CREAMSICLE ORANGE POKE CAKE
This orange creamsicle poke cake is a fluffy white cake infused with orange flavor and topped with a quick and easy vanilla frosting. It's an easy dessert that's a total crowd pleaser and perfect for any summer potluck!

Steps:
- Preheat the oven according to the cake package directions.
- Coat a 9″x13″ pan with cooking spray.
- Prepare cake according to package and bake for the time directed.
- Let the cake cool for 15 minutes, then use a fork to poke holes all over the cake.
- Place the boiling water in a medium bowl and add the jello; whisk until the jello has completely dissolved. Stir in the cold water.
- Pour the jello over the top of the cake. Cover and chill for at least three hours or up to 2 days.
- Place the milk in a large bowl; add the pudding mix and stir until smooth and thickened. Fold in the whipped topping.
- Frost the cake with the whipped topping mixture. Decorate the cake with the mandarin oranges. Cut into squares and serve, garnished with mint sprigs if desired.

Steps:
- Position the rack in the center of the oven and preheat your oven to 350F.
- Grease and line your cake tin. Set aside.
- Using a bowl with a whisk; or a stand mixer, mix together the boxed cake mix and the orange soda.
- Place in the oven and bake for about 20-25 minutes, or until a tooth pick comes out clean.
- Remove the cake from the oven and allow to cool completely.
- Remove from the cake pan and enjoy as is, or frost with your favorite icing & sprinkles!

I remember as a child, I loved creamsicle ice cream. Here is a recipe that I found in my mom's cookbook. I remember her making this cake and never getting enough of it. I am planning to use my mom's recipe to make cake pops, or orange truffles!

Steps:
- 1. Preheat oven to 350 degrees. Prep a 9x13-inch pan with non-stick spray.
- 2. Prepare the cake mix in a large mixing bowl, using eggs, orange soda and oil.
- 3. Bake for 30 to 40 minutes until cake springs back when lightly touched and starts to pull away from the sides of the pan.
- 4. Remove from the oven to a wire rack to cool completely. Using a wooden chopstick, poke small holes through to the bottom of the pan, all over the cake.
- 5. In a small bowl, dissolve a box of orange gelatin with boiling water, mix well. Add cold water and mix well.
- 6. Slowly pour the orange gelatin mixture over the cake, making sure that the mixture gets into all the holes.
- 7. Cover and chill for 2 to 4 hours.
- 8. In a medium bowl, combine the vanilla frosting and the orange kool-aid and mix well.
- 9. Frost the cake.
ORANGE CREAMSICLE POKE CAKE

- Preheat oven to 350° Fahrenheit. Grease bottom of 9x13 cake pan.
- Using a mixer, mix vanilla cake mix, eggs, butter and orange soda on medium speed for 2 minutes. Pour into cake pan and bake for 25 minutes or until toothpick inserted in middle comes out clean. Set cake aside to cool (about one hour).
- When cake is cool, use a skewer or skinny handled wooden spoon to poke holes in cake. In a 2 C measuring cup, heat 1 C water to boiling in microwave. Add gelatin to boiling water and stir until dissolved. Add cold water and orange soda. Mix well. Pour gelatin mixture over cake, making sure it gets in all of the holes in the cake. Put cake in the refrigerator for 2 hours so that the gelatin can set.
- When ready to frost, use a mixer to whip 1.5 C of heavy whipping cream and orange gelatin until cream forms stiff peaks. Frost cake with whipped orange topping.

- Mix and bake cake in 13x9 pan according to package instructions. Allow the cake to cool.
- Using a fork, poke holes in the top of the cake.
- In a small bowl, mix together gelatin with 1 cup of boiling water until dissolved. Pour the gelatin over the cake, making sure to pour over and into the holes.
- In a small bowl, mix together the French vanilla pudding mix and 1 ½ cups of milk. Allow the pudding to set for 3 minutes, then spread it overtop the cake.
- Add a layer of half of the Mandarin oranges over the pudding.
- Top with whipped topping and the remaining Mandarin oranges.
- Cover and chill for 4 hours before serving. Keep refrigerated.
