CORNISH HEN WITH ORANGE STUFFING



Cornish Hen with Orange Stuffing image

A delicate orange flavor makes this stuffing memorable. I serve potatoes and coin carrots alongside the hen for a satisfying meal.

1 medium navel orange
1/4 cup sliced green onions
1/4 cup chopped celery
1 tablespoon vegetable oil
1-1/2 cups seasoned stuffing mix
1/4 teaspoon grated orange zest
4 to 5 tablespoons orange juice
1 Cornish game hen (20 to 24 ounces), split lengthwise
1 tablespoon honey, warmed
1 tablespoon water

Steps:

  • Peel and section orange; cut each section into quarters and set aside. In a skillet, saute onions and celery in oil until crisp-tender. In a bowl, combine the onion mixture, stuffing mix, orange zest and reserved orange sections. Stir in enough orange juice to just moisten stuffing mixture., Arrange stuffing in two mounds in a greased shallow 2-qt. baking dish. Place Cornish game hen halves skin side up over stuffing. Cover and bake at 375° for 30 minutes. Uncover; bake for 15 minutes. Combine honey and water. Brush over hens. Bake 10-15 minutes longer or until juices run clear.

1 large box Cook and Serve Vanilla Pudding
1 large box orange Jello (I used sugar-free)
2 cups water
1 16 oz. container Cool Whip (I used Lite)
1/2 bag mini marshmallows
1 can (20 oz.) pineapple tidbits (partially drained)
1 can (15 oz.) mandarin oranges (partially drained)

Steps:

  • Mix together pudding, jello and water in a sauce pan over medium heat.
  • Bring to a boil stirring often.
  • Remove from heat and pour into the bowl of a standing mixer.
  • Refrigerate one hour.
  • Beat on high 5 - 6 minutes until creamy.
  • Fold in Cool Whip, marshmallows and fruit.
  • Transfer to glass bowl or trifle dish. Chill before serving.

1 small (1.25kg/ 2lb 12oz) oven-ready duck
2 oranges
2 tsp light brown soft sugar
2 tsp balsamic vinegar
2 tbsp Grand Marnier
1 tbsp butter
200ml good-quality chicken stock
150ml dry white wine
1 tsp cornflour
50g watercress , to garnish
200g baby leaf spinach

Steps:

  • Heat oven to 160C/140C fan/gas 3. Put the duck on a rack set over a roasting tin and prick the skin all over with a skewer. Season well. Halve one of the oranges and squeeze some of the juice into the duck cavity and the tin, then stuff the cavity with both of the halves. Pour 100ml water into the tin and roast for 20 mins per 500g (about 50 mins). Turn the oven up to 220C/200C fan/ gas 7 and roast for another 20 mins until the duck skin is crispy and golden.
  • Put a small pan of water on to boil. Using a peeler, pare the zest from the remaining orange. Scrape any pith off the zest using a small, sharp knife. Add the zest to the water and gently boil for 8-10 mins, then drain, slice thinly into strips and set aside. In the same pan, dissolve the brown sugar with the balsamic vinegar. Cut the pared orange in half, juice it and pour the juice into the pan. Add the Grand Marnier and 1 tsp butter. Bubble until it has reduced by half and is dark and syrupy. Remove from the heat and stir in the orange zest.
  • Once the duck is cooked, wrap it in foil to keep warm and put it on a board to rest. Spoon off the fat from the roasting tin and discard. Pour any remaining duck juices into a wide, shallow saucepan. Tip in the stock and bring to the boil. Add the wine and simmer for 2-3 mins, then add half the orange sauce and stir well. In a small bowl, mix the cornflour with 2 tsp cold water, then stir into the gravy. Season, add 1 tsp butter and whisk together. Pour into a warm gravy jug.
  • To serve, brush the remaining sticky orange glaze over the duck, then put the duck on a board and garnish with the watercress. Heat a frying pan over a medium heat and add 1 tsp butter. Once the butter has melted, tip in the spinach and cook for 1-2 mins until it has wilted. Season and tip into a warm serving dish.

