This came from the Pittsburgh Post-Gazette. It is a dish served at a favorite local restaurant chain Eat n' Park. I added the parsley for color.

Steps:
- Preheat oven to 450 degrees.
- Place fish in a 13 x 9 inch baking dish.
- In a separate pan, cook onion in butter until tender.
- Spread onion mixture on fish.
- Pour orange and lemon juice over all.
- Season with garlic salt, lemon pepper, and parsley.
- Bake, uncovered, for 15 to 20 minutes or until fish flakes easily with a fork.
- If the fish is crowded in the baking dish, you might want to cover it for a few minutes at the beginning of the baking.
GARLIC PARMESAN ORANGE ROUGHY
Steps:
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Place the orange roughy filets on the broiler pan and squeeze the lemon over the top of the fish. Broil the filets in the preheated oven for about 6 to 8 minutes.
- Combine parmesan, butter, dijionnaise, garlic, and salt in a small bowl. Remove the fish from the oven and spread the cheese mixture on top of the filets. Sprinkle with paprika. Broil until the topping is lightly browned and the fish flakes easily with a fork, about 3 minutes.

- Preheat oven to 400°. Place fillets in an ungreased 13x9-in. baking dish. Drizzle with salad dressing; sprinkle with crushed crackers., Bake, uncovered, 10 minutes. Sprinkle with cheese. Bake 3-5 minutes longer or until fish flakes easily with a fork and cheese is melted.

Legend has it that when Catherine de Medici of Florence was wed to Henry of Aragon, she brought a Florentine chef with her to prepare the foods she adored. The Florentine style of cooking leans toward simple preparations of fresh foods to make consistently appealing meals. Traditionally, this dish uses a flaky white fish such as sole, cod, or halibut, but it does wonders for a salmon fillet or even orange roughy. Pack as much spinach as possible into the pot as it will cook down significantly Don't be afraid to push down the leaves with the heel of your hand. Just be sure that the seal around the lid is tight when the pot goes in the oven.

- Preheat the oven to 450°F.
- Spray the inside and lid of a cast-iron Dutch oven with olive oil.
- Line the bottom of the pot with about half the spinach. Add the fish and spray lightly with olive oil. Cover with a single layer of lemon slices and garlic.
- Layer the remaining spinach and arrange the tomato slices on top, leaving just enough room for the lid to fit securely. If desired, sprinkle lightly with Parmesan cheese or bread crumbs.
- Cover and bake for 40 to 45 minutes, or until 3 minutes after the aroma of a fully cooked meal escapes the oven. Serve immediately with the lemon wedges and, if desired, sprinkle with grated Parmesan

Arrange fish on top of spinach. In a small bowl, whisk together soup and sherry; pour over fish. In another small bowl, mix together the bread crumbs and Parmesan cheese. To with this mixture. I love Mediterranean food and the mild, tender Roughy is a fantastic compliment to the fresh and vibrant feta, caper and tomato topping. This is a great, healthy recipe that will have you feeling like you just ate in a fancy restaurant. I adapted this recipe from a recipe found at epicurious.com. As usual, substituting or eliminating any ingredients will greatly change the flavor as each ingredient compliments the other.

- Preheat oven to 400°F.
- Line baking sheet with foil.
- Lightly spray foil with non-stick spray.
