For the glaze:
2 cups all-purpose Gold Medal flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
Zest of 1 orange
1/2 cup unsalted butter, at room temperature
1 cup ricotta cheese
1 large egg
1 tablespoon fresh orange juice
1 teaspoon vanilla extract
1 cup chocolate chips
1 cup powdered sugar
1/2 teaspoon orange zest
2 tablespoons fresh orange juice

Steps:

  • _12 MUFFINS prep time_ 10 MINUTES cook time_ 18-20 MINUTES total time_ 30 MINUTES1. Preheat oven to 350 degrees F. Line 12 muffin cups with paper liners. Set aside.2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. In a small bowl, add the sugar and orange zest. Rub the orange zest and sugar together with your fingers.3. Using an electric mixer, beat the butter and sugar and orange zest mixture together until light and fluffy, about two minutes. Add the ricotta cheese and beat until smooth. Beat in the egg, orange juice, and vanilla extract.4. Add the dry ingredients and mix until just blended. Stir in the chocolate chips. Using an ice cream scoop or large spoon, divide the batter evenly between the 12 muffin cups.5. Bake muffins for about 18-20 minutes, or until the tops are slightly golden brown. Let muffins cool completely.6. While the muffins are cooking, make the glaze. In a medium bowl, whisk together powdered sugar, orange zest, and orange juice. Drizzle glaze over muffins. Let the muffins sit until glaze hardens_

These muffins are a staple in my house, they are amazingly fluffy and almost cake-like but light and SO delicious - not to mention easy! Taste them once, you'll make them over and over! Enjoy!

Number Of Ingredients 10

1/2 cup softened butter
1 cup sugar
2 oranges, zest of, grated
2 eggs
1/2 cup orange juice (no pulp is best)
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups flour
1 1/3 cups good dark chocolate chips
1/2 cup sour cream

Steps:

  • Preheat oven to 350, have eggs at room temperature Cream butter and sugar in a mixing bowl until light and fluffy. Add the eggs and mix on medium until incorporated.
  • Add grated orange zest, flour, baking soda, baking powder and sour cream, mix inches Add orange juice and chocolate chips, mix on low for about 30-45 seconds, until mixed well.
  • Fill greased muffin pan cups a little more than half full, bake at 350 for 12 min or more, until cake tester comes out clean - depends on your oven, should be between 12 and 15 minutes; mine usually takes 13 minutes
  • Enjoy!
