BAKED ORANGE-GLAZED CHICKEN

Baked Orange-Glazed Chicken image

One of my favorite recipes! The combination of paprika and mustard powder really offsets the sweetness of the orange juice. I tend to eyeball when cooking, so if you cook more breasts or use a large pan, make extra sauce to baste with. I'll frequently use extra glaze when baking just so there's plenty to pour over rice once it's done!

ORANGE ZESTED CHICKEN CUTLETS

Orange Zested Chicken Cutlets image

I love when one simple ingredient totally transforms an easy every day recipe and makes it into something fabulous. That is the case here. I took my regular plain old chicken cutlets and added some orange zest and wow what flavor. Serve it atop some arugula dressed with my orange vinaigrette and it's sheer perfection on a plate.

Categories     Chicken

Number Of Ingredients 17

1 cup(s) breadcrumbs
2 large eggs
3 tablespoon(s) flour
4 - chicken cutlets
2 tablespoon(s) parsley
1/4 teaspoon(s) nutmeg
1 - orange (zested) (reserve a pinch for vinaigrett
2 tablespoon(s) oil
1 tablespoon(s) butter
FOR VINAIGRETTE:
1/4 cup(s) orange juice
2 tablespoon(s) balsamic vinegar
1 tablespoon(s) honey
1/2 teaspoon(s) salt
1/2 teaspoon(s) black pepper
1/2 cup(s) olive oil
1 pinch(es) reserved orange zest

Steps:

  • Create breading station by using 3 shallow bowls or plates. In one lightly mix the eggs and add 1 T water. The next one is for the flour. In the last one combine the breadcrumbs, salt, nutmeg, parsley and zest. Coat cutlets in this order: dip in flour, then egg, then coat with breadcrumbs. Set aside.
  • Heat oil and butter in large saute pan over medium heat. Place cutlets in pan being sure not to overcrowd pan. If cutlets are large, do this in batches. (if you overcrowd your chicken will steam and not brown nicely). Cook about 5 minutes per side, be sure that it's cooked through, adjust time as needed depending on the thickness of your cutlets. When cooked through set aside to rest.
  • While chicken is cooking prepare the vinaigrette: Combine orange juice, zest, vinegar, honey, salt and pepper. Gradually whisk in olive oil. Adjust salt and pepper to your liking.
  • Arrange Arugula on platter. Lightly dress with vinaigrette. Place cutlets on top of arugula and drizzle a bit of vinaigrette atop the chicken. There will be plenty of vinaigrette left, I like to leave out on the table so guests can adjust their amounts to their liking. Or keep remainder in fridge for 5 days in a tightly sealed container and use with your regular salad.

CHICKEN BREASTS WITH LEMON

Chicken Breasts With Lemon image

In this recipe, which Pierre Franey brought to The Times in 1992 in one of his 60-Minute Gourmet columns, two teaspoons of lemon zest are added to a simple sauce of lemon juice, thyme, garlic and shallots. It is, at once, lively and elegant. To round it out, it needs a sturdy accompaniment. Mr. Franey suggested mashed potatoes with garlic and basil, with just a little olive oil swirled in.

Time 25m

Yield 4 servings

Number Of Ingredients 11

1/2 cup flour for dredging
Salt and freshly ground pepper to taste
4 skinless boneless chicken breasts, about 6 ounces each
2 tablespoons olive oil
4 sprigs fresh thyme or 1 teaspoon dried
2 tablespoons finely chopped shallots
2 teaspoons finely chopped garlic
2 teaspoons grated lemon zest
3 tablespoons lemon juice
1/2 cup chicken broth, fresh or canned
2 tablespoons butter

Steps:

  • Season flour with salt and pepper, and dredge the chicken all over. Remove the excess flour.
  • Heat the oil in a heavy skillet large enough to hold the chicken pieces in one layer. Add chicken and cook, uncovered, over medium heat for 5 minutes or until lightly browned.
  • Flip the chicken and cook for 5 minutes more, or until cooked through. Carefully remove the oil from the skillet, leaving the chicken. Discard the oil.
  • Add the thyme, shallots and garlic, and cook for about a minute. Do not burn the garlic. Add the lemon rind, the lemon juice and the broth.
  • Scrape the skillet to dissolve the brown particles that cling to the bottom. Add the butter, and cook for 3 minutes longer. Serve immediately.

ALMOND-CRUSTED CHICKEN CUTLETS WITH WILTED SPINACH-ORANGE SALAD

Almond-Crusted Chicken Cutlets With Wilted Spinach-Orange Salad image

From Cook's Illustrated. "It should take about 10 seconds to process the almonds into fine crumbs-don't overprocess or the nuts will become oily. If you like, serve with couscous."

Provided by swissms

Categories     Chicken Breast

Time 21m

Yield 4 serving(s)

Number Of Ingredients 13

2 large eggs
1 teaspoon Dijon mustard
1 1/4 teaspoons grated orange zest (from 1 orange)
2 medium oranges, peel and pith removed, quartered through the ends and sliced crosswise into 1/4 inch thick pieces
salt
ground black pepper
1 cup sliced almonds, processed into fine crumbs in the food processor
1/2 cup panko breadcrumbs (Japanese-style bread crumbs)
4 boneless skinless chicken cutlets (5 to 6 ounces)
1/2 cup vegetable oil
5 ounces Baby Spinach (about 6 cups)
1 small shallot, minced (about 2 tablespoons)
1 orange, cut into 4 wedges for garnish (optional)

Steps:

  • Lightly beat the eggs, mustard, 1 teaspoon orange zest, ½ teaspoon salt, and ¼ teaspoon pepper together in a shallow dish. Mix the almonds and panko in a separate shallow dish. Working with one piece of chicken at a time, dip the chicken into the egg mixture using tongs, turning to coat well and allowing excess to drip off. Drop the chicken into the nut mixture and press the nuts into the chicken with your fingers. Transfer the breaded chicken to a wire rack set over a baking sheet and repeat with the remaining chicken. Adjust an oven rack to the middle position and heat the oven to 200 degrees.
  • Heat 6 tablespoons oil in a heavy-bottomed, 12-inch nonstick skillet over medium-high heat until just smoking. Place the chicken in the skillet gently and cook until golden brown and crisp on the first side, about 2½ minutes. Using tongs, flip the chicken; reduce the heat to medium and continue to cook until the meat feels firm when pressed gently, the second side is deep golden brown and crisp, and the chicken is no longer pink in the center, about 2 minutes longer. Transfer the chicken to a paper towel-lined plate and place the plate in the oven. Discard the oil in the skillet and, using tongs and paper towels, wipe the skillet clean.
  • Place the spinach in a large bowl. Heat 1 tablespoon oil in the cleaned skillet over high heat until just smoking. Add the orange slices and cook until lightly browned around the edges, 1½ to 2 minutes. Remove the pan from the heat and add remaining 1 tablespoon oil, shallot, remaining ¼ teaspoon zest, ¼ teaspoon salt, and 1/8 teaspoon pepper and allow residual heat to soften the shallot, 30 seconds. Pour the warm dressing with the oranges over the spinach and toss gently to wilt. Remove the chicken from the oven and serve it immediately with the salad and orange wedges.
