SUGAR AND SPICE COOKIES
These are my favorite cut-out cookies. Sweet and spicy, they're a wonderful Christmas treat. I've been making them every Christmas for almost 15 years now. You can make the dough up to 3 days ahead of time.

Steps:
- Mix the flour, the baking powder, cinnamon, nutmeg, and cloves together in a bowl.
- Cream the butter and brown sugar together with an electric mixer in a large bowl until smooth; beat the egg and vanilla extract into the butter mixture. Add the flour mixture in small amount to the butter mixture, beating each addition until blended. Form the dough into a ball, wrap with plastic wrap, and refrigerate at least 1 hour or up to 3 days.
- Preheat an oven to 350 degrees F (175 degrees C). Grease baking sheets.
- Roll the dough out on a floured work surface with a rolling pin to about 1/8-inch thickness. Cut with 2-inch cookie cutters. Arrange the cut cookies onto the prepared baking sheets.
- Bake in the preheated oven until the edges begin to brown, 10 to 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

- In a large bowl, cream butter, sugar and salt until light and fluffy, 5-7 minutes. Beat in egg, orange zest, orange juice and extract. Gradually beat in flour., Divide dough in half. Shape each into a disk. Cover and refrigerate 1 hour or until firm enough to roll., Preheat oven to 375°. On a floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. cookie cutter. Place 1 in. apart on greased baking sheets., Bake until edges are light brown, 8-10 minutes. Remove from pans to wire racks to cool completely., In a small bowl, mix confectioners' sugar, milk and, if desired, food coloring until smooth. Pipe or spread over cookies; let stand until set.

- Preheat an oven to 350 degrees F (175 degrees C). Combine the flour, baking powder, nutmeg, cloves, cinnamon, and salt.
- Beat the shortening and butter with an electric mixer until smooth. Add the sugar and beat until combined. Mix in the chopped almonds and orange zest. Gradually add the flour mixture to the butter mixture and stir until combined.
- Transfer the cookie dough to a lightly floured surface and roll it into a rectangle about 13 inches long. Cut the dough into 3 1/2-inch rectangles using a fluted pastry wheel or sharp paring knife. Place the cookies on an ungreased baking sheet.
- Bake in the preheated oven until lightly browned, about 12 minutes. Allow the cookies to cool slightly on the baking sheets, and then transfer them to a wire rack to cool completely.
- Combine the sifted confectioners' sugar, the orange marmalade, and the orange juice and stir well. Spread the glaze on the cookies and garnish with sliced almonds, if desired.

- 1. In a large mixing bowl, combine 1 c granulated sugar, 1 c powdered sugar, butter, shortening, and eggs. Beat at medium speed until light and fluffy.
- 2. Add flour, peel, cream of tartar, baking soda, cardamom, ginger, and salt to a separate bowl.
- 3. Slowly add flour to sugar/butter mixture. Beat at low speed until soft dough forms.
- 4. Cover with plastic wrap and chill 1 to 2 hours or until firm.
- 5. Heat oven to 350 degrees. Shape dough into 1 inch balls.
- 6. Roll balls in sprinkling sugar or granulated sugar. Place balls 2 inches apart on a parchment paper lined cookie sheet.
- 7. Flatten balls with bottom of a drinking glass.
- 8. Wipe the glass with a damp cloth to prevent sticking.
- 9. Bake for 12 to 13 minutes or until light golden brown.
- 10. Let cool for 1 minute before removing from cookie sheet. Cool completely before storing.
CARDAMOM SPICE SUGAR COOKIE

- Sift together flour, salt and cardamom spice.
- Using electric mixer beat butter and sugar together until fluffy, about 5 mins.
- Add vanilla bean and orange zest mix well.
- Add eggs and combine well.
- Slowly add the flour mix a bit at a time.
- Separate dough into 2 separate pieces. Wrap in plastic wrap and chill for at least 30 minutes.
- When ready to bake preheat oven to 375 degrees and line cookie sheets with parchment paper.
- On floured work surface roll disk out to 1/8 to 1/4 inch thickness.
- Cut out with cookie cutter shape of your choice and transfer to baking sheet.
- Bake 6-9 minutes (just until edges start to brown).
- Cool completely and decorate with Royal Icing.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg, corn syrup and orange zest. - Make dough:
- Whisk together flour, zest, cardamom, and salt.
- Beat butter and sugar with an electric mixer until pale and fluffy, then beat in yolk and cream. At low speed, mix in flour mixture in 3 batches just until a dough forms. Quarter dough and form each piece into a 6-inch disk, then chill, wrapped separately in plastic wrap, until firm, 2 to 3 hours.
- Cut and bake cookies:
- Preheat oven to 350°F with rack in middle.
- Roll out 1 piece of dough between sheets of parchment paper into an 11-inch round (1/8 inch thick). Slide dough in parchment onto a tray and chill until firm, about 15 minutes.
- Cut out as many cookies as possible with cookie cutter (chill dough again if necessary), reserving and chilling scraps. Transfer cookies to a parchment-lined large baking sheet, arranging them 1 inch apart.
- Bake until edges are golden-brown, 9 to 12 minutes. Cool on baking sheet 5 minutes, then slide cookies, still on parchment, onto a rack to cool completely.
- Make more cookies with remaining dough and scraps (reroll only once) on cooled freshly lined baking sheets.
- If icing cookies and coloring icing, transfer small batches to small bowls, 1 for each color, and tint with food coloring. Spoon each color of icing into separate sealable bags, pressing out excess air, and snip an 1/8-inch opening in 1 bottom corner of each bag. Pipe icing onto a plate to test consistency. If too thick, thin a small batch with a few drops of orange juice.
- Decoratively pipe icing onto cookies, then sprinkle with decorative sugar (if using) and let dry completely, about 1 hour (depending on humidity).

- 1. Beat the butter, sugar salt, Baileys Irish cream, and Amaretto together until smooth. (You can replace the Liquors with 2 teaspoons of vanilla if desired. Making the cookies kid friendly.)
- 2. Mix in the egg yolk until combined well. Add the flour, orange zest, Cinnamon, ginger, and cloves. mix to combine.
- 3. Add the flour,and beat until all ingredients are incorporated ,and a big ball forms. You can continue on ,and make the cookie dough my way,or you can simply roll dough out on a floured surface ,and cut shapes out to bake.
- 4. take ball of cookie dough,and divide in half. Make 2 circular logs from cookie dough. 2 inches in diameter. Wrap in plastic wrap,and refrigerate until stiff enough to slice.
- 5. Slice dough in to 1/8 inch wide slices,and bake on ungreased cookie sheet at 325 degree's for 10 minutes,or until edges turn light golden brown.
- 6. make white chocolate icing. Mix 1 cup of any color candy melts with 1/2 teaspoon of Amaretto,and 1/2 tsp Baileys Irish cream., or vanilla Add 1 tsp of shortening and microwave for 1 min. Stop microwave and stir every 30 seconds. Remove and stir again. Make sure the chocolate is melted. Add 1/2 teaspoon orange zest stir well. If you need a more liquid consistency. Just add a dash of milk.
- 7. Decorate cookies with icing. Put a small Dollop of icing on top of cookie. Place the almond slices on the icing. You may also frosty entire top with icing instead of adding almonds if desired.
