ORANGE-TEA-BOURBON BRINED TURKEY WITH HONEY MUSTARD BUTTER

- Unwrap the turkey and remove the neck and giblets (reserve for gravy). Rinse the turkey under cold water and pat dry. Fill a large pot with 2 quarts water; add the orange zest, orange juice, 2 cups kosher salt, the sugar, black tea bags, bay leaves, cloves, peppercorns and bourbon. Bring to a boil, then simmer 10 minutes. Add 4 quarts cold water and let cool. Submerge the turkey in the brine, adding water to cover, if necessary. Refrigerate at least 8 hours or overnight.
- Remove the turkey from the brine; rinse and pat dry. Mix the butter, honey, dijon mustard and spicy brown mustard until combined. Reserve 4 tablespoons of the butter, then rub the rest under the turkey skin on the breasts and legs. Rub 2 tablespoons of the reserved butter on the skin; chill and save the rest for your gravy. Let the turkey stand 30 minutes at room temperature before roasting.
- Put the oven rack in the lowest position; preheat the oven to 350 degrees F. Put the turkey breast-side up on a rack in a large roasting pan, tucking the wing tips under. Tie the drumsticks together with twine. Roast until the skin is golden brown and a thermometer inserted into the thigh registers 165 degrees F, about 15 minutes per pound. Transfer to a cutting board and let rest 30 minutes before carving. Whisk the reserved 2 tablespoons flavored butter into your gravy just before serving, if desired.

- Bring 4 cups of water to a near boil.
- Add tea bag(s) and (optional) baking soda, and cover the pan. Remove from heat, and let steep for 15 minutes.
- Remove tea bags, pour into a pitcher, add the honey and stir.
- Add 4 cups of cold water and place in the fridge.
- Place tea, honey, 8 cups of room temperature water, and baking soda in a sun tea jar. Place in a sunny place.
- Stir occasionally if possible to distribute the honey. The length of time to steep will depend on how hot it is outside.
- Serve over ice if you'd like to serve immediately. Transfer to the refrigerator and cool.

- Place tea bags in a teapot; add boiling water. Cover and steep for 3 minutes; discard tea bags. Pour tea into a pitcher. Peel and section 2 oranges and 1 lemon; add to tea. - Microwave 1/2 cup of water for 1 minute.
- Steep tea bags in hot water for 3 minutes.
- Let tea cool.
- Bring 5 cups of water to a boil.
- Once boiling, add the tapioca pearls.
- When the pearls are floating, cook on medium heat for 3 minutes.
- Cover and simmer on low for 2-3 minutes.
- Put finished pearls into cold water for 30 seconds, remove and put in a dry bowl.
- Coat pearls in the honey.

- Pierce skin of duck breasts all over with fork.
- Sprinkle duck with salt and pepper.
- Heat heavy large skillet over high heat.
- Add duck breasts, skin side down, to skillet.
- Cook until skin is well browned, about 4 minutes.
- Turn duck breasts over; cook 2 minutes.
- Remove from heat.
- Set rack in roasting pan.
- Transfer duck breasts to rack (reserve drippings in skillet).
- Roast duck to desired doneness, about 20 minutes for medium-rare.
- Meanwhile, heat drippings in skillet over medium heat.
- Add shallots and sauté until beginning to brown, about 5 minutes.

ORANGE TEA WITH HONEY

- In a medium saucepan, add the tea bags and water. Steep the tea bags for 3 minutes and then remove them from the pan. Stir in the orange blossom water and honey. Add the juice of the orange and lemon, as well as the peels. Bring to simmer and simmer for 10 minutes.
- Serve the tea in warm mugs with pieces of the orange and lemon peel as garnish.
