This is a light and flavorful green salad that combines oranges and almonds.

3 tablespoons olive oil
2 tablespoons red wine vinegar
½ teaspoon ground black pepper
¼ teaspoon salt
1 large head romaine lettuce - torn, washed and dried
3 (11 ounce) cans mandarin oranges
½ cup slivered almonds

Steps:

  • Prepare the dressing by whisking together the orange juice, olive oil, vinegar, pepper and salt; set aside.
  • In a large bowl, combine the romaine and oranges. Add enough dressing to coat and toss well. Sprinkle with almonds and serve.

1 cup walnut pieces
1 sack pre-washed chopped romaine or 2 hearts, chopped, about 6 cups
1/2 red onion, finely chopped
1 tablespoon orange marmalade
1/4 teaspoon crushed red pepper flakes
1 small sprig rosemary, stripped and finely chopped or 1/2 teaspoon dried, crushed
2 tablespoons balsamic vinegar
1/4 cup extra-virgin olive oil, eyeball it

Steps:

  • Toast nuts over low heat in a small skillet until crisp and fragrant. Place romaine in salad bowl and scatter the red onions down over the greens. In a small bowl, combine the marmalade, red pepper flakes, balsamic vinegar and fresh or dried rosemary using a fork or small whisk. Drizzle extra-virgin olive oil into the dressing until combined. Season the dressing with salt, to taste. Dress and toss salad and adjust seasoning.

4 tablespoons red wine vinegar (not halal)
3/4 cup extra virgin olive oil
1 tablespoon honey
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
4 spring onions, sliced
1 large cos lettuce, torn into bite-size pieces
3 oranges, peeled and thinly sliced
3 tablespoons slivered almonds, toasted
2 tablespoons orange juice (optional)
1/2 teaspoon orange rind, grated very small (optional)
2 tablespoons dried cranberries (optional)

Steps:

  • In a small container with a tight-fitting lid, combine the vinegar, oil, honey, salt, pepper and spring onion, (& orange juice, orange rind if using). Close the lid and shake vigorously to blend.
  • Place the cos lettuce into a large serving bowl. Drizzle over vinaigrette and toss to coat. Add orange slices (& dried cranberries if using) and toss gently. Garnish with toasted almonds. Serve immediately.

A delicious blend of lettuces, celery, green onions, toasted almonds and mandarin oranges tossed with a delightful homemade (easy) dressing!

1/2 c. sliced almonds
2 Tbsp. granulated sugar
1 c. celery (diced)
1 11 oz. can mandarin oranges (drained)
1/2 head iceberg lettuce (chopped)
1/2 head romaine lettuce (chopped)
2 whole green onions (diced)
1/2 tsp. salt
1/4 cup canola or vegetable oil
2 Tbsp. granulated sugar
1/8 tsp. ground pepper
2 Tbsp. white vinegar
1 dash Tobasco sauce ((or other hot sauce))

Steps:

  • In a small pan over medium heat, heat almonds and sugar, stirring constantly until almonds are coated and sugar is dissolved. Watch carefully!! They will burn easily!
  • Set almonds aside to cool on a piece of parchment paper and then store in an airtight container until ready to mix with salad.
  • Mix the dressing ingredients together. I use a jar so that I can shake it all together and store in the refrigerator.
  • Dice the celery and green onions and chop the romaine and iceberg lettuces.
  • Throw everything except the oranges, almonds and dressing into a bowl and mix together. Just before serving, add almonds and oranges and drizzle with dressing. Toss to coat and serve!

1 teaspoon dry mustard
2 tablespoons water

Sliced almonds
White sugar (optional)
1 head of romaine lettuce
1 cup celery (sliced)
2-3 green onions (sliced or 1 shallot diced)
1 tin Mandarin oranges (drained)
½ cup pure sunflower oil
2 tbsp red wine vinegar
2 tsp lemon juice
1 tsp honey
1 tsp salt
½ tsp dry mustard
½ tsp paprika
1 clove garlic (finely chopped)

Steps:

  • Roast the almonds in a small frying pan over medium heat.
  • Stir often until the nuts begin to brown, about 2 - 3 minutes. Watch them closely because they will char easily.
  • Sprinkle with sugar if you wish.
  • Cut the romaine lettuce into bite sized pieces and add to the salad bowl.
  • Add the celery, onions, oranges and almonds.
  • To make the salad dressing, combine all of the salad dressing ingredients in the jar. Shake well. The dressing can be stored in the refrigerator for future use.
  • Serve the salad with the dressing.
