LEMON POPPY SEED BISCOTTI
Extremely low fat and tasty biscotti cookies. Perfect for dipping in hot coffee or tea.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Combine the flour, sugar, ground almonds, baking powder and baking soda.
- Combine the lemon peel, poppy seeds, egg, egg whites and lemon extract. Add the dry mixture and mix well. Form the dough into 2 logs.
- Place logs onto the prepared baking sheet. Bake at 350 degrees F (175 degrees C) for 30 minutes. Let cool slightly and cut diagonally into 1/2 inch slices. Bake slices another 8 to 10 minutes until dry. Cool completely and store in an airtight container.

ORANGE HAZELNUT BISCOTTI
This recipe for biscotti comes from Canadian cookbook author, Anne Lindsay's, Light Kitchen. After the biscotti are cooled, I sometimes drizzle melted dark chocolate over the tops, which, unfortunately, adds a few extra calories. I also have subsituted orange extract for the vanilla for a more intense orange flavour (which really goes good with the chocolate).

Steps:
- Preheat oven to 350*. In a large bowl, combine the nuts, flour and baking powder.
- In another bowl, beat the eggs, sugar, vanilla and orange rind. Stir this into the flour mixture, forming a stiff dough.
- Shape the dough into 2 logs, each about 1" in diameter.
- Place on an ungreased baking sheet (I do use parchment paper-personal preference) and brush the tops with the egg white.
- Bake @ 350* for 25 minutes. Let cool 5 minutes, then slice diagonally into 1/2" slices. Place slices on baking sheet.
- Lower oven temperature to 300* and bake the cookies for 25 more minutes, until crisp and golden.

CANDIED GINGER, LEMON AND POPPY SEED BISCOTTI
These candied ginger, lemon and poppy seed biscotti are an olive oil based recipe. They're sweet, tangy and studded with crunchy poppy seeds. And for a more tangy flavour I brushed them with a lemon glaze!

Steps:
- Preheat the oven to 325 Degrees F.
- Line a cookie sheet with parchment paper and set this aside.
- In a large bowl whisk together the olive oil, sugar, eggs, lemon zest, vanilla and the finely chopped crystallized ginger.
- In a separate medium sized bowl, whisk together the flour, poppy seeds, baking powder and the salt.
- With a wooden spoon stir the flour mixture into the egg mixture until combined.
- Transfer the dough to a lightly floured work surface and divide into 2 equal portions.
- Dust your hands with flour and roll each half into a 12 inch log and transfer the logs onto the prepared baking sheet while spacing the logs 2 inches apart.
- Press down on the logs to flatten just a little bit.
- Place in the preheated oven and bake for 25 minutes or until light golden brown and the tops are firm to the touch.
- Remove from the oven and allow to cool for 10 minutes.
- Transfer the logs to a cutting board.
- Using a well sharpened knife, slice the logs at a diagonal into about 1 inch slices.
- Return the sliced biscotti to the cookie sheet while placing them upright so they bake evenly on both sides.
- Bake for an additional 10 to 15 minutes, depending on how dry you want them.
- Transfer the biscotti to a cooling rack and allow to cool completely before glazing.
POPPY SEED-ORANGE BISCOTTI
Steps:
- Preaheat oven to 325 degrees Combine flour, sugar, poppy seeds, baking powder, baking soda and salt. Whisk together eggs, egg whites, orange zest and orange juice concentrate, and add to the dry ingredients, mix well. Working on a floured surface, shape the dough into 2 logs, each about 14 inches long, and 1 1/2 inches thick. Place the logs on a prepared baking sheet and bake for 20 to 25 minutes, or until firm to the touch. Transfer the log to a rack to cool, reduce the oven temperature to 300 degrees. Cut the logs diagonally into 1/2 inch thick slices. Stand the slices upright on the baking sheet and bake for 40 minutes. Let cool before storing.
ORANGE POPPY SEED BISCOTTI
I found this on healthdiscovery.net and began making a few changes to suit my own tastes and preferences. The original was for lemon biscotti and can easily be switched back. One point per cookie.

- Combine the zest, egg, egg whites and extract in a second bowl. Add the dry mixture and mix well. Form the dough into 2 logs each 8-9 inches long.
- Place logs onto a cookie sheet lined with parchment paper. Bake for 30 minutes. Let cool slightly and cut diagonally into 1/2 inch slices. Put cut slices soft sides down back on the cookie sheets and bake slices another 8 to 10 minutes until dry.
- Cool completely and store in an airtight container.

- Preheat oven to 350ºF degrees. Line a large baking sheet with parchment paper or a silicone baking mat. Lightly flour the baking sheet. Set aside.
- Place the sugar in a medium size bowl and add the lemon zest. Using your fingers, rub the zest into the sugar until all of the zest has been incorporated and most if not all of the sugar is pale yellow. Whisk in the butter, oil, egg, vanilla extract, and 4 teaspoons of the lemon juice until combined. Set aside.

My rectangle was 6" wide and 7 and 1/2" long (using a ruler or a ruled silicone baking mat is helpful here). Make the egg wash using the remaining lemon juice (approximately 5-6 teaspoons) and brush onto the entire rectangle, being sure to get the egg wash on the sides of the dough as well.
