. Spread the almonds, walnuts or pecans on a large, rimmed baking sheet and toast the almonds about 10 minutes, mixing halfway. (Don’t let them get dark).
  • Transfer the nuts to a high-speed blender or food processor. Blend until creamy, scraping down the sides as necessary. Be patient, it may seem like it will never turn to butter, but it will! It will go from clumps, to a ball against the side of the food processor (keep scraping the sides), then finally it will turn very creamy. If the mixture gets too hot, stop and let it cool down for a few minutes.
  • Once the nut butter is very creamy, blend in the salt. If you wish to add additional flavors such as vanilla, cinnamon or honey, let the mixture cool, add the optional add ins and blend until creamy once again. Keep in mind, the texture will harden slightly if you add honey or maple syrup.

  • Preheat oven to 350 degrees F (176 C) and add raw nuts to the baking sheet. If sprouted, nuts won't need as long to roast and benefit from a 5-8 minute roast at a lower temperature (325 F or 162 C). Roast raw nuts for 8-12 minutes, or until fragrant and slightly golden brown. NOTE: You can also leave nuts raw, but the only ones that taste good raw in my opinion are cashews and almonds.
  • If roasting hazelnuts, remove from oven once toasted and transfer to a clean dish towel. Rub the hazelnuts against one another using the towel to remove the skins (see photo). Removing most of the skins is preferred (not all will come off).
  • Add roasted nuts to a food processor or blender and blend / mix until a creamy butter forms. The nuts should go from whole, to meal, to clumps, to creamy nut butter. This can take up to 10-12 or more minutes so be patient. Scrape down sides as needed.
  • Once creamy, add salt (or other add-ins) to taste. Then transfer to a clean jar or container and store in the refrigerator up to 3 weeks (sometimes longer).
