1/2 cup butter, softened
3 ounces cream cheese, softened
1 cup all-purpose flour
FILLING:
1 large egg, room temperature
3/4 cup packed brown sugar
1 tablespoon butter, softened
1 teaspoon vanilla extract
Dash salt
2/3 cup finely chopped pecans, divided

Steps:

  • In a small bowl, beat butter and cream cheese until smooth; gradually beat in flour. Refrigerate, covered, 1 hour or until firm enough to roll., Preheat oven to 375°. Shape dough into 1-in. balls; press evenly onto bottoms and up sides of greased mini muffin cups., For filling, in a small bowl, mix egg, brown sugar, butter, vanilla and salt until blended. Stir in 1/3 cup pecans; spoon into pastries. Sprinkle with remaining pecans., Bake 15-20 minutes or until edges are golden and filling is puffed. Cool in pans 2 minutes. Remove to wire racks to cool. Freeze option: Freeze cooled cookies, layered between waxed paper, in freezer containers. To use, thaw in covered containers.

Number Of Ingredients 10

FOR THE DOUGH
2 c unsalted butter, softened
12 oz cream cheese, softened
4 c all-purpose flour
FOR THE FILLING
4 Tbsp unsalted butter melted
1 1/2 c brown sugar
2 large eggs
1 tsp pure vanilla extract
2 c finely chopped pecans (measure after chopped)

Steps:

  • 1. For the filling mix together the melted butter, brown sugar, eggs, and vanilla.
  • 2. Stir in the finely chopped pecans last.
  • 3. For the dough, blend together the butter and cream cheese.
  • 4. Add flour one cup at a time.
  • 5. Add flour until all the dough is blended well.
  • 6. Scoop out dough in small portions.
  • 7. Form balls. Using ungreased small tart pans, drop the dough ball into the pan.
  • 8. Press gently in the center and form a cup.
  • 9. Using a small teaspoon, add your filling. Do not overload.
  • 10. Bake at 350 degrees for 25 to 30 minutes.
  • 11. Remove and place on a cookie rack to cool.

Simple to put together and yummy. My aunt makes these every year for Christmas. Personally, I would use butter instead of margarine (yes, I have something against margarine).

Number Of Ingredients 7

1 (8 ounce) package Philadelphia Cream Cheese, softened
1 cup Parkay margarine
2 cups flour
2 eggs, beaten
1 1/2 cups brown sugar, packed
2 teaspoons vanilla
1 1/2 cups pecans, chopped

Steps:

  • Combine cream cheese and margarine, mixing well until blended. Add flour. Mix well. Chill. Divide dough into quarters. Divide each quarter into 12 balls. Press each ball onto bottom and sides of miniature muffin pans.
  • Combine eggs, brown sugar and vanilla. Stir in pecans. Spoon into pastry shells, filling each cup. Bake at 325 F for 30 minutes or until golden brown. Cool 5 minutes. Remove from pans. Sprinkle with powdered sugar, if desired.

1 cup butter, softened
6 ounces cream cheese, softened
2 cups all-purpose flour
1 ½ cups firmly packed brown sugar
2 large eggs
2 tablespoons butter, melted
1 tablespoon vanilla extract
⅛ teaspoon salt
1 ½ cups chopped pecans

Steps:

  • Combine 1 cup butter and cream cheese in a bowl using an electric mixer on medium speed until creamy. Add flour gradually, beating at low speed. Shape mixture into 48 balls and place on a baking sheet. Cover and chill in the refrigerator for 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease the cups of a mini-muffin pan. Press 1 chilled dough ball into each cup and shape into a tart shell.
  • Whisk brown sugar, eggs, 2 tablespoons butter, vanilla extract, and salt together in a bowl. Stir in 1 1/4 cups pecans. Spoon mixture into tart shells. Top with the remaining pecans.
  • Bake in the preheated oven until edges of cookie shell are delicately brown, 12 to 15 minutes.
  • Cool in pans on wire racks for 10 minutes. Gently remove from pans and cool completely on wire racks, about 20 minutes.

These petite pastries feature the flavors and textures of pecan pie-tender, buttery crust, crunchy pecans, and brown sugar filling-all in one bite. Mascarpone, an Italian cream cheese, lends richness to the dough; look for it in the dairy section of large supermarkets, or at Italian specialty stores.

Yield makes about 1 1/2 dozen

Number Of Ingredients 12

1/2 cup pecans
1/2 cup mascarpone cheese (4 ounces)
4 tablespoons (1/2 stick) unsalted butter, room temperature
3/4 cup all-purpose flour
Pinch of salt
1 large egg
1/4 cup packed light brown sugar
2 tablespoons pure maple syrup
2 teaspoons pure vanilla extract
1 tablespoon unsalted butter, room temperature
1/4 teaspoon salt
3/4 cup pecans, toasted and coarsely chopped

Steps:

  • Preheat oven to 350°F. Make dough: Process pecans in a food processor until finely ground (you should have about 1/2 cup). Put mascarpone and butter into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until well blended. Add flour, ground pecans, and salt; mix just until dough comes together. Alternatively, stir together ingredients with a wooden spoon in a large bowl.
  • Roll dough into sixteen 1-inch balls; press into bottoms and up sides of cups of mini-muffin tins.
  • Make filling: Whisk the egg, brown sugar, maple syrup, vanilla, butter, and salt in a bowl. Stir in pecans. Spoon about 1 1/2 teaspoons filling into each muffin cup.
  • Bake until crust begins to turn golden, about 15 minutes. Let cool completely in tins on wire rack. Unmold. Tassies can be stored in single layers in airtight containers at room temperature up to 3 days.

My grandmother used to make Pecan Tassies for every Holiday event along with her other traditional cookies and nut rolls. I love Pecan Tassies so I was so excited to find this recipe for a different flavor.

Number Of Ingredients 11

3 large eggs
3/4 cup sugar
3/4 cup light corn syrup
2 tablespoons grated orange rind
3 tablespoons fresh orange juice
3 tablespoons butter, melted
1 teaspoon vanilla extract
1 cup finely chopped pecans
6 ounces cream cheese, softened
2/3 cup butter, softened
2 cups all-purpose flour

Steps:

  • Beat cream cheese and butter at medium speed with an electric mixer until creamy.
  • Gradually add flour, beating at low speed just until blended.
  • Wrap dough in wax paper, and chill at least 2 hours.
  • Divide dough in half.
  • Divide each half of dough into 24 balls.
  • Flatten each ball with palmof your hand, and place in lightly greased miniature muffin pans (1 3/4 inch).
  • Shape each into a shell.
  • Cover and chill until ready to fill and bake.
  • For Filling: Mix together the 3 large eggs, 3/4 cup sugar, 3/4 cup light corn syrup, 2 Tablespoons grated orange rind and 3 Tablespoons fresh orange juice; blend until smooth. Sit in the 3 Tablespoons of melted butter, 1 teaspooon vanilla extract and the 1 cup of finely chopped pecans. Spoon filling evenly into Pastry Cups, filling three-fourths full. Bake at 325 degrees for 25 minutes or until set. Cool 3 minutes in pans. Remove from pans, and cool on a wire rack.
