4 teaspoons pine nuts, toasted and chopped
1 pound skinless chicken breast, boned and trimmed
2 tablespoons all-purpose flour, for dusting chicken
Canola Oil Spray
1/4 cup minced shallots, or red onion
1/4 cup chopped roasted red peppers
2 tablespoons chopped capers
2 tablespoons chopped olives
2 tablespoons chopped raisins
3/4 cup 100% Florida orange juice*
1 tablespoon fresh lemon juice
1 cup low-sodium chicken stock
1/2 teaspoon salt, plus more to taste
1/4 teaspoon black pepper, plus more to taste
2 tablespoons fresh chopped parsley
*May substitute Florida Orange Juice from Concentrate

Steps:

  • Toast pine nuts in a 350 degree oven for 3-4 minutes until golden. Remove, cool and chop. With a meat mallet, pound chicken breasts to 1/2-inch thick and season with salt and pepper. Dust both sides in flour, and pat so flour stays on. Heat sauté pan and coat with canola oil spray. Place chicken in hot sauté pan and spray uncooked side of chicken with canola oil in the pan. Sear chicken for one minute on both sides, and remove from pan. In the same sauté pan, add shallots and sauté briefly. Add roasted red peppers, capers, olives and raisins and sauté briefly until shallots are translucent. Deglaze pan with orange juice. Add chicken stock and lemon juice and reduce heat slightly when ingredients come to a boil. Add chicken back to the pan to cook until completely cooked through, and sauce is slightly thickened. Stir in salt, pepper and parsley. 4 chicken breasts, boneless
1/4 cup orange juice
1/4 cup white wine
1 tablespoon olive oil
1 tablespoon fresh Italian parsley, chopped
1 teaspoon garlic, minced
1 teaspoon orange peel, grated
1 teaspoon thyme, dried
1/2 teaspoon salt
1 tablespoon honey
1/3 cup pine nuts, toasted

Steps:

  • Mix all ingredients except chicken together in a medium bowl.
  • Place chicken breasts in a freezer bag, and pour marinade over chicken.
  • Freeze.
  • Serving Day:.
  • Thaw completely in refrigerator (about 24 hrs).
  • Remove chicken from freezer bag, reserving marinade.
  • Grill chicken over medium heat, until chicken is tender and no longer pink.
  • While chicken is grilling, toast pine nuts on a cookie sheet in 350 degree oven for about 15 minutes, until lightly browned.
  • In a small saucepan, combine the reserved marinade and 1 T honey. Bring to a full boil and continue boiling or 2 minutes.
  • Place grilled chicken on serving platter and pour sauce over chicken. Top with toasted pine nuts to serve.

NUT-CRUSTED CHICKEN BREASTS

2 (6 -8 ounce) boneless skinless chicken breasts
1 1/4 teaspoons kosher salt, divided
1/2 cup chopped almonds
2 tablespoons unsalted butter, cut in 1-tbsp pieces
1 small shallot, minced (about 1 1/2 tbsp)
1/2 cup panko breadcrumbs
1/2 lemon, zest of, finely grated
1/2 teaspoon minced fresh thyme
1 pinch cayenne
2 eggs
1 teaspoon Dijon mustard
1/8 teaspoon ground black pepper
1/2 cup unbleached all-purpose flour
1/2 lemon, cut in 2 wedges (use the one you zested)

Steps:

  • Preheat oven to 350°F Poke each breast several times with a fork. Sprinkle each breast with 1/2 tsp kosher salt, coating both sides. Refrigerate, uncovered, 15-20 minutes.
  • Process nuts in food processor, about 20 1-second pulses, until it looks like coarse meal. Heat butter in skillet over medium flame until melted. Swirl constantly until butter is brown and smells nutty, 4-5 minutes. Add shallot and 1/4 tsp kosher salt. Cook, stirring constantly, until shallot is soft, about 2 minutes. Reduce heat to medium-low. Add nuts and panko and stir often until golden brown, 10-12 minutes. Transfer to a shallow dish and stir in lemon zest, thyme and cayenne.
  • Beat egg, mustard and black pepper in a second bowl; place flour in a third dish. Pat breasts dry. Dip breasts, one at a time, into flour, patting off excess, then into egg, then into nut mixture. Scoop nut mixture on top of the chicken and press it down hard to make it adhere. Place breast on a rack placed over a cookie sheet, then prepare the second one.
  • Place rack in lower-middle of preheated oven and bake until internal temperature of chicken is 160F, 20-25 minutes. Rest 5 minutes, then serve with lemon wedges.

1 cup Italian seasoned breadcrumbs
1/4 cup shredded parmesan cheese
3 tablespoons pine nuts
1 teaspoon crushed red pepper flakes
1/2 teaspoon coarse black pepper
2 garlic cloves, minced
4 boneless skinless chicken breasts, pounded thin
1/4 cup Egg Beaters egg substitute
2 tablespoons olive oil

Steps:

  • Place first 6 ingredients in food processor, process until nuts are chopped finely. Pour mixture onto a plate.
  • Coat chicken in Egg Beaters and dredge in bread crumb mixture
  • Heat olive oil in a large skillet over medium-high. Place chicken breasts in the skillet and cook 3 minutes on each side, until browned.
  • Transfer chicken to a baking dish and finish cooking in the oven at 375 degrees for 15-20 minutes.
  • Serve chicken topped with jarred pesto sauce or heated marinara sauce.

