This recipe was given to me by a friend with whom I exchange recipes. It is so moist and good. Being a nurse, I am always looking for quick easy recipes.

1 (18.25 ounce) package moist yellow cake mix
4 eggs
½ cup vegetable oil
1 (11 ounce) can mandarin oranges, juice reserved
1 (16 ounce) package frozen whipped topping, thawed
1 (5 ounce) package instant vanilla pudding mix
1 (20 ounce) can crushed pineapple with juice

Steps:

  • Beat the eggs, and add them to the boxed cake mix. Add the oil and the mandarine oranges to the batter; remember to add the juice as well as the fruit. Pour the batter into a greased and floured 9 x 13 inch pan.
  • Bake the cake for 40 minutes in a preheated oven at 325 degrees F (165 degrees C). Cool on wire rack.
  • While cake is baking, prepare the frosting by mixing together the whipped dessert topping, the package of instant pudding, and the crushed pineapple with its juices. Set frosting in refrigerator to set. Frost when cake has thoroughly cooled.

3 teaspoons baking powder
1/2 teaspoon salt
18 tablespoons unsalted butter or 18 tablespoons margarine, at room temperature,divided
2 1/3 cups sugar, divided
5 large eggs
1 cup orange juice, divided
2 teaspoons orange zest
1/3 cup sugar, plus
2 tablespoons sugar, divided
1 1/2 teaspoons unflavored gelatin
1/4 cup orange juice
1/2 cup unsalted butter or 1/2 cup margarine
2 large eggs, separated
2 egg whites
2/3 cup sugar
3 1/2 tablespoons light corn syrup
2 tablespoons water
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract
slivered orange rind (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Grease three 9 inch round cake pans and line bottom with wax paper cut to fit bottom of pan.
  • In a medium bowl, mix flour, baking powder and salt.
  • In the large bowl of an electric mixer, beat 1 cup butter and 2 cups sugar at medium speed until creamy.
  • Add eggs, one at a time, beating well after each addition.
  • Beat in flour mixture alternately with 3/4 cups orange juice, beating well after each addition.
  • Beat in orange peel.
  • Pour batter evenly into prepared pans.
  • Bake in a 350 degree oven 25 to 30 minutes or until cake tester inserted in center of cakes comes out clean.
  • Remove pans from oven and loosen cakes around edges with a small metal spatula.
  • Turn cakes out onto wire racks; peel off and discard wax paper.
  • Turn cakes, right-side up, and prick all over with a wooden pick.
  • In a small saucepan, melt remaining 2 tablespoons butter, 1/3 cup sugar and 1/4 cup orange juice.
  • Cook, stirring until sugar dissolves.
  • Spoon slowly over warm cakes, letting syrup soak in.
  • Let cakes cook completely.
  • To make the filling, in a small saucepan, mix 1/3 cup sugar and gelatin.
  • Add orange juice.
  • Stir over low heat until gelatin dissolves.
  • Add butter, stir until butter melts.
  • In a small bowl, beat egg yolks; stir in orange mixture; then return mixture to saucepan.
  • Cook over low heat 3 to 5 minutes, stirring until thickened.
  • Cool to room temperature.
  • Beat egg whites with remaining 2 tablespoons sugar until stiff; fold into cooled orange mixture.
  • Refrigerate until very thick but still spreadable, about 10 minutes.
  • Do not chill too long or mixture will set.
  • Use to fill Orange Sunshine Cake.
  • To make the frosting: in the top of a double boiler, mix egg whites, sugar, corn syrup, water and cream of tartar.
  • Beat with an electric mixer or rotary beater over boiling water 7 minutes or until very stiff and glossy.
  • Remove from heat; beat in vanilla.
  • Use to frost Orange Sunshine Cake.
  • To assemble the cake: place one cake layer on cake plate, spread with half the Orange Filling.
  • Top with second cake layer, spread with Frosting.
  • Top with remaining cake layer and spread with remaining Orange Filling.
  • Frost sides of cake with remaining Frosting.
  • Garnish with slivered orange peel, if desired.

Steps:

  • In a large bowl, combine the first six ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes., Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a large bowl, combine the pineapple, sugar, 3-1/2 cups coconut and sour cream. Set aside 1 cup for frosting. Place one cake on a serving plate; top with a third of the remaining pineapple mixture. Repeat layers twice. , Fold whipped topping into the reserved pineapple mixture. Spread over top and sides of cake. Sprinkle with toasted coconut if desired. Refrigerate until serving.