6 ounces orange Jell-o ((1 large box))
3 cups water
16 ounces Cool Whip ((thawed))
5 ounces mini marshmallows ((about half the bag))
22 ounces canned mandarin oranges ((2 small cans; drained))
3 bananas ((sliced; add right before serving so they don't turn brown in the fridge))

Steps:

  • Mix together pudding, Jell-o, and water over medium heat until it boils. Remove from heat and pour into a large mixing bowl. Refrigerate until mixture has thickened (about 4-5 hours).
  • Beat until creamy.
  • Fold in whipped cream, marshmallows, and fruit. Scrape the sides of the bowl to get all the fluff mixture together. Chill about an hour before serving.

1 (15 ounce) can crushed pineapple
1 pound cottage cheese
2 (3 ounce) packages orange flavored Jell-O® mix
1 (16 ounce) package frozen whipped topping, thawed

Steps:

  • Combine the well drained oranges and pineapple in a large bowl and mix together with the cottage cheese. Add the dry orange flavored gelatin powder and stir until well blended. Fold in the thawed frozen whipped topping and refrigerate for at least one hour.

CHICKEN BREASTS, ORANGE STUFFED

This recipe has been a favorite of mine for almost 30 years, & although it is messy to make, it is fairly easy and makes a great looking main dish for dinner guests. For bread crumbs I usually use a cracked wheat or winter wheat bread, dice it up and dry it out in the oven before crushing it into crumbs. The chicken breasts for this recipe should be large.

6 boneless skinless chicken breast halves
salt
pepper
1/2 cup onion, finely chopped
1 tablespoon unsalted butter
1 orange, peeled, sectioned, cubed
1/2 cup golden raisin
1/4 cup dry breadcrumbs
1/2 teaspoon thyme
1 egg
1/4 cup milk
1 cup dry breadcrumbs
1/3 cup unsalted butter, melted

Steps:

  • Place breast halves, one at a time, between plastic wrap & using a rolling pin or the flat side of a meat mallet, flatten each piece until it is about 1/4" thick.
  • Pull off the wrap & sprinkle lightly with salt & pepper, if desired.
  • In a small skillet, saute the onion in 1 Tbsp of butter until tender. Stir in the cubed orange, raisins, 1/4 cup of bread crumbs & thyme.
  • Spread each breast evenly with the orange & crumb mixture, then roll up each breast with the stuffing inside. Tuck in the ends to help seal.
  • Beat together the egg & milk, then dip the rolled up breasts into the egg mixture. Roll each breast carefully in the 1 cup of dry bread crumbs, & place in a baking dish with high sides. Cover loosely & refrigerate 30 minutes or until ready to bake.
  • Preheat oven to 425 degrees F, & bake for 30 minutes until golden brown, basking several times with the melted butter during the last 15 minutes of baking time.

This reminds me of orange sherbet! It is from my favorite cookbook- The Roosevelt Raccoons "All of Our Favorites" cookbook. The cookbook contains recipes from active parents and teachers of Roosevelt Elementary School, Mankato, MN. It is where I went to school, and my family submitted all of our family favorites for it. So, we probably have 10 copies of the book in our house! I changed the name to "Orange Stuff," after our family favorite "Green Stuff." Before, this was simply called "Salads."

Steps:

  • Combine cottage cheese and Cool Whip in a large bowl.
  • Add dry Jello and stir until Jello is thoroughly mixed.
  • Gently fold in mandarin oranges.
  • Refrigerate for at least 30 minutes. It is best when refrigerated overnight.

1/2 cup chopped onion
1/3 cup butter
2 teaspoons chicken bouillon granules
2-1/2 cups boiling water
1 package (14 ounces) seasoned stuffing cubes
1/2 cup shredded carrot
1/4 cup orange juice
2 teaspoons grated orange zest

Steps:

  • In a small skillet, saute celery and onion in butter until tender. In a large bowl, dissolve bouillon in boiling water. Stir in the stuffing cubes, carrot, orange juice, zest and the celery mixture. , Spoon into a greased 13x9-in. baking dish. Cover and bake at 350° for 20 minutes. Uncover; bake 15 minutes longer or until heated through.
