CRANBERRY ORANGE COOKIES
Steps:
- Heat oven to 350°F.
- Combine all orange sugar ingredients in bowl; stir until well mixed. Set aside.
- Combine 1 cup sugar and butter in large bowl; beat at medium speed until creamy. Add egg and 1 teaspoon orange zest; mix until combined. Add flour, baking powder and baking soda; beat at low speed until well mixed. Add cranberries. Continue beating just until mixed.
- Shape dough into 1-inch balls; roll balls in orange sugar. Place, 2 inches apart, onto ungreased cookie sheets. Flatten with bottom of glass to 1 1/2-inch circles.
- Bake 8-10 minutes or until edges are very lightly browned. Cool 1 minute on cookie sheet; remove to cooling rack.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in orange zest and vanilla. - In a large bowl, cream butter, sugar and salt until light and fluffy, 5-7 minutes. Beat in egg, orange zest, orange juice and extract. Gradually beat in flour., Divide dough in half. - In a small bowl, zest all the citrus. Remove about 2 teaspoons of zest and place in a separate bowl. Add 1/2 cup granulated sugar to the 2 teaspoons of zest. Combine with a fork and set aside.
- In a mixing bowl, add butter and remaining 1 cup sugar. Beat for 1-2 minutes. Add egg and beat until combined. Add flour, baking powder and baking soda. Beat until combined. Slowly add in zest.
- Line a baking sheet with parchment paper. Roll cookies into 3/4-1inch balls. Then roll them in the sugar/zest mixture, coating generously.
- Place ball on cookie sheet and repeat. Using a flat bottom of a cup, press the ball slightly to form a disc. Repeat for all balls. I then pressed a little extra sugar on the tops of the cookies at this point (totally optional).
- Bake in a 350 degree oven for 10-12 minutes. Remove and cool on wire rack.
- Store in a covered container for up to a week. ENJOY.

- In a medium bowl, combine the flour, baking powder, and salt.
- In a large bowl, with an electric mixer on medium speed, beat the butter and granulated sugar for 3 minutes, or until light and fluffy.
- Beat in the eggs, orange juice, orange peel, and orange extract.
- Beat in the flour mixture, a little at a time, until well-blended.
- Divide the dough into thirds, wrap each portion in plastic wrap, and refrigerate for 3 hours.
- Preheat the oven to 350°F and grease baking sheets or use silpats.
- Place one-third of the dough on a lightly floured surface, leaving the remaining two-thirds in the refrigerator.
- Using a floured rolling pin, roll to 1/8 inch thickness.
- Using floured cookie cutters, cut into shapes.
- Arrange on the prepared baking sheets and repeat until all the dough has been used.
- Bake for 11 minutes, or until lightly browned.
- Cool on a rack for 2 minutes- Remove to the rack to cool completely.

- In a large bowl, cream together the shortening and sugar. Beat in the eggs, one at a time, then stir in the orange juice, vanilla and orange zest. Combine the flour, baking powder and salt, stir into the creamed mixture until well blended. Cover and refrigerate overnight.
- Preheat the oven to 375 degrees F (190 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut into shapes with cookie cutters or stamps. Place cookies 1 inch apart onto an unprepared cookie sheet.