1 cup butter, softened (*not* margarine!)
1 1/4 cups granulated sugar
3 large eggs
1/2 teaspoon almond extract (*)
2 oranges, ends trimmed, then cut into chunks and seeded (about 1 lb. total-save some zest for garnishing the finished cake)
2 1/2 cups flour
1/4 teaspoon salt
1/4 teaspoon ground cardamom (*)
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 cups powdered sugar (I only used maybe 2/3 cup total)
3 tablespoons fresh orange juice
1/2 teaspoon orange blossom water (*)
toasted almond, chopped (*)
orange zest

Steps:

  • Preheat oven to 325°. Coat a 10-cup Bundt pan with butter. I don't have a bundt pan anymore and used a tube pan instead.
  • In a large bowl with a mixer on medium speed, beat butter and granulated sugar until fluffy. Beat in eggs (and almond extract if using.) Note: I used my KitchenAid stand up mixer to prep the batter.
  • Whirl orange chunks in a food processor until mostly smooth but not puréed. Add the orange chunks to the batter and beat until blended.
  • Add flour, salt, (cardamom if using), baking soda, and baking powder to bowl and beat until smooth. Spread batter in prepared pan.
  • Bake until a toothpick inserted in the center comes out with only a few crumbs clinging to it, about 55 minutes. Cool pan on a rack 10 minutes, then invert cake onto rack and let cool completely.
  • Whisk together powdered sugar and orange juice in a small bowl. Stir in orange blossom water if using. Drizzle over cooled cake.
  • Let glaze set (garnish with toasted almonds if using) and the orange zest, then slice cake.

Recipe video above. This is a wonderful moist cake that's bursting with orange flavour in a way that you can only achieve using whole oranges - rind and all! Boiling the oranges removes the bitterness from the pith (white part). You still get the fainest whiff of bitterness in the finshed cake - but it's actually pleasant and reminds you that you're eating real oranges!It's a terrific and easy cake that's perfect to take to any gatherings since it's also gluten-free and everyone can eat it. The nutty almond flavour is wonderful, and keeps it ultra-moist.Makes 1 x 23cm 9" cake 4 cm / 1.6" high, or 2 x 20cm/8" cakes 3cm / 1.2" high.

2 medium oranges, fresh whole with rind on - any type
1 1/4 tsp baking powder
6 large eggs (, at room temp (Note 2))
1 1/4 cups white sugar
2 3/4 cups almond meal / ground almonds ((Note 3))

Steps:

  • Boil 10 minutes: Place oranges in a pot and cover with cold water. Bring to the boil over medium high heat. Boil for 10 minutes and drain.
  • Repeat x 2: Put oranges back in the pot, cover with cold water and boil again for 10 minutes. Drain, then repeat once more (ie. boil oranges 3 x 10 minutes). Shortcut: Boil 40 minutes without draining, keeping an eye on water level. (Note 4)
  • Chop: Rinse oranges, then cool slightly so you can handle them. Slice into 1cm / 1/4" slices then dice, removing any seeds. Cool completely.
  • Preheat oven: Preheat oven to 160°C/320°F (140°C fan). Grease and line a 23cm/9" cake pan with baking/parchment paper. (Note 5)
  • Blitz oranges: Place chopped oranges in a food processor (Note 6). Blitz on high for 4 x 10 second bursts, scraping down the sides in between, until it's pureed into a marmalade consistency with only a few visible bits of rind remaining. It does not need to be completely smooth.
  • Blitz in remaining ingredients: Add almond meal, eggs, baking powder and sugar. Blitz for 5 - 10 seconds on high until combined.
  • Bake 60 minutes: Pour into prepared cake pans. Bake 60 minutes until the surface is golden and a toothpick inserted into the centre comes out clean.
  • Cool: Cool fully in cake pan. Unless using loose base pan, cover surface with baking paper to help you turn it out (cake is sticky so may stick to your hand and tear surface otherwise.)
  • Serve: Decorate as desired - I used slices of fresh oranges, rind strips and sprigs of flowers. A dusting of icing sugar / powdered sugar is also lovely. Cut, then serve! See Note 7 for suggestions.

