PRETZEL SALAD
This is an easy and decorative three layer salad consisting of a pretzel crust, a cream cheese center and a strawberry Jell-O topping. It's just plain delicious.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- In a medium bowl, mix crushed pretzels, margarine and sugar.
- Press crushed pretzel mixture into the bottom of a 9x13 inch baking dish, and bake in the preheated oven 8 minutes. Remove from heat and allow to cool.
- Blend together the cream cheese and sugar. Fold in whipped topping and spread evenly over cooled pretzel mixture.
- In a medium bowl, dissolve the strawberry flavored gelatin in boiling water. Mix in strawberries and set aside to cool for 15 minutes.
- Pour gelatin mixture over cream cheese mixture and refrigerate until set, about 4 hours.

- 1. Combine crushed pretzels and 3 tsp. sugar in a bowl; stir in melted butter. Press into a 13 x 9 baking dish and bake at 350 for 10 minutes. 2. While the pretzel layer is cooling, mix the jello with boiling water and stir until jello is dissolved. Add mandarin oranges and pineapple and set aside to cool. 3. Mix together cream cheese and 3/4 cup sugar. Fold in whipped topping and spread over the pretzel layer making sure to push the cream cheese layer to the edges so that the jello layer won't leak through. 4. With a ladle or large spoon, carefully spoon the jello mixture onto the cream cheese layer. Refrigerate until firm.
ORANGE PRETZEL SALAD
This Jello dessert is one of my personal favorites, and always gets great reviews when anyone tries it. I actually prefer this over the Strawberry pretzel salad. The recipe is another from my Taste of Home - Aug/Sept 2007 magazine..been tested and approved by my friends and family. Enjoy!

MANDARIN ORANGE PRETZEL SALAD

- Make the crust:Preheat oven to 350 degrees F. Coat a 9x13 baking dish with nonstick spray.In a medium bowl, mix together the pretzels, sugar, and melted butter. Press evenly into the bottom of the prepared baking dish. Bake for 10 minutes, or until mixture is lightly toasted. Set aside to cool completely.
- Make the topping: In a medium bowl, whisk together the orange gelatin powder with 2 cups boiling water. Stir until completely dissolved. Then whisk in the reserved cold mandarin orange juice. Chill in the fridge for about 1 hour to partially solidify (but not too much longer or it will set too much and you won't be able to pour it.)
- Make the filling: In a medium bowl, beat the cream cheese and sugar with a handheld mixer. Fold in the whipped topping until thoroughly combined. Spread evenly over the cooled pretzel layer, making sure it goes completely to the edges so the jello layer doesn't leak through.
- Evenly place the mandarin orange segments on top. Chill for 30 minutes. Then pour chilled orange gelatin over the cream cheese layer.
- Refrigerate until completely chilled and set, at least 4 hours (or overnight). Slice and serve!

MANDARIN ORANGE PRETZEL BARS

- In a large food processor, add pecans and sugar. Add pretzels and pulse several times until you have some crumbs and some broken pieces. Add melted butter and mix with a fork.
- Press into the bottom of a deep, 13x9 baking dish. Set aside.
- In a large mixing bowl, beat cream cheese with condensed milk and lemon juice until smooth (several minutes). Fold in whipping topping and spread over pecan crust.
- In a medium bowl, combine gelatin with boiling water until dissolved. Add in oranges and allow mixture to cool to room temperature (about 15 minutes). Pour over cheesecake filling.
- Cover with plastic wrap and refrigerate over night or at least 8 hours. Slice and enjoy!
MANDARIN ORANGE PRETZEL SALAD
Steps:
- Preheat oven to 350 degrees. Place pretzels in a 1 gallon size re-sealable bag and crush with a rolling pin.
- CRUST: In a medium bowl, combine crushed pretzels, melted butter and 3 tablespoons sugar. Stir together until well blended. Press the pretzel mixture evenly into a 9 x 13-inch baking dish and bake for 7 minutes. Allow crust to cool completely before adding the other layers.
- FILLING: In a large bowl, beat softened cream cheese and 1 cup sugar together until smooth. Fold in Cool Whip. Dollop filling over the pretzel crust then spread evenly with an off-set spatula (be sure to seal the cream cheese layer against the sides of the dish so that the Jell-O mixture will not be able to leak through when added).
- TOPPING: In a separate bowl, whisk together orange Jell-O and boiling water until the Jell-O is completely dissolved. Set aside to cool slightly (about 10-15 minutes). Gently stir in mandarin oranges. Pour the Jell-O/Mandarin orange mixture over the cream filling, spread evenly.
- Place in the refrigerator and allow Jell-O to set up completely. Cut into squares; serve with a dollop of whipped cream!
