This recipe yields 2 loaves or as my mom used to make it - one bundt cake. I find that it's not easy to remove the cake from the bundt pan because it's a very moist cake unless you butter and flour the pan well, so I prefer using a loaf pan and I think it looks beautiful. If you only want to make one loaf, you can halve the recipe.

Number Of Ingredients 8

2 1/2 cups (350g) all-purpose flour, sifted
2 1/2 teaspoons baking powder
4 large eggs
1 1/2 cups (300g) granulated sugar
1 cup (240 ml) canola or vegetable oil
1 1/4 cups (300 ml) freshly squeezed orange juice
Orange zest from 3-4 oranges ((I use the same amount of oranges I use for the juice))
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350°F/180°C. Grease a 12-cup (10-inch) Bundt pan or two standard loaf pans (either 9 x 13 inch pans or 8½ x 4½ inch pans for taller cakes) and set aside.
  • In a medium bowl whisk together flour and baking powder. Set aside.
  • In a mixer bowl fitted with whisk attachment, whisk together eggs and sugar on high speed until pale and fluffy, about 5 minutes. On low speed and with the mixer running, add oil slowly until combined. Add orange juice, zest, and vanilla extract and keep whisking slowly until combined. Add flour mixture and whisk just until combined. Don't overmix.
  • Pour batter into prepared pan/pans. Bake for 50-60 minutes for the bundt pan or 40-50 minutes for the loaves or until a toothpick inserted into the center of the cake comes out clean. If the top is browning quickly while baking, cover loosely with aluminum foil. Allow cake/cakes to cool completely on a wire rack.
  • Store cake in an airtight container in the refrigerator for up to 5 days. For the best moist texture, the cake is best served at room temperature. This cake freezes well so if you make two loaves, cover well, and freeze one of them in the freezer for up to 2 months, then thaw overnight in the fridge

1 (18 1/4 ounce) box lemon cake mix
1 (3 ounce) box orange gelatin
4 eggs or 4 egg substitute
3/4 cup water
3/4 cup canola oil
1 lb powdered sugar
3/4-1 cup orange juice

Steps:

  • Preheat oven to 350.
  • Spray bottom of 9x13" sheet cake pan with cooking spray.
  • Set aside.
  • Beat first five ingredients with an electric mixer for 4 minutes.
  • Pour into the prepared cake pan.
  • Bake for 35 minutes.
  • For icing, beat the powdered sugar and orange juice with a mixer until smooth.
  • (Start with 3/4 cup orange juice. If you want the cake even moister/soggier than it already is, slowly increase the amount of orange juice).
  • Remove cake from oven, and poke with many holes- using a chopstick or fork or skewer, etc.
  • Pour the icing over the warm cake.

1 stick unsalted butter, melted and cooled, plus more, softened, for pan
1 2/3 cups unbleached all-purpose flour
2 teaspoons baking powder
3/4 teaspoon kosher salt (we use Diamond Crystal)
4 large eggs, room temperature
1 1/2 cups granulated sugar
1 tablespoon finely grated orange zest
2 tablespoons poppy seeds
2 teaspoons pure vanilla paste or extract
3/4 cup sour cream, room temperature
2 cups confectioners' sugar, sifted
1 tablespoon unsalted butter, melted
1 tablespoon fresh orange juice
1 teaspoon poppy seeds

Steps:

  • Cake: Preheat oven to 350°F. Brush a 9-by-13-inch or 8-by-12-inch baking pan with butter. Line with parchment, leaving a 2-inch overhang on long sides. Butter parchment.
  • Whisk together flour, baking powder, and salt. Combine eggs and sugar in the bowl of a mixer fitted with the whisk attachment. Beat on high speed until thick and pale, about 4 minutes. Add flour mixture; beat to combine. Add butter, zest, poppy seeds, and vanilla; beat to combine. Add sour cream; beat until smooth.
  • Scrape batter into prepared pan, smoothing top with a spatula. Bake until top springs back when lightly touched and a tester inserted in center comes out clean, 30 to 35 minutes (for 9-by-13-inch) or about 40 minutes (for 8-by-12).
  • Let cool in pan on a wire rack 10 minutes. Using parchment overhangs, lift cake out of pan and let cool completely on rack. (Cake can be made to this point and stored at room temperature, wrapped in plastic, up to 1 day.)
  • Icing: Whisk together confectioners' sugar, butter, and orange juice until smooth. Spread over cake. Sprinkle with poppy seeds. Let set at least 20 minutes before serving. Iced cake can be stored in an airtight container at room temperature up to 3 days.

Combine the flour, baking powder and salt; add to creamed mixture and mix well. , Pour into a greased 8-in. square baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Remove to a wire rack to cool completely. , For the frosting, combine the confectioners' sugar, butter and enough orange juice to achieve spreading consistency. Frost cake.

1 cup butter, softened (can use light)
1 cup sugar (I use Splenda Blend)
3 eggs, well beaten
3 tablespoons orange marmalade
2 tablespoons orange peel, grated
1 (11 ounce) can mandarin orange segments, chopped, optional (I add them for more flavor)
1 1/3 cups orange juice
1 cup granulated sugar
1/4 cup cornstarch
1 teaspoon lemon juice
1 cup fresh orange juice
2 tablespoons orange peel, finely grated
1/2 teaspoon salt
2 tablespoons butter (can use light)

Steps:

  • Sift flour, baking powder, and salt together.
  • In a large bowl, cream butter until smooth. Gradually add sugar and beat until light and fluffy.
  • Beat eggs; stir in marmalade, orange rind and mandarin segments, if you like.
  • Beat in flour mixture alternately with orange juice, beating after each addition.
  • Turn batter into a greased and floured 11x14x1-inch or cookie sheet and bake at 350° for 30 to 35 minutes.
  • Cool in pan on rack for about 10 minutes and turn in a plate to coool completely and frost with.

  • Combine sugar and cornstarch in saucepan. Add lemon and orange juices slowly and stir until smooth.
  • Add remaining ingredients and cook, stirring frequently, over low heat until thick and glossy. Cool and spread on cake.
  • Recipe can be doubled if you want.
