1/2 can frozen 100 % orange juice concentrate, I like Minute Maid (for more flavour options see notes*)
1 can coconut cream, not refrigerated*
4 tablespoons maple syrup
1 teaspoon pure vanilla extract

Steps:

  • Add all ingredients to your blender. Blend until smooth
  • Pour the orange cream mixture into the popsicle molds. Add your popsicle sticks and freeze.
  • Once frozen run the molds under hot water to loosen the creamsicles and enjoy!!

If you prefer a sweeter creamsicle add in some sugar Yield is only estimated depending on the size of your molds.

1 cup frozen orange juice concentrate (slightly softened)
1 cup yogurt (you can use orange-flavor yogurt, or any flavor desired)
1 cup softened vanilla ice cream
2 tablespoons light corn syrup
sugar (optional)

Steps:

  • Place all ingredients in a food processor or blender; pulse until well combined.
  • Divide the mixture between the popsicle molds, and then lightly knock the molds to release any air bubbles.
  • Freeze until almost solid but still soft enough to insert a stick.
  • Insert a large stick in the middle and place back in the freezer until completely frozen and solid (about 8 hours or overnight).

2 egg whites* (See Disclaimer)
1/2 cup honey
1 teaspoon vanilla extract
Juice of 3 oranges (1 cup orange juice)
Zest of 1 orange

Steps:

  • In a bowl, beat the cream with a whisk until soft peaks form. Set aside.
  • In another bowl, beat the egg whites until soft peaks form. Add the honey and vanilla extract and continue beating until firm peaks form.
  • Combine the egg whites mixture to the cream and add the orange juice and orange zest.
  • Using a popsicle mold or wax paper cups, fill the molds and insert the popsicle sticks. Place in the freezer overnight and serve.

1 ½ cups all-purpose flour
1 ¼ teaspoons baking powder
⅛ teaspoon salt
1 cup white sugar
½ cup unsalted butter, softened
2 eggs
⅔ cup milk
2 teaspoons vanilla extract
2 teaspoons orange extract
½ cup unsalted butter, softened
3 cups powdered sugar
3 tablespoons heavy cream
1 teaspoon orange extract
1 teaspoon vanilla extract
1 orange, peeled and sliced
½ cup orange juice
2 teaspoons cornstarch
2 tablespoons powdered sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin pan with paper liners or grease with butter.
  • Whisk flour, baking powder, and salt together in a medium bowl.
  • Beat sugar and butter together in a separate bowl until light and fluffy. Beat in eggs, one at a time, then add milk, vanilla extract, and orange extract slowly.
  • Pour batter evenly into the prepared tin.
  • Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean, 20 to 25 minutes. Remove from the oven and let cool completely.
  • Beat butter for frosting with a mixer on high speed; mix in powdered sugar. Add heavy cream 1 tablespoon at a time. Add orange extract and vanilla extract and mix until smooth. Frost cooled cupcakes.
  • Combine orange, orange juice, cornstarch, and powdered sugar for glaze in a saucepan. Stir until all lumps are gone. Bring to a boil; reduce heat and let simmer, stirring every few seconds, for 5 minutes. Strain orange out of the glaze into a container. Pour a little glaze over each frosted cupcake.

Meanwhile, measure the gelatin into a small bowl and pour cold water over it, allowing it to soften until it takes on the consistency of applesauce.
  • Once the mixture of honey and orange juice forms a viscous syrup, and is reduced to 1 cup, whisk the gelatin into the syrup until it completely dissolves. Remove it from the heat and allow it to cool to room temperature.
  • Pour the cooled orange syrup into a blender. Drop in the egg yolks, and then pour in the milk and orange and vanilla extracts. Blend until combined, about 20 to 30 seconds.
  • Pour the creamsicle mixture into popsicle molds (Check out these molds made of stainless steel.), leaving about 1/4 inch headspace in each mold to allow for expansion. Allow the popsicles to freeze until solid, about 12 hours.
