A wonderful holiday cake made with candy orange slices.

1 cup butter, softened
2 cups white sugar
4 eggs
½ cup buttermilk
1 teaspoon baking soda
3 ½ cups all-purpose flour
1 pound dates, pitted and chopped
1 pound orange slices candy, chopped
2 cups chopped pecans
1 ⅓ cups shredded coconut
1 cup orange juice
2 cups confectioners' sugar

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease and flour one 10 inch tube pan.
  • In a mixing bowl, cream margarine and granulated sugar until smooth. Add eggs one at a time, beating well after each addition. Dissolve baking soda in buttermilk and add to the creamed mixture.
  • Place flour in a large bowl and add dates, orange slices, and nuts. Stir to coat each piece. Add flour mixture and coconut to creamed mixture. This makes a very stiff dough, so it will be necessary to stir with a wooden spoon.
  • Pour batter into the tube pan. Bake for 2 1/2 to 3 hours. As soon as cake comes from oven, combine the orange juice and confectioners sugar and pour over hot cake. Let stand in pan overnight.

This is kind of like a Fruit Cake with a "Twist". Frost this cake with the Orange Candy Frosting.

1 cup butter
2 cups sugar
4 eggs
1 teaspoon baking soda
1/2 cup buttermilk
4 cups all-purpose flour
14 ounces dates, cut into pieces
2 cups chopped nuts
1 cup coconut, flaked
1 lb orange slice candy, cut into pieces

Steps:

  • Cream butter with gr.
  • sugar, add eggs, one at a time.
  • Creaming well after each.
  • Dissolve soda in buttermilk.
  • Alternate butter mixture and 3 1/2 C flour.
  • Mix remaining 1/2 C flour with dates, candy pieces,& nuts.
  • Add to flour mixture with coconut.
  • Pour batter into 10 inch tube pan (greased& floured) Bake 250* for 3 hours.
  • Frost with Orange Candy Frosting.
  • NOTES: This cake may be kept in refrigerator two weeks if wrapped in foil or plastic.

3 1/2 cups flour, sifted
1/2 teaspoon salt (optional)
1 lb orange slice candy, cut up
8 ounces dates, pitted, chopped
2 cups pecans, chopped
3 1/2 ounces coconut, flaked
1 cup butter
2 cups sugar
4 eggs
1 teaspoon baking soda
1/2 cup buttermilk
1 cup orange juice
2 cups confectioners' sugar, sifted

Steps:

  • Sift flour and salt (if using); set aside.
  • Combine orange slice candy, pitted dates, pecans and coconut; set aside.
  • Beat butter until light. While beating, gradually add sugar. Beat eggs, then add to butter and sugar.
  • Combine baking soda and buttermilk.
  • Add milk alternating with flour mixture. Blend well after each addition.
  • Add candy mixture, mixing well.
  • Turn into a 10-inch tube pan that has been greased and floured. Bake for 1 hour and 45 minutes at 300 degrees.
  • Remove from oven; combine orange juice and sugar and mix well.
  • TOPPING Combine orange juice and sugar. Mix well. Pour over cake.

1 lb orange candy slices [cut up]
1 can(s) coconut, flaked
2 c chopped pecans
8 oz chopped dates
2 box orange jello
1 c margarine or butter
2 c sugar
3 1/2 c all purpose flour
4 large eggs
1 c buttermilk
1 tsp baking soda
1/4 tsp salt
FROSTING
1/2 c orange juice
2 c powdered sugar

Steps:

  • 1. Line the bottom of a large tube pan with greased waxed paper, Do not grease the sides of the pan.
  • 2. Sift three cups of flour with soda, salt, and jello. Cream butter, Add sugar and cream well. Add eggs, one at a time. Alternate sifted flour with milk. Add nuts, coconut, and dates. Use the remaining 1/2 cup of flour to coat the cut up orange candy slices. Fold the candy in last with as little mixing as possible to keep the candy from settling. Bake in a large tube pan at 250 degrees for 3 hours, Do not remove from pan. Pour a mixture of the frosting over the cake while it is still hot, let set in pan until cold.
