RAISIN BREAD FRENCH TOAST
Steps:
- In a medium bowl, beat together the eggs, milk, vanilla and cinnamon. Transfer the egg mixture to a wide bowl (like a pasta bowl), so you can dip the bread slices.
- Preheat a nonstick skillet on medium to medium-high heat. TIP: To make French toast quick, a square skillet is very handy because it can make 4 slices at once, and the low edges of the pan make it easy to flip.
- Drop a knob of butter on the hot skillet. Working one slice at a time, dip each slice for about 20 seconds, and flip and allow to soak for another 10 seconds.
- Place the egg dipped bread on the skillet and cook for about 2-3 minutes, until the bottom is golden brown. Flip and cook an additional 2 minutes on the other side, until the French toast feels slightly firm to the touch and the bottom is golden brown. Adjust the heat as necessary so the French toast gets cooked through before the outsides burn.
- Serve immediately with maple syrup, a sprinkle of cinnamon, and a dollop of whipped cream.

HOMEMADE RAISIN BREAD
Steps:
- Gather the ingredients.
- Dissolve the yeast in the warm water.
- In a large bowl, combine the raisins, warm milk, butter, sugar, and salt; stir to dissolve the sugar. Let the mixture cool to lukewarm.
- Stir 1 1/2 cups of the flour into the milk mixture and beat until smooth.
- Add the yeast mixture and the beaten eggs to the milk mixture and mix to blend well.
- Add enough of the remaining flour to make a soft but stiff dough.
- Turn the dough out onto a lightly floured surface and knead for about 10 minutes, or until the dough is smooth and elastic.
- Butter or oil a large bowl. Place the dough in the greased bowl. Turn it over to grease the entire surface of the dough.
- Cover the bowl with a clean kitchen towel and let it stand in a warm, draft-free place until it has doubled in bulk, about 1 to 1 1/2 hours.
- Punch the dough down and divide it into two equal portions. Cover the dough with a kitchen towel and let it rest for 10 minutes.
- Shape the dough into two loaves and place them in two greased 8-by-4-inch loaf pans .
- Cover the pans with a kitchen towel and let the loaves rise for about 45 to 60 minutes, or until the dough has almost doubled in bulk. Then preheat oven to 375 F.
- Bake in preheated oven for 25 minutes. Place foil over the loaves for the last 10 minutes if they look overly brown.
- Remove the loaves from the pans and let them cool on racks. Serve and enjoy!

- Mix together butter and sugar; cream until fluffy. Add egg, juice, and dry ingredients and blend.

- Day 1 (around midday), feed the levain. Before refreshing your mother starter, set aside 20-30 grams of the unfed starter and to it add equal amounts flour and water to end up with 80 grams of levain required in this recipe. For example, if you use 20 grams of unfed starter, add 30 grams each of flour and water to get 80 grams levain. Set aside until at peak rise (about 4 hours; longer on cold days. In winter I store the levain inside the oven, turned off with the light on.)
- Day 1 ("Autolyse": See Note). Stir in the fed starter and orange peel with the water in a bowl. Once the starter has been evenly distributed in the water add the flour. Cover the bowl with a kitchen towel or plastic wrap and let sit for thirty minutes to one hour.
- Day 1 (evening), add the soaked and drained raisins and kosher salt to the mixture in the bowl. Combine the dough using a wet hand and folding the dough over from the bottom to top. Then Ken Forkish employs what he calls the "pincer" method to make sure all the ingredients are fully incorporated. Imagining your hand as a lobster claw (my description), cut through the dough pinching a few times, mixing, then pinching again. If you're using the caraway seeds at them at this step.
- Day 1 (evening), fold the dough. Pick up one portion of the dough (without taking it out of the bowl) and fold it over. Repeat this folding step a few times, inverting the dough with the folds at the bottom of the bowl when done. This folding step should be done three to four times before the dough rests overnight over a period of one to two hours. I fold every thirty minutes in the space of two hours before the overnight rest. After folding, cover the bowl with a towel or plastic wrap and let it rest overnight.