FOR THE MARINADE:
1/4 cup fresh orange juice
1/4 cup dry white wine
1 tablespoon extra-virgin olive oil
1 tablespoon finely chopped fresh Italian parsley
1 teaspoon minced garlic
1 teaspoon grated orange zest
1 teaspoon dried thyme leaves
1/2 teaspoon kosher salt
4 boneless skinless chicken breast halves, , about 6 ounces each
extra-virgin olive oil
FOR THE SAUCE:
1 tablespoon honey
1/3 cup toasted pine nuts

Steps:

  • TO MAKE THE MARINADE: In a medium bowl whisk together the marinade ingredients. Rinse the chicken breasts under cold water and pat dry with paper towels. Place in a large, resealable plastic bag and pour in the marinade. Press the air out of the bag and seal tightly. Turn the bag to distribute the marinade, place in a bowl, and refrigerate for about 1 hour, turning once. Remove the chicken breasts from the bag, reserving the marinade. Pat the chicken dry with paper towels and brush or spray both sides of the breasts with olive oil. Grill over Direct Medium heat until firm and the juices run clear, 8 to 12 minutes, turning once halfway through grilling time. MEANWHILE, PREPARE THE SAUCE: In a small sauté pan combine the reserved marinade, honey, and toasted pine nuts. Bring to a boil and boil for 1 full minute. Spoon the sauce over the grilled chicken. 2 chicken breasts
1/4 cup flour
3/4 cup orange juice
1/2 cup white wine
2 teaspoons Dijon mustard
4 tablespoons unsalted butter
4 thin orange slices, halved (optional)
1/4 cup slivered almonds
1 tablespoon parsley, minced

Steps:

  • Cut each breast in half lengthwise. Cover with plastic wrap and pound to 1/4" thickenss. Remove plastic and season with salt and pepper.
  • Dredge chicken in flour. Saute cutlets in oil in a large saute pan over medium-high heat for 4-5 minutes, or until golden brown. Remove from pan and keep warm.
  • Deglaze pan with juice, wine, and mustard. Simmer until reduced by half, about 5 minutes. Reduce heat to low.
  • Whisk in butter until melted. Add orange slices (if using) and return chicken cutlets to pan to heat through.
  • Garnish with almonds and parsley and serve.

This dish has a good orange sweet flavor with a hint of pineapple and fills the house with a nice orange smell while cooking. I used crushed pineapple, but I think the tidbits below would be better. 1 cup any white rice, uncooked
1 tablespoon olive oil
2 cloves garlic, fine chopped
1 tablespoon fresh grated ginger (optional)
1 1/2 lbs boneless chicken breasts, cut into 1 inch cubes
1 large seedless orange, peeled and cut up into ½ inch cubes
1 orange, zest of (if you would like more of a pineapple taste, skip this)
1 (14 ounce) can pineapple tidbits in juice
1/2 cup water or 1/2 cup pineapple juice
1 tablespoon lime juice

Steps:

  • Pre-Cook the rice, any method you like.
  • Preheat oven to 350 deg.
  • In a 3 Qt Dutch oven or other oven safe pan with cover.
  • Heat the olive oil add the garlic and ginger Sauté until garlic just starts to turn brown.
  • Add Chicken and Sauté until partially cooked.
  • Add Pineapple/w juice, Orange and zest, mix.
  • Add cooked Rice and mix well again.
  • Add wine and lime, mix.
  • Cover and place in oven for 20 minute.
  • If too much liquid take cover off, finished dish should be very moist with only a little liquid in bottom of pan.

2 fresh cilantro stems

Steps:

  • Make tagine:.
  • Cut out and reserve wings and backbone from chicken.
  • Cut breast in half through bone, then cut off legs and cut to separate into thighs and drumsticks (for a total of 6 serving pieces, not including wings and backbone).
  • Pat chicken pieces dry and sprinkle with 1 teaspoon salt.
  • Heat 1 tablespoon oil in a 12-inch heavy skillet over medium heat until it shimmers, then brown chicken breasts, skin sides down, without turning, 5 minutes.
  • Transfer to a plate.
  • Brown thighs and legs, turning once, 8 to 10 minutes, transferring to plate.
  • Brown wings and backbone in same manner.
  • Cook shallots in butter with remaining tablespoon oil in a 5- to 6-quart heavy pot over medium heat, stirring frequently, until soft, 8 to 10 minutes.
  • Add garlic, ginger, turmeric, and paprika and cook, stirring, 3 minutes.

  • Turn chicken and add orange preserves, cinnamon stick, thyme, cilantro sprigs, and apricots.
  • Simmer, covered, 10 minutes.
  • Uncover and simmer until chicken is very tender, 10 to 15 minutes more.
  • Brown pine nuts while chicken cooks:.
  • Heat oil in a small heavy skillet over medium heat until it shimmers, then stir in pine nuts, turmeric, paprika, and cayenne (if using) and cook, stirring frequently, until nuts are lightly browned, 1 to 2 minutes (watch carefully; they burn easily).
  • Transfer to a small bowl.
  • To serve:.
  • Transfer chicken to a platter and keep warm, covered. If sauce is not thick, boil, stirring occasionally, until reduced to about 1 cup.
  • Discard herb sprigs, cinnamon stick, wings, and backbone.
  • Stir in chopped cilantro and spoon sauce over chicken.
  • Sprinkle with nuts.