  • In a small saucepan, combine 4 tablespoons sugar, cornstarch and 3/4 cup orange juice; stir until smooth. Bring to a boil; cook and stir for 2 minutes until thickened. Remove from heat; cool to lukewarm. , Meanwhile, combine biscuit mix and remaining sugar in a bowl. 2 pkg. (3 oz. each) JELL-O Orange Flavor Gelatin
1/2 cup vodka or cold water
2 cups thawed COOL WHIP Whipped Topping
1 tsp. orange zest

Steps:

  • Add boiling water to gelatin mixes in large bowl; stir with whisk 2 min. until completely dissolved. Stir in vodka. Add COOL WHIP and zest; stir until COOL WHIP is completely melted and mixture is well blended.
  • Pour into 8-inch square pan.
  • Refrigerate 3 hours or until firm. Cut into 36 pieces to serve. Refrigerate leftovers.

I love a bright, fresh bundt cake and have taken this one to a boozy level. The interior is soft, dense, and colorful. Tequila is baked into half the batter for the classic tequila sunrise flavor. The cake is coated in a sweet citrus glaze that is spiked with tequila. This is one delightful dessert fitting for any holiday or special occasion.

1 and 1/4 cups unsalted butter
2 cups granulated sugar
2 tablespoons grated orange zest
1 teaspoon vanilla extract
5 large eggs
3 cups all-purpose flour
1 teaspoon salt

1/2 teaspoon baking soda
2/3 cup fresh orange juice
1/4 cup tequila
1/4 cup pomegranate juice
red food coloring
1/2 cup granulated sugar
1/3 cup orange juice
2 tablespoons tequila

pomegranate seeds for garnish

Steps:

  • Adjust the oven rack to the lower third position and heat to 350°F. Spray a 12-cup bundt pan with cooking spray. Dust the pan lightly with flour then tap out any excess.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar together on medium speed until light and fluffy, about 5 minutes. Beat in the orange zest and vanilla. Beat in the eggs, one at a time, mixing well after each addition.
  • In a separate medium bowl, combine the flour, salt, baking powder, and baking soda. Stir with a whisk to combine. Use a silicone spatula to gently fold half the flour mixture into the butter mixture just until incorporated. Add the orange juice and stir until combined. Fold in the remaining flour mixture until all the dry ingredients are moistened.
  • Transfer half the batter to a medium bowl. Add the pomegranate juice and a few drops of red food coloring. Stir with a whisk until well blended. And the tequila to the remaining batter and whisk until well combined.
  • Using a 2-inch cookie scoop, drop alternating colors of batter into the prepared pan. Tap the pan on the counter one or two times to remove any air pockets. Bake for 45-55 minutes or until a wooden toothpick inserted into the center comes out with only a few dry crumbs.
  • Cool in the pan for 20 minutes, then transfer to a cooling rack to cool completely.
  • Combine the sugar and orange juice in a small saucepan. Heat over low heat until the sugar has completely dissolved. Remove from heat. Stir in the tequila and confectioners' sugar until smooth.
  • Use a pastry brush to brush the glaze all over the surface of the cake. Slice and serve with pomegranate seeds.

Frosting ingredients:
1 package of Jell-O No Bake Cheesecake mix

1 cup of sour cream

  • Combine cake mix, oranges (including juice) and oil; mix on medium speed until blended. Add eggs, one at a time, beating well after each addition. Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease and lightly flour bottom and sides of 13x9-inch pan, or spray with cooking spray.
  • In large bowl, beat cake mix, water, oil and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Reserve 1 1/2 cups batter in small bowl; set aside. Pour two-thirds of the remaining batter into pan; spread evenly. Stir dry gelatin and extract into the reserved 1 1/2 cups batter. Drop orange batter by heaping tablespoonfuls randomly onto batter in pan; repeat with remaining yellow batter. Swirl batter with knife.
  • Bake 33 to 38 minutes or until toothpick inserted in center comes out clean. Cool completely, about 2 hours.
  • In small microwavable bowl, microwave chocolate as directed on package until melted. Cool 10 minutes. In large bowl, beat powdered sugar, butter, vanilla and milk with electric mixer on low speed until smooth. Gradually beat in melted chocolate until well blended. Immediately frost cake (frosting will begin to set up after about 15 minutes). Store loosely covered.
