You can also use tart apples in these light-as-air muffins. The parchment paper cups are very easy but make them look wonderful and special enough for a party! Try serving them warm with some whipped cream cheese.

2 cups all-purpose flour
¾ cup white sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
½ teaspoon baking soda
¼ teaspoon ground nutmeg
½ teaspoon salt
1 cup diced pears
1 cup buttermilk
2 eggs, separated, yolks lightly beaten
¼ cup vegetable oil
1 teaspoon vanilla extract
1 tablespoon ground cinnamon
2 tablespoons white sugar
1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners.
  • Sift flour, 3/4 cup sugar, baking powder, 1 teaspoon cinnamon, baking soda, nutmeg, and salt together in a large bowl. Add pears; stir to coat evenly.
  • Combine buttermilk, egg yolks, oil, and vanilla extract in a bowl; mix well. Stir into the pear mixture until batter is just moistened.
  • Beat egg whites in a separate bowl with an electric mixer until stiff but not dry. Fold egg whites into the batter until just barely incorporated. Fill muffin cups 2/3-full with batter.
  • Combine 2 tablespoons sugar and 1 tablespoon cinnamon together in a bowl; sprinkle over the batter.
  • Bake in the preheated oven until light golden brown and tops spring back when lightly pressed, 25 to 30 minutes.

3/4 cup (150 g/5.3 oz.) granulated sugar
1 tablespoon orange zest
1 3/4 cups (250 g/8.8 oz.) all-purpose flour, sifted
2 1/2 teaspoons baking powder
1/4 teaspoon salt
2 large eggs
1/3 cup (75 g) unsalted butter, melted and cooled, OR neutral oil such as canola
1/4 cup (60 ml) sour cream
1/4 cup (60 ml) whole milk
1/2 cup (120 ml) freshly squeezed and strained orange juice
1/2 teaspoon vanilla extract
1 cup add-in of your choice: dark or white chocolate chips (, berries, raisins, nuts)
1/2 cup powdered sugar
1-2 tablespoons orange juice

Steps:

  • Preheat oven to 190C/375F. Grease 12 muffin cups or line them with liner papers.
  • In a large bowl, toss together sugar and orange zest. Add flour, baking powder, and salt, and mix to combine. In another medium bowl, whisk eggs with melted butter, sour cream, milk, orange juice, and vanilla extract until well combined. Make a well in the dry ingredients and pour the wet ingredients into it, then stir with a wooden spoon or rubber spatula just until combined. Do not over mix. Fold in add-ins.
  • Divide batter evenly between muffin cups (almost all the way to the top). Bake for 15-20 minutes or until a toothpick inserted into the center of the muffin comes out clean. Allow to cool for 10 minutes, then remove muffins from the tin and transfer to a wire rack to cool completely.
  • To make the orange drizzle topping: In a small bowl, sift powdered sugar. Add orange juice, a bit at a time, and whisk until you get a thick yet pourable consistency. Once muffins have cooled, pour glaze over the tops using a tablespoon, letting it drizzle down the sides.
  • Muffins are best the same day they are made, but can be stored in an airtight container at room temperature for an additional day. Muffins can be frozen for up to 2 months.

1/4 cup orange juice

1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 cup all-purpose flour
1 cup cornmeal
1/2 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
2 large eggs, room temperature
1 cup whole-milk ricotta cheese
1 tablespoon grated lemon zest
2 cups chopped peeled ripe pears

Steps:

  • Preheat oven to 400°. In a microwave-safe bowl, combine golden raisins, orange juice, butter and rosemary; microwave, covered, on high 1 minute. In a large bowl, whisk flour, cornmeal, sugar, baking powder and salt. In another bowl, whisk eggs, ricotta and lemon zest until blended. Add to flour mixture; stir just until moistened. Fold in raisin mixture. Gently stir in pears (batter will be thick). Divide batter among 12 greased muffin cups. Bake until a toothpick inserted in center comes out clean, 18-22 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.

1 (16 ounce) can bartlett pears in light syrup, drained and diced
1/2 cup skim milk
1 cup all-purpose flour
1/2 cup sugar
2 1/2 teaspoons baking powder
1/4 cup canola oil or 1/4 cup applesauce
1 slightly beaten eggs or 1/4 cup egg substitute

Steps:

  • Combine bran cereal, pears, and skim milk. Let stand for 5 minutes.
  • Mix together flour, sugar, and baking powder.
  • Add oil or applesauce and egg or egg substitue to the pear mixture.
  • Stir in dry ingredients just until moistened.
  • Fill greased muffin tins 3/4 full. May sprinkle with mixture of cinnamon and sugar before baking.
  • Bake at 400 degrees 18 to 20 minutes.
