Beat and Bake Orange Cake image

This quick orange cake is delicious without the frosting. I sometimes just sprinkle icing sugar on the top. This recipe can be used to make two 8-inch cake layers or a 9x5-inch loaf. If making a loaf cake, bake for 60 minutes.

2 cups all-purpose flour
½ teaspoon salt
3 teaspoons baking powder
1 ½ cups superfine sugar
½ cup milk
½ cup orange juice
½ cup vegetable oil
3 eggs, beaten
1 ½ teaspoons grated orange zest
6 tablespoons butter, softened
2 cups confectioners' sugar
2 tablespoons orange juice
1 teaspoon vanilla extract
1 teaspoon grated orange zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch round cake pans.
  • In a measuring cup, combine milk, 1/2 cup orange juice, oil, beaten eggs, and 1 1/2 teaspoon orange zest. Set aside.
  • Sift flour, salt and baking powder into a large bowl. Mix in sugar. Make a well in the center and pour in the milk mixture. Stir until thoroughly combined.
  • Divide batter into prepared pans. Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  • To make Orange Butter Frosting: Cream butter until smooth. Gradually beat in confectioners' sugar. Beat until light and fluffy. Beat in 2 tablespoons orange juice to bring to spreading consistency. Stir in vanilla and 1 teaspoon orange zest.

3 large eggs
1 1/4 cups sugar
1 cup milk
1/2 cup olive oil
Zest of 1 orange, minced
1 3/4 cups flour, sifted
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 orange
1 1/2 cups orange juice
1 1/2 cups sugar

Steps:

  • Preheat an oven to 400 degrees F. Butter an 8-inch cake pan with 2-inch sides, then dust with sugar and flour.
  • Beat the eggs with the sugar to pale yellow ribbons. Beat in the milk, oil and orange zest. In a small bowl, sift the flour with the baking powder, baking soda, and salt. Add the flour mixture to the egg mixture a tablespoon at a time, stirring well after each addition.
  • Pour batter into prepared cake pan and bake for 45 to 55 minutes or until middle of cake springs back when lightly touched. Remove cake from oven, let cool slightly on a rack, then invert and cool completely.
  • Meanwhile, prepare the syrup: Use a sharp paring knife to cut the orange rind off the orange used for zest and the remaining orange, leaving the bitter white pith on the orange. Cut the skin into very thin strips and reserve. Cut away and discard the white pith, remove the orange supremes, and reserve.
  • In a large saucepan, combine the orange juice, sugar, and thin orange strips. Bring to a simmer and cook for 30 minutes, or until a thick syrup. Strain the syrup and reserve the orange strips, along with 1/2 cup of the syrup. Use a toothpick to poke holes in the top of the cake, then pour the warm strained syrup all over the cake so that it soaks through.
  • Place the remaining 1/2 cup syrup in a small saucepan, bring to a simmer and reduce to a few tablespoons. Use a spatula to spread the thick glaze over the top of the cake. Place cake on a serving platter, and arrange the reserved orange strips and orange supremes on top of the cake.

1/3 cup golden raisin
1/3 cup dark raisin
1 cup fresh orange juice
3/4 cup all-purpose flour
3/4 cup whole wheat pastry flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
3 eggs, seperated, let whites come to room temp
1/3 cup vegetable oil
1 tablespoon orange zest
1 teaspoon vanilla
1/2 cup dark brown sugar (Light will work too)
1/3 cup plain low-fat yogurt
3 beets, peeled and grated (about 1 1/2 cups)
2/3 cup white sugar

Steps:

  • Preheat oven to 350 degrees.
  • Bring raisins and orange juice to a boil in a non-reactive sauce pan, reduce heat and simmer 5 minutes, strain, retaining liguid, set aside raisins and return liquid to sauce pan simmer and reduce to about 3 TBLS (about 7 mins).
  • Grease a 9" springform pan, line with parchment, grease and dust with flour.
  • Stir together dry ingredients except sugars, set aside.
  • Whisk the yolks slightly then whisk in oil 1 TBLS at a time, continuing till yolks are emulsified. Stir in zest, brown sugar, beets and raisins; fold in flour mixture.
  • In a seperate bowl beat whites until soft peaks form, sprinke in white sugar a little and then beat for 1 minute more.
  • Stir 1/4 whites into the cake batter to lighten, then fold in the the rest of the whites, pour into springform pan and level.
  • Bake just until a knife inserted in center comes out clean, 45-55 minutes.
  • Cool for 10 minutes; carefully remove cake from pan and place on serving plate, reheat orange juice then brush over the top of the warm cake.
  • Store in an airtight container.

