ORANGE SALMON
Oranges and brown sugar make this sweet salmon dish absolutely wonderful !!! I'm a little rough on the quantities, as I tend to add as necessary, but you can do the same. Fortunately, it's about the easiest recipe you'll ever meet.

Steps:
- Preheat oven to 400F., with the oven rack in the centre of the oven.
- Add a little olive or cooking oil onto a baking sheet and use a brush to evenly coat the bottom of the baking sheet. Set aside.
- Pat the salmon or trout fillets dry with paper towel. Brush the top of the salmon lightly with olive oil, then season with salt and freshly ground pepper. Lay the fillets onto the prepared baking sheet, skin side down.
- Make the sauce by stirring together all the sauce ingredients. Set aside until needed.
- *Note: Baking time will vary depending on the size/thickness of your fish. Your first baking period should produce a fish that is cooked/lighter coloured on the outside, but still not quite cooked through the thickest part. Extend your baking time if needed. When oven is preheated, place the salmon into the oven and roast for 10 minutes. (Fish should be cooked-looking on the outside edges with the thicker middle still a little pink at this point). Remove from oven and baste the fish generously with some of the sauce and place a few orange slices on top, if desired. Return to the oven for an additional 5 minutes. (Fish should be evenly coloured at this point.
- Remove fish from oven and again baste generously. Switch the oven from the Bake setting to the Broil setting (use the "Hi" setting if your oven has both Hi and Lo). Return the fish to the oven to the same middle oven rack and broil for 1 minute. Baste again and broil for another 1-2 minutes. Watch closely so the sauce doesn't begin to scorch, as that will introduce a bitter taste to the sauce.
- Remove from oven and spoon any sauce that may be in the pan over-top of the salmon. Serve immediately.

Steps:
- Squeeze the orange and have ready the juice.
- Place in a pan the olive oil and let it heat for a while. If it is possible, choose to use a grill type pan (that is not with a flat surface). This will give a better look to your fillets.
- As soon as the oil is hot enough place your fillets in the pan. Let them cook for 2-3 minutes on one side and then turn it over to cook both sides. When you turn it over, season with salt and pepper and add the half portion of ginger over the two fillets.
- 2-3 minutes later pour the half of the orange juice over the two fillets and let it cook for 2-3 minutes. Then turn them over again and add the rest of the ginger and orange juice and let it cook until the juices evaporate and an orange sauce is formed.
- Garnish the dish with some rice and steamed vegetables.
- Enjoy!

- Preheat the oven to 190 degrees Celsius/ 370 degrees Fahrenheit. Slice the oranges into thin slices, remove the seeds if necessary. Place half of the slices in a buttered baking dish.
- Pick the dill leaves (freeze the stalks and use when making vegetable broth, for instance). Chop the dill leaves finely and mix them with the soft butter, some salt, and pepper. Blend with an immersion blender, and mix in the grainy mustard.
- Dry the fish with kitchen paper. Spread the dill-butter mixture evenly on top and place the fish in the baking dish. Cover with the remaining orange slices. Pour the broth in the dish and place it in the oven for about 15-17 minutes. It should be slightly undercooked, it will continue cooking a little bit while it stands.
- Take out of the oven and pour the broth into a small saucepan. Turn off the oven and place the salmon back in until you make the sauce, leaving the oven door cracked so that the fish doesn't overcook in the meantime.