1 (3 ounce) package instant lemon pudding mix
¾ cup orange juice
½ cup vegetable oil
4 eggs
1 teaspoon lemon extract
⅓ cup orange juice
⅔ cup white sugar
¼ cup butter

Steps:

  • Grease a 10 inch Bundt pan. Preheat oven to 325 degrees F (165 degrees C).
  • In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in 3/4 cup orange juice, oil, eggs and lemon extract. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan.
  • Bake in preheated oven for 50 to 60 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  • In a saucepan over medium heat, cook 1/3 cup orange juice, sugar and butter for two minutes. Drizzle over cake.

4 ounces semisweet chocolate, chopped
1 cup butter, softened, divided
1-1/2 cups packed dark brown sugar
3 eggs
2 cups pureed cooked beets
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
Confectioners' sugar

Steps:

  • In a microwave, melt chocolate and 1/4 cup butter; stir until smooth. Cool slightly. Meanwhile, in a large bowl, cream the remaining butter and brown sugar until light and fluffy. Beat in eggs., In a small bowl, combine the chocolate mixture, beets and vanilla. , Beat into creamed mixture (mixture will appear separated). Combine flour, baking soda and salt; gradually add to creamed mixture. , Pour into a greased and floured 10-in. fluted tube pan. Bake at 375° for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely. Before serving, dust with confectioners' sugar.

2 large beets (about 1 1/2 lbs)
1 tablespoon butter
1 tablespoon grated orange rind
3/4 cup fresh orange juice
1 teaspoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper
1 1/2 tablespoons chopped almonds, , toasted

Steps:

  • Leaving root and 1 inch of stem on beets, trim tops and scrub with a brush.
  • Place in a large saucepan, cover with water.
  • Bring to boil, cover, reduce heat, and simmer for 1 hour or until tender.
  • Drain and rinse with cold water.
  • Drain, cool.
  • Trim off beet roots, rub off skins.
  • Cut beets into cubes to measure 3 1/2 cups.
  • Melt butter in a large nonstick frypan over medium heat.
  • Add beets, rind, and next 4 ingredients, (rind through pepper.) Bring to boil, cook until liquid is the consistency of a thin syrup (about 12 minutes), stirring occasionally.
  • Sprinkle with almonds.

CHOCOLATE ORANGE BEETROOT CAKE

Steps:

  • Pre heat the oven to 190C/Fan 170C/Gas 5. Prepare the beetroot by gently washing, chop the stalks but leave 1inch intact and the roots on. Place in a baking tray with the oil and roast for 1hr 15 minutes or until the beetroot have softened to the touch. Allow to cool and then peel and grate the beetroot.
  • Turn the oven up to 200C/Fan 180C/Gas 6. Grease two 20cm (8 inch) cake tins. Melt the butter and then place in a bowl with the eggs and sugar. Use an electric whisk to combine. Mixture is ready when it is smooth and has doubled in volume.
  • Sift together the flour, cocoa, salt and bicarbonate of soda. Then gently fold into the liquid mixture with a spatula or wooden spoon whilst adding the orange juice. Be careful not to knock too much air out of the mixture. Gently fold in the orange zest, raisins, walnuts and grated beetroot. Divide between the prepared cake tins and place in the oven for 25 to 30 minutes or until a knife inserted into the center comes out clean. Once cooked leave to cool in the trays.
  • Whilst the cakes are cooking prepare the Genache. Place the chocolate and cream in a saucepan and heat over a low heat, do not boil the mixture, but slowly melt the chocolate. Stir regularly. Once half the chocolate has melted add the orange zest and butter (if using). Once the chocolate has melted transfer to a large mixing bowl and whisk the mixture until it is glossy and thickened. This should only take a minute. Set aside for 1 hour to cool. Do not refrigerate as the genache will become unworkable.
  • Once the cakes have cooled, remove one from the tin, spread a layer of genache over the top of it, use about a third of the mixture. Then remove the other cake, turn it upside down and place on top of the iced cake. Using a palette knife or spatula, cover the top and sides of the cake with the remaining genache. Place walnut halves on top and gently push into the genache. Serve immediately or place in an air tight container and refrigerate if you prefer the genache to be firmer.
